½ teaspoon apple pie spice, or to taste
¾ cup mayonnaise

  • In a bowl, lightly mix the apple, grapes, pecans, apple pie spice, and mayonnaise together until thoroughly combined; stir in the chicken breast meat. Chill until cold.

½ cup pecans
⅓ cup red wine vinegar
½ cup white sugar
1 cup vegetable oil
½ onion, minced
1 teaspoon ground mustard
1 teaspoon salt

2 heads Bibb lettuce - rinsed, dried and torn
1 cup sliced fresh strawberries

Steps:

  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Grill chicken 8 minutes on each side, or until juices run clear. Remove from heat, cool, and slice.
  • Meanwhile, place pecans in a dry skillet over medium-high heat. Cook pecans until fragrant, stirring frequently, about 8 minutes. Remove from heat, and set aside.
  • In a blender, combine the red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper. Process until smooth.

1 can (20 ounces) pineapple chunks
3 to 4 cups cubed cooked chicken

1 teaspoon curry powder
1/2 cup chopped pecans

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Drain pineapple, reserving 1/2 cup juice. Dice the pineapple and place in a large bowl. Add pasta, chicken, peaches and raisins. In a small bowl, whisk together the oil, soy sauce, curry powder and reserved pineapple juice. Pour over pasta mixture; toss to coat. The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!

1 (2 1/2 pound) fryer chicken or equivalent pieces
½ cup creamy salad dressing (such as Miracle Whip®)
2 tablespoons white sugar, or to taste
¼ cup raisins
1 ripe mango, peeled and diced

Steps:

  • Put the chicken in a large pot with enough water to cover. Bring to a boil; reduce heat to medium. Allow the chicken to simmer until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken to a cutting board. Use a pair of forks to remove and shred the meat from the chicken. Discard the remains. 1 (2 1/2 ounce) box instant vanilla pudding
2 apples, chopped
2 tablespoons lemon juice
1 1/2-2 cups blueberries
2 cups seedless grapes
1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple tidbits, in its own juice (drain & reserve the juice!)
1/4 cup orange juice

Steps:

  • In a large mixing bowl, toss the chopped apples in 2 tablespoons lemon juice (Note: orange juice could also be used instead of lemon juice).
  • Add in the drained pineapple tidbits, mandarin oranges and grapes.
  • In a small mixing bowl, combine the dry pudding mix with 1/4 cup orange juice and the liquid you had drained from the can of pineapple. Using a wire whisk, mix it until it starts to thicken. If it seems too thick, thin it with a little more orange juice.
  • Pour the dressing over the fruit and toss gently to mix well.
  • Fold in the blueberries last (and gently).
  • Chill until ready to serve. This keeps 3-4 days if it lasts that long!

1/2 cup green seedless grape, chilled, halved
1 apple, cored and diced
1/2 cup fat-free mayonnaise
1 lemon, halved
1/4 teaspoon ground black pepper
2 cups baby romaine leaves
2 tablespoons chopped pecans or 2 tablespoons walnuts

Steps:

  • In a medium mixing bowl, combine chicken, red and green grapes, apple, mayonaise, lemon juice and black pepper.
  • Place baby romaine leaves on 2 small plates. Divide chicken salad mixture into 2 portions and spoon onto lettuce. Sprinkle each salad with half the chopped pecans or walnuts.
