MOMMA LAMB'S FAMOUS FRUIT SALAD
This recipe came from my momma and is my favorite fruit salad. It can also be made sugar-free for those who need to watch their blood sugar. Delicious either way. Also very easy to double this recipe too! You can vary the flavor of this salad by using some of the juices from either the mandarin oranges or the maraschino cherries, or both, in place of some of the pineapple juice. Enjoy!

Steps:
- Drain all of the juice from the pineapple into a large bowl. Set the pineapple chunks aside.
- Add the vanilla pudding mix to the pineapple juice and mix well until smooth. Stir in the pineapple chunks, mandarin oranges, and maraschino cherries. Mix well. Refrigerate for at least 30 minutes.
- Just before serving slice the bananas into the bowl and fold in.

EASY FRUIT SALAD WITH COOL WHIP
Steps:
- Empty the entire container of Cool Whip into a large bowl.
- Mix the vanilla pudding mix into the Cool Whip until smooth.
- Mix all of the drained fruit together in a separate bowl.
- Add the marshmallows to the fruit and mix.
- Fold the fruit into the Cool Whip and pudding mixture.
- Chill then serve.

- Mix pears, peaches, and pineapple in a serving bowl.
- Stir pudding mix into reserved liquid from the peaches in a small saucepan over medium-low heat; cook and stir until the pudding dissolves completely and the mixture is bubbling, about 5 minutes. Pour the pudding mixture over the fruit mixture and stir to coat.
- Refrigerate salad until chilled completely, at least 20 minutes.

FRUIT SALAD WITH VANILLA PUDDING
Steps:
- Drain the pineapple chunks, reserving the juice in a 1-cup measuring cup. You will need 3/4 cup of the pineapple juice; discard (or drink!) any extra. If you don't have enough pineapple juice, add enough water to the juice to make 3/4 cup.
- Mix the pineapple juice, sour cream and instant vanilla pudding in a small bowl. Cover and refrigerate for 1 hour.
- Meanwhile, also refrigerate the pineapple chunks.
- Toss the grapes, strawberries, blueberries, mandarin oranges and pineapple chunks together. Place the fruit salad in a tall glass, crystal serving bowl or glass serving dishes.
- Spoon the chilled pudding mixture over the fruit salad -- if you like your topping a bit fluffier, you can beat it with an electric hand mixer for a minute before spooning it over the fruit.

- Using a mesh strainer, drain the cans of fruit into a large measuring cup. Add water to the juice if needed in order to make it equal 2-1/2 cups. Add in 1/2 cup lemon juice, so juice should equal 3 cups.
