FINGER JELLO MADE WITH FRUIT JUICE AND GELATIN
Easy finger jello recipe made with your choice of fruit juice and gelatin, or gelatin substitute.

Steps:
- Measure out 4 cups of juice. Set aside one cup in a large bowl.
- Heat three cups of juice to near boiling in a sauce pot or in a large microwave safe bowl.
- Sprinkle gelatin over cold juice in large bowl; let stand 1 minute.
- Add hot juice and stir until gelatin dissolves completely, about 5 minutes. Stir in honey if desired.
- Pour into 13x9x2 inch pan. (Half batches can be molded in a bread pan or 8×8 pyrex pan.)
- Refrigerate until firm, about 3 hours. To serve, cut into 1 inch cubes. Makes about 9 dozen.

FRUIT JUICE GELATIN RECIPE

- Heat 3 cups of the juice until almost boiling. In a bowl, combine the 1 cold cup of juice with the gelatin powder and mix well. Add the hot juice to the gelatin powder and mix well again. Pour into a pan and add the fresh fruits. Place in the refrigerator for at least 3 hours, or until firmly set.
EASY FRUIT-JUICE GELATIN

- Place 2/3 cup juice in a small bowl or measuring cup and sprinkle with gelatin. Let sit 5 minutes. Meanwhile, in a medium saucepan, combine remaining 2/3 cup juice and 1 1/2 cups of the sugar. Bring to a boil over medium-high and cook, stirring, until sugar dissolves, 5 minutes. Add preserves and whisk to combine. Return to a boil and cook until thick and syrupy, 2 minutes. Add gelatin mixture and whisk until gelatin dissolves. Pour through a fine-mesh sieve into an 8-inch square baking dish. Refrigerate until set, 3 hours (or up to 2 weeks).
- Place remaining 1 cup sugar in a pie plate or shallow bowl. Cut fruit jelly into 1-inch squares. Toss in sugar to coat just before serving.

FRUIT PUNCH GELATIN SQUARES (USES 100% JUICE)
Jello squares are yummy- but I just don't agree with all that sugar (or artificial sweeteners). Here's a great recipe to keep the taste of the Jello brand squares and feel a little better about what you're feeding your kids.

- Stir flavored gelatin into 1 cup boiling water until sugar is dissolved.
- In large bowl, sprinkle gelatin over cold juice and let stand 1 minute.
- Add hot juice and flavored gelatin mix into cold juice mixture and stir until gelatin is completely dissolved.
- Pour into 13x9x2-inch pan and refrigerate until firm (3-4 hours).
- Cut into squares to serve.

FRUIT JUICE SHAPES
Steps:
- In a large bowl, sprinkle the gelatine over 1 cup of the juice and allow to stand for a few minutes. Meanwhile, heat the remaining 3 cups of juice until just boiling and pour it over the juice and gelatin mixture. Stir until the gelatin is dissolved.
- Pour into a 9 by 9-inch pan and chill until firm, about 3 hours or overnight. Dip the pan briefly into hot water to loosen, cut into squares or shapes, and serve.
MOM'S GELATIN FRUIT SALAD
Steps:
- In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in sugar, orange juice and lemon juice; cook and stir 6-8 minutes or until sugar is dissolved., Transfer to a bowl; refrigerate, covered, until slightly thickened, about 1-1/2 hours. Fold in fruit. Pour into a 6-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm. If using a ring mold, unmold onto a serving plate.

This recipe is from a package of Knox gelatin. I didn't have enough gelatin to try it, but it looks pretty simple to make. I think it would be fun to play around with different flavors...

- Sprinkle contents of 1 env. unflavored gelatine over 1/4 cup water in small bowl; let stand 1 min.
- Combine 1/4 cup granulated sugar and 2 Tbsp. cornstarch in medium saucepan. Gradually whisk in 1 cup orange juice, then dissolved unflavored gelatine until well blended. Bring to boil on medium heat; cook 5 min., stirring constantly. Remove from heat. Add dry strawberry gelatin mixes; stir 2 min. until completely dissolved. Pour into 9x5-inch loaf pan sprayed with cooking spray.
- Repeat with orange gelatin mixes, and remaining unflavored gelatine, water, granulated sugar, cornstarch and orange juice, pouring orange gelatin mixture into separate prepared loaf pan. Refrigerate gelatin mixture in both pans 4 hours or until firm.
- Unmold strawberry gelatin mixture onto cutting board; cut into 21 (1-inch) cubes. Repeat with orange gelatin mixture.
- Add decorating sugar to pie plate. Add gelatin cubes, a few at a time, to pie plate; turn to evenly coat all sides of each cube with sugar. Transfer each batch of gelatin cubes to plate before adding next batch of gelatin cubes.

- Measure 1-1/8 teaspoons gelatin; set aside for topping. In a small saucepan, sprinkle remaining gelatin over cold water; let stand for 1 minute.
