BERRY CRISP WITH OATMEAL COOKIE CRUMBLE



Berry Crisp with Oatmeal Cookie Crumble image

The topping on this Berry Crisp tastes just like an oatmeal cookie! Use your favorite berries to make a fabulous summer dessert.

3/4 cup all purpose flour
3/4 cup quick cook oats
3/4 cup brown sugar
1 teaspoon cinnamon
6 tablespoons cold unsalted butter (diced)
1/4 teaspoon salt
1 lb. strawberries (hulled and sliced (may substitute frozen))
1 cup blueberries (frozen or fresh)
1/2 cup granulated sugar
1 tablespoon lemon juice
3 tablespoons cornstarch

Steps:

  • Preheat oven to 350°F.
  • Make the crumble by combining the flour, brown sugar, oats, cinnamon and salt in a large bowl. Use a pastry cutter to cut in the butter until the mixture forms small crumbs. You may need to use your hands to help it along. Set aside.
  • Place strawberries and blueberries in a large bowl. Toss gently with sugar, lemon, and cornstarch Place in the bottom of a 8" square pan.
  • Pour the crumble over the top and press down slightly to compact.
  • Bake for 30-33 minutes. It's done when the crust is browned and the topping looks crunchy. Serve warm (or room temperature) with whipped or ice cream. Note: if you serve it before it cools and has time to gel, the filling will spill in the pan.

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

6 apples - peeled, cored, and sliced
2 tablespoons white sugar
½ teaspoon ground cinnamon
1 cup brown sugar
¾ cup old-fashioned oats
¾ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup cold butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
  • Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.
  • Bake in preheated oven until golden brown and sides are bubbling, about 40 minutes.

This is a fast dessert recipe that lets you use up apples, pears, berries you have on hand. It is good to use up fresh fruit in season like apples and rhubarb. You can also use frozen sliced fruit - it doesn't need to be thawed before baking. This is a tried and true recipe made many times - Canadian Comfort Food for those long cold winters!

4 cups sliced apples
3/4 cup quick-cooking oatmeal
3/4 cup brown sugar
3/4 cup flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup soft margarine

Steps:

  • Preheat oven to 375°F.
  • Slice apples in large greased large casserole dish. You can leave them unpeeled or peeled as you wish.
  • Combine dry ingredients, then cut in margarine until crumbly. Put over fruit and cook for approximately 35 to 45 minutes until fruit is cooked through. Check with a knife - if the fruit is soft and the oatmeal crisp is brown, it is done.
  • You can substitue diced rhubarb, pears, berries like saskatoons or blueberries for part or all of the apples. You may want to sprinkle a bit of cornstarch over top before you put the oatmeal over top to thicken the fruit as it cooks. Apples don't need thickening, but berries and pears are juicier.
  • Serve warm with vanilla ice cream.

Especially good on apple or peach pies. My original recipe says it make enough for 2 8-inch pies but a lot of times I use the whole thing on one 10-inch.

1/2 cup butter
1 cup brown sugar
3/4 cup flour
3/4 cup oatmeal (any type but instant)
1/2 teaspoon cinnamon
1/4 teaspoon salt

Steps:

  • In a large mixing bowl combine all the ingredients except the butter.
  • Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
  • Spread crumbs over prepared fruit mixture of your favorite fruit pie.
  • Do NOT add top crust.
  • Bake as directed in your fruit pie recipe.
  • If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
  • Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.
