HOW TO MAKE HOMEMADE FRUIT AND BERRY CORDIALS - BERRY
Cordials are nostalgic and remind us of simpler times. A fast paced life is no reason to forego the finer things - like how to make homemade fruit and berry cordials! In this post, you will find three recipes which will show you how to make cordials with fruit, berries, or citrus!

Steps:
- Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
- Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
- Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
- After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
- Transfer to a sterile bottle or jar. Keep refrigerated.
- To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

50/50 FRUIT CORDIAL
My mum used to make this all the time when we were kids. I used to make it for my DH who absolutely loved it, but now his diet won't allow him to have it. It can be made with all Lemons or all Oranges, whatever takes your fancy, or whatever you may have an abundance of. Mum's recipe was written in pints and not litres so I have left it this way, but the amount you get depends on the size of the bottles, and when serving you may like to add more or use less cordial pending on your taste.

- Put sugar and acids in a large mixing bowl. Grate the rind of the fruit and add the sugar and acids in bowl.
- Squeeze juice from the fruit and add to mixture.
- Pour the boiling water over and stir until sugar is completely dissolved.
- Cool the mixture strain and then bottle.
- To serve dilute with ice cold water, mixing one part of cordial to four parts of water.

PASSIONFRUIT CORDIAL

Steps:
- Pour passionfruit pulp into a bowl with the citric acid & stir to combine.
- Put water 7 sugar into a saucepan & simmer over a low heat until suagr dissolves, bring to the boil & simmer for 5 minutes.
- Remove syrup from heat & allow to cool slightly, pour it over the passionfruit pulp & stir until combined. Pour into sterilised bottles & refrigerate.
- NB/If you don't want seeds in your cordial, strain the pulp but bear in mind you'll likely need to increase the amount of passionfruits used to make up 1 cup pulp.

CITRUS CORDIAL
I missed cordial so much so after trying and combining a few, I came up with this one. It is similiar to Tisme's but extra fruit and slightly different method. Preservative Free! Perfect ice cold. I like to use those glass water bottles with the seal on them. It will last for weeks in the fridge.

Steps:
- Put sugar and acids in a large pot with a handle. Grate zest off the fruit, being careful not to get any pith and add to the sugar and acids.
- Squeeze juice from the fruit and add to sugar mixture.
- Pour the boiling water into pot with other ingriedients and stir over a low heat until sugar is completely dissolved. This will only take a few minutes. Do not boil.
- Cool the mixture, strain and then bottle. and refrigerate.
- Use at a ratio of 1 part cordial to 4 parts water.
