SUPER EASY FRUIT COCKTAIL COBBLER CAKE
This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier. I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream.

Steps:
- Pre-heat oven to 350 degrees.
- Melt one stick of butter in a microwave safe dish for 1 minute 40 seconds on 50% power.
- Pour entire contents of fruit cocktail cans (juice and all) into a 8 X 11 glass pan that has been sprayed with cooking spray. Spread fruit cocktail evenly on bottom of pan.
- Sprinkle box of yellow cake mix, evenly, over top of fruit cocktail. Do NOT mix cake mix and fruit cocktail. Use the back of a spoon to smooth out cake mix.
- Drizzle melted butter over top of cake mix. (Cake mix does not need to be completely covered in butter).
- (Optional - sprinkle a small amount coconut on top of the cake before baking, photo shows it with coconut).
- Bake on 350 degrees for 45 minutes.

- Dump entire can of fruit into small casserole dish.
- Add flour, milk and sugar evenly to fruit. DO NOT STIR IT.
- Dot entire surface with butter.

- Preheat oven to 350 degrees.
- Pour butter into a 9 x 13 inch pan.
- In a mixing bowl, stir together flour, sugar and baking powder until well combined.
- Stir in milk until smooth.
- Pour into pan and stir around to incorporate some of the butter.
- Spoon fruit evenly over batter.
- Bake for 35 to 45 minutes.
- Top with ice cream if desired.

FRUIT COCKTAIL CAKE ICING
I made only a couple changes to this recipe I adopted from the RecipeZaar account in February 2005. I increased the butter from 3/4 to 1 cup, changed the milk from canned evaporated milk (which I am not terribly fond of) to regular whole milk, and decreased the amount of milk from 1 cup to 3/4 cup (the additional 1/4 cup butter makes up the difference). This delicious topping is the perfect topping for Recipe #7061.

- Mix sugar, butter, and milk in a heavy saucepan (2 quarts or larger) and bring to a boil over medium heat, stirring constantly, then boil for 5 minutes while you continue to stir.
- Remove from heat and add pecans and coconut, then immediately pour hot mixture over cake (cooled or uncooled).
- Note: frosting will be thin, so the liquid can be absorbed by the cake; only the coconut and a thin glaze will be left on top of the cake; the rest will soak into the cake--This is the only frosting you will want to use over Fruit Cocktail Cake (Recipe #7061)!

BISQUICK FRUIT COBBLER
My mom gave me an older Bisquick cookbook she had and never used. It is from 1964 and this recipe is what I use for a great peach cobbler. I do use a whole recipe for the shortcake instead of 1/2 for a crustier cobbler. If you have fresh fruit, use 3 cups of sweetened fruit mixed with 3/4 water.

- Preheat oven to 400 degrees F. In a large saucepan add can of undrained fruit and heat thru. Blend together cornstarch and water in a small bowl, mix until blended. Add mixture to fruit and boil for 1 minute. Pour thickened fruit mixture into a 2 quart baking dish and dot with butter. Set aside.
- Add Bisquick, milk, melted butter, and sugar if using, into a bowl. Stir with fork until mixture is well combined. Drop by spoonfuls over fruit. Bake for approximately 20 minutes or until shortcake is golden brown.

FRUIT COBBLER
My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

FRUIT-COCKTAIL COBBLER

- 1. Drain fruit cocktail, reserving syrup, Mix brown sugar and cornstarch, add reserved syrup.Cook and stir until thick. Add fruit cocktail,orange peel and orange sections. Heat just to boiling.Pour into 8x8x2 inch baking dish. Dot with 2 tablespoon butter.Combine biscuit mix, cream and 1 tablespoon butter, mix just to moistened. Quickly drop by spoonfuls onto hot fruit.
- 2. Bake in hot oven 400 degrees 0 minutes or till biscuits are done. Serve warm with cream.
EASY BATTER FRUIT COBBLER

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
