I tried this recipe at a party once and loved it. It is a very sweet "dip" but very addictive. I usually serve it with Wheat Thins. Although this is very quick and easy to make, it needs time to chill.

2 (8 ounce) packages cream cheese, softened
2 (15 1/4 ounce) cans fruit cocktail, drained and diced
1 (5 ounce) package vanilla instant pudding mix
3/4 cup almonds, chopped

Steps:

  • In medium bowl, mix cream cheese, fruit cocktail and instant pudding.
  • Add 1/4 cup almonds, if desired.
  • Mix very well.
  • Shape into one large ball or two smaller bolls and roll in remaining almonds.
  • Chill to set.
  • Serve with crackers.

This is a confection shaped like a strawberry.

1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
2 cups shredded coconut
1 (6 ounce) package strawberry flavored Jell-O®
1 (3 ounce) package strawberry flavored Jell-O®

Steps:

  • Mix all the ingredients except the 3 ounce box of gelatin. Cover mixture and place in the refrigerator overnight. The next day, roll mixture into strawberry shapes.
  • Place the 3 ounce box of gelatin in a plate, and roll the shaped strawberries in the gelatin until coated. Place bits of mint leaves to create the stems; secure the stems with a piece of toothpick.

These are a treat I make for the holidays. I found this recipe a few years back in a Chatelaine magazine. This recipe was submitted by a finalist in a holiday cookie contest. They are delicious!!! Here is the recipe's intro from the magazine. "Michele Iwanus: registered nurse and mom of three, Bawlf, Alta., Finalist, Holiday Cookie Contest. These chocolate-cherry confections are perfect for family collaboration: As boys, Michele Iwanus's sons loved getting their hands sticky rolling out the balls, and now her young stepdaughter has mastered the art of the chocolate dip. Little wonder this no-bake recipe has been passed down through three generations: Michele's grandmother, Marjorie McDowell, first shared it with Michele's mother, Kathleen McDowell, in 1974, and now Michele consults a recipe card written in Kathleen's hand. Every year, Michele makes a big batch for her cookie exchange."

1 cup maraschino cherry, any color, drained well
1 egg
1 cup icing sugar
3/4 cup peanut butter
1 cup pecan pieces
1 cup finely chopped pitted dates
1 cup sweetened flaked coconut
16 ounces semisweet chocolate, about 16 squares
1/4 cup butter

Steps:

  • 1.Finely chop cherries, then pat dry with paper towels. In a large bowl, whisk egg. Gradually whisk in sugar until evenly mixed. Using a wooden spoon, stir in peanut butter until well mixed. Then stir in pecans, dates, coconut and cherries until evenly distributed. Line a baking sheet with parchment or wax paper. Pinch off about 1 tsp (5 mL) mixture and roll into a ball. Place on baking sheet. Continue with remaining mixture. Refrigerate or freeze until firm, about 1 hour.
  • 2.Coarsely chop chocolate and place in a small bowl with butter. Microwave on medium, stirring halfway through, until chocolate is almost melted, 2 to 3 minute Then stir until smooth. Remove balls from refrigerator. Poke a fork or wooden skewer into a ball. Dip into melted chocolate to completely coat, then lightly tap fork on edge of bowl to remove excess. Place ball on parchment.
  • 3.Repeat with remaining balls. Refrigerate until chocolate sets, at least 1 hour, before serving or storing. If making ahead, place balls in a sealed container and refrigerate up to 1 week or freeze up to 2 months.

If you love to camp and enjoy the great outdoors as much as my family, here is a take along snack that is sure to please. Using my dehyrator compacts so many things and makes them easy to take along since it removes the need for refrigeration.

1 cup dried dates
1/2 cup dried calimyrna fig
1/2 cup prunes or 1/2 cup dried apricot
1/2 cup raisins (regular or golden)
1 cup crushed walnuts or 1 cup pecans
1/2 cup sunflower seeds
3 tablespoons lemon juice
1 cup flaked coconut

Steps:

  • In a food processor, finely chop dates, figs, prunes/apricots and raisins.
  • In a medium bowl, mix chopped fruit with nuts and seeds.
  • Stir in lemon juice.
  • Shape into 1/2-1" balls.
  • Roll in coconut.
  • Dry in your dehydrator at 135º for 4 to 6 hours, or until crisp on the outside.

Healthy little treats for people with sweet tooths. I've made these during the holiday season to bring to functions and was enjoyed by all. I'm really finicky on getting all the dried fruit the same size so it took me a little longer then 20 mins to put this recipe together.

Number Of Ingredients 6

1/2 cup dried apricot, finely chopped
1/2 cup dried dates, finely chopped
1/2 cup sultana, finely chopped
1 teaspoon cinnamon
1 tablespoon condensed milk
1/2 cup desiccated coconut

Steps:

  • Finely chopped sultanas, dates and apricots and place them in a mixing bowl. Mix well.
  • Add cinnamon and mix well.
  • Add enough condensed milk (roughly a tablespoon) to make it sticky so the fruit sticks together more easily.
  • Place a teaspoon of mixture in palm of hand and mould/squish/squeezing mixture into a small ball.
  • Place desiccated coconut on plate and roll balls in desiccated coconut, coating the whole ball.
  • Store in refrigerator until your ready to use.
  • Enjoy.
