RASPBERRY & CREAM PARFAITS



Raspberry & Cream Parfaits image

Piled high with fresh raspberries and boozy whipped cream, these raspberry parfaits make a light and elegant dessert.

4 oz cream cheese, at room temperature
2 tablespoons orange- or almond-flavored liqueur, such as Grand Marnier or Amaretto (see note)
½ cup sugar
½ cup heavy cream
3 cups fresh raspberries
4 small sprigs mint, for garnish

Steps:

  • Have 4 wineglasses or glass dessert cups at hand.
  • Combine the cream cheese, liqueur, and sugar in the bowl of a stand mixer fitted with the whisk attachment or hand-held electric mixer. Beat on medium-high speed until creamy and lump-free, about 2 minutes. Using a rubber spatula, scrape down the sides of the bowl.
  • Add the heavy cream and start beating on low speed (so it doesn't splash), then increase the speed to high and beat until the mixture is thickened to a pudding-like consistency, about 2 minutes.
  • Distribute half of the raspberries among the bottom of the glasses or dessert cups, then distribute two-thirds of the cream mixture so that it covers the berries in each portion. Distribute the remaining berries evenly among the glasses or dessert cups, gently placing them on the layer of cream. Spoon equal amounts of the remaining cream on top of each portion. Refrigerate for at least one hour or up to 4 hours. Garnish each serving with a mint sprig and serve.
  • Make Ahead: The cream mixture can be made and refrigerated a day in advance. Assemble the parfaits up to 4 hours before serving.
  • Note: It's okay to leave out the liqueur if you are avoiding alcohol.

Steps:

  • In a bowl, whip cream until soft peaks form. Gradually add sugar, vanilla an salt; beat until stiff peaks form. Fold in sour cream. Set aside six cherries from pie filling. , Spoon half of the remaining pie filling into parfait glasses; top with half of the cream mixture. Repeat layers. Top with reserved cherries.

3 ounces softened cream cheese
8 ounces berry yogurt
1 tablespoon sugar
1 tablespoon lemon juice
2 cups whipped cream or 2 cups use whipped topping
2 cups blueberries
3 peeled and sliced peaches or 3 nectarines
2 cups sliced strawberries
2 cups halved grapes
1/2 cup crumbled sugar cookie

Steps:

  • Mix together the cream cheese, yogurt, sugar, and lemon juice.
  • Fold in whipped cream.
  • Put the blueberries in six parfait glasses.
  • Add a spoonful or two of the whipped cream mixture.
  • Add the peaches to each glass.
  • Add the whipped cream again.
  • Repeat with strawberries and grapes and more whipped cream.
  • Sprinkle the sugar cookies on top.

2/3 cup blueberries
2 bananas
1 lime

3/4 cup hazelnut and chocolate paste (recommended: Nutella)

Steps:

  • Spoon 1/8 cup bran flakes into the bottom of 6 parfait glasses. Whip heavy cream until soft peaks form, and set aside briefly. In another bowl, use an electric mixer to whip together yogurt, honey, and cream cheese. Fold whipped cream into the cream cheese-yogurt mixture. Spoon 1/4 cup of the cream mixture on top of the bran flakes in each glass. In another bowl, combine, red and white grapes, and blueberries. Slice in bananas and squeeze lime juice on top to prevent oxidation. Gently fold in raspberries. Spoon 1/4 cup of the fruit over the cream in each glass. Then repeat with 1/4 cup layer of cream followed by another 1/4 cup layer of fruit. Spoon 1/8 cup hazelnut and chocolate paste on top of the second fruit layer and garnish with mint sprigs.

Steps:

  • Place berries into 6 parfait glasses. Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add cold water and ice cubes; stir until ice is melted. And, so simple to make (uses a box of vanilla pudding mix, not instant). If you are a vanilla lover as I am, then this is most definitely for you! Better make extra, as you'll be longing for more! :) These parfaits are best eaten while the pudding custard is still warm, but they're good the next day, too. Tip: I make the fruit salad in the morning or a day ahead, and make the vanilla pudding custard right before serving. Enjoy!!

  • Make the Vanilla Pudding Custard, about 1 hour before serving: In a microwave safe 2-quart bowl, whisk together the pudding mix, milk, brandy, vanilla extract and scraped vanilla bean and seeds. Cook in the microwave on high heat for 6-8 minutes, whisking every two minutes, until thickened.
  • Make the Whipped Cream: Whip the cream until soft peaks form; add the vanilla extract and sugar. Whip until stiff peaks form.
