Succulent round steak is browned in olive oil, then simmered in beef broth and red wine. It's seasoned with marjoram and thyme and accompanied with fresh sliced mushrooms and onions.

2 tablespoons olive oil
2 pounds round steak, cut into small pieces
3 tablespoons all-purpose flour
2 cups beef broth
1 ½ cups dry red wine
1 teaspoon salt
½ teaspoon dried marjoram, crushed
½ teaspoon dried thyme, crushed
¼ teaspoon ground black pepper
2 ½ cups sliced fresh mushrooms
3 onions, sliced

Steps:

  • In a large stock pot over medium/high heat, heat the oil and add the beef pieces. Sprinkle the flour over the beef. Brown the meat on all sides.
  • Pour in broth and red wine. Sprinkle in salt, marjoram, thyme and black pepper.
  • Bring to a boil. Cover, and reduce heat. Simmer for 1 1/2 hours or until beef is tender, stirring occasionally.
  • Add mushrooms and onions to the pot. Liquid should just cover everything. If necessary, add some more wine to cover. Cook until onions are limp.

6 slices bacon
3 lbs good stewing beef
olive oil (optional) or peanut oil (optional)
3 cups Burgundy wine
2 cups beef stock
2 tablespoons tomato paste
3 garlic cloves, crushed
1/2 teaspoon thyme
1 bay leaf
salt, not too much
1 lb mushroom, browned in butter
yellow onion, peeled, chopped, and browned in butter
1/2 cup flour
1/2 cup butter (Roux)

Steps:

  • Cut the bacon into little strips, and blanch them with boiling water. Fry gently. Do not burn or darken the bacon. Remove the bacon from the pan and in the fat, brown the beef. You may wish to add a little oil to the pan. (Do not flour the meat before you brown it!) Brown the meat carefully and rapidly and brown it on all sides. Place in a 4 quart casserole.
  • Add the wine and soup stock; then the tomato paste, garlic, thyme, bay leaf, and a little salt. (Not too much salt, remember you used bacon.).
  • Deglaze the frying pan by putting it back on the heat for a moment after you have removed the beef. When the pan is slightly hot, put a small amount of wine in it and move it around with a wooden spoon. Add this to the casserole.
  • Bake the casserole in a 350 degree oven for 2 or 3 hours. When the beef is tender, add the mushrooms and yellow onions. Let all of this cook together for about 20 minutes and then thicken with the roux. Serve this dish with noodles or rice and a huge salad or skip the noodles and serve green vegetables instead.
  • Notes: This is an incredibly good dish. It is also very rich and not low in fat, but served once in a while it is sheer heaven.

This is a classic dish of the Burgundy region of France, designed to celebrate the wines for which Burgundy is famous. The Herb Bouquet adds a special flavor to this extremely popular dish.

1 cup beef broth
3 tablespoons all-purpose flour
1 tablespoon tomato paste
1 teaspoon beef demi glace
3 tablespoons bacon drippings
2 pounds beef round, cut into 3 inch pieces
3 tablespoons sherry wine
1 ½ cups chopped onions
1 cup Burgundy wine
3 sprigs fresh parsley
3 sprigs fresh rosemary
1 sprig fresh thyme
1 bay leaf
12 fresh mushrooms, sliced
¼ cup butter
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • In a small bowl, mix together beef broth, flour, tomato paste and demi glace; set aside.
  • Heat bacon drippings in a large heavy skillet over medium heat. Add beef, and cook until brown on all sides. Remove beef from skillet; set aside. Stir the sherry wine into the skillet. Add the onions, and cook about 5 minutes. Blend in the tomato paste mixture, and bring to a rapid boil, stirring constantly. Stir in Burgundy wine. Make the herb bouquet: Place parsley, rosemary, thyme, and bay leaf in a square of cheesecloth. Place herb bouquet in sauce.
  • Return beef to skillet. Cover, and simmer over low heat for about 3 hours, or until beef is tender.
  • Melt butter in a small skillet over medium heat. Saute mushrooms until lightly browned. Add to meat in the skillet, and continue cooking 15 minutes. Discard bouquet garni. Serve in a casserole dish, sprinkled with parsley.

2 cups tepid water (90 degrees)
2 (1/4 ounce) packages fast rising yeast
2 tablespoons sugar
4 tablespoons olive oil
1/2 cup vegetable oil
5 1/2 cups wheat flour
1 teaspoon salt
1/4 cup olive oil, appx
garlic, to taste
rosemary, to taste
kosher salt, to taste

Steps:

  • In a large bowl, mix water, yeast, and sugar.
  • Stir in oils and 1 t salt.
  • Add 2 3/4 c flour, mixing well til spongy.
  • Add enough remaining flour to make stiff dough.
  • Turn onto floured surface and knead until elastic.
  • Cover with bowl and let rise til doubled.
  • Divide dough in half, spread on cookie sheets using your fingers.
  • TOPPINGS:.
  • Mix crushed garlic with olive oil; brush over bread.
  • Sprinkle w/ dried rosemary and kosher salt.
  • Cover and let rise.
  • Bake at 375 for 1/2 hour.
  • Cut into squares and serve.
  • NOTE: You can also slice squares in half for sandwiches.

olive oil (for frying)
1 1/2 lbs round steaks
1 1/2 cups dry white wine (Chablis type)
2 garlic cloves, crushed
2 tablespoons chopped yellow onions
1 tablespoon glace de viande
1/4 teaspoon dried whole rosemary
2 tablespoons softened butter
2 tablespoons blue cheese (mixed well with the butter)
salt and pepper
chopped parsley (to garnish)

Steps:

  • Heat a large frying pan. Add the olive oil and the steaks to you perfection. (I like mine rare, very rare.) Remove to a warm plate and add the wine and the garlic and onion. Sauté just a minute and deglaze the pan by scrapping the bottom with a wooden spoon. Allow the wine to reduce be half and then add the glace de viande and the rosemary. Simmer for a moment and add the butter mixed with the cheese. Mix with a wire whip until smooth.
  • Place a bit of the sauce on each plate and then a piece of the stake on top of the sauce. Add the salt and pepper at the very last, as salt will dry out the meat during the cooking process. Garnish with parsley.

2-2/3 cups dry red wine, divided
1 small onion, sliced
2 sprigs fresh parsley, stems removed
4-1/2 teaspoons canola oil
1 garlic clove, crushed
1 bay leaf
1/8 teaspoon white pepper
Dash dried thyme
1 beef sirloin tip roast (2 pounds), cut into 1-inch cubes
2 tablespoons all-purpose flour
3 tablespoons butter, divided
1/2 cup condensed beef consomme, undiluted
6 cups water
20 pearl onions
1 cup sliced fresh mushrooms
Hot cooked noodles

Steps:

  • In a small bowl, combine 1-1/3 cups wine, onion, parsley, oil, garlic, bay leaf, pepper and thyme. Pour half in a large resealable plastic bag; add the beef. Seal and turn to coat; refrigerate for 4 hours or overnight, turning bag occasionally. Cover and refrigerate remaining marinade. , Drain marinade from beef; pat meat dry with paper towels. Coat beef with flour. , In a Dutch oven over medium-high heat, brown meat in 2 tablespoons butter on all sides. Stir in consomme and reserved marinade. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender., In a large saucepan, bring water to a boil. Add pearl onions; boil for 3 minutes. Drain and rinse in cold water; peel. In a skillet, saute mushrooms and pearl onions in remaining butter until tender. Add to beef mixture. Simmer, uncovered, for 10 minutes. Thicken if desired. Serve with noodles.

This is the only barbecue sauce I use for "Pulled Pork" barbecue. From Jeff Smith's first cookbook, "The Frugal Gourmet", 1984 One recipe is enough for about 10 lbs. of meat. It keeps well in a jar in the fridge. If you don't have liquid smoke, try adding some smoked paprika.

1 (6 ounce) can tomato paste
1 teaspoon salt
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup prepared yellow mustard
1/4 cup white vinegar (cider will do, also)
1/8 cup liquid smoke
1/2 cup Worcestershire sauce
1/2 teaspoon crushed red pepper flakes
1 tablespoon chili powder

Steps:

  • Combine all ingredients in a large saucepan.
  • Simmer SLOWLY uncovered, stirring occasionally, until thickened.
  • (approx 1 1/2 to 2 hrs.) (Watch it closely because it will burn if your heat is too high).
