1 qt. (4 cups) frozen vanilla nonfat yogurt, softened
1 ready-to-use chocolate flavor crumb crust (6 oz.)
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Reserve 8 mints and 4 cookies for garnish; set aside. Crush remaining mints and coarsely chop remaining cookies.
  • Place chopped mints in large bowl. Add yogurt; mix well. Gently stir in chopped cookies; spread into crust.
  • Freeze 4 hours or until firm. Let stand 10 min. before serving. Cut reserved cookies in half. Top each serving with 2 Tbsp. COOL WHIP, 1 cookie half and 1 mint just before serving.

2/3 cup evaporated milk

1 pastry shell (9 inches), baked
MERINGUE:
3 egg whites
6 tablespoons sugar
1 tablespoon water
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
3 tablespoons crushed peppermint-stick candy

Steps:

  • In a heavy saucepan, melt chocolate and butter over low heat. Stir in milk and sugar. Cook and stir for 8 minutes or until sugar is dissolved. Remove from the heat; stir in vanilla. Cool completely. , Spread half of the ice cream into pastry shell; freeze until firm. Spread half of the chocolate mixture over ice cream; freeze until set. Repeat layers. Freeze for several hours or overnight., In a heavy saucepan, combine the egg whites, sugar, water and cream of tartar. With a hand mixer, beat on low speed for 1 minute. Continue beating over low heat until mixture reaches 160°, about 12 minutes. , Pour into the bowl of a heavy-duty stand mixer; add vanilla. Beat on high until frosting forms stiff peaks, about 7 minutes. Fold in peppermint candy. Spread over top of pie. Cover and freeze until serving. Pie may be frozen for up to 2 months.

4 Tablespoons unsalted butter, (melted)
8 ounce block cream cheese, (softened)
1 1/2 cups white chocolate chips, (melted)
1 tsp peppermint extract
8 ounce container frozen whipped topping (Cool Whip) (thawed)
1 cup heavy whipping cream
1/4 cup powdered sugar
1/4 teaspoon peppermint extract ((or vanilla extract))
1/4 cup crushed peppermint candies
white chocolate shavings, optional

Steps:

  • Preheat oven to 350°F. Spray a 9-inch pie plate with nonstick spray, and set aside.
  • Place Oreo cookies into a food processor, and pulse until fine crumbs form then drizzle in the melted butter and pulse until combined. Press the mixture into the prepared pie plate.
  • Bake for 8 to 10 minutes, and allow to cool completely before filling.
  • In a large mixing bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Add the melted chocolate chips and peppermint extract, and mix until combined.
  • Finally, stir in the whipped topping (Cool Whip). Pour mixture into cooled Oreo pie crust.
  • Refrigerate for at least 2 hours to allow the pie to set.
  • In a large mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla or peppermint extract.

1/4 cup sugar
1/4 cup butter or 1/4 cup margarine, melted
8 ounces cream cheese, softened (regular or light)
1 (14 ounce) can sweetened condensed milk
1 cup hard peppermint candy, crushed (such as Peppermint Starlights or candy canes)
3 drops red food coloring
2 cups heavy cream, whipped

Steps:

  • Combine the cookie crumbs, melted butter, and sugar and press firmly into a 9" springform pan to form a crust.
  • Using an electric mixer on high speed, beat cream cheese until smooth and fluffy.
  • Add condensed milk, crushed mint candy, and the food coloring.
  • Mix on low to combine, then on high to beat together well.
  • With a spatula, fold in whipped cream and pour into the crust.
  • Cover and freeze until firm.

  • Mix cookie crumbs, sugar and butter. Press evenly in bottom and up side of ungreased pie plate, 9x1 1/2 inches.
  • Place marshmallows and milk in large microwavable bowl. Microwave uncovered on High about 3 minutes, stirring once, until marshmallows are melted. Refrigerate about 25 minutes or until mixture mounds slightly when dropped from a spoon.
