GRANDMA'S FROZEN FRUIT CUPS

Grandma's Frozen Fruit Cups image

My grandma passed away quite awhile ago, but this is one thing that really reminds me of her. She would make tons of it and freeze it to have enough all year long. We usually just used old yogurt cups and other random plastic containers with lids to make these in.

Provided by Shelby Jo

Categories     Pineapple

Time 5h20m

Yield 24 serving(s)

Number Of Ingredients 7

1 1/3 cups water
1 2/3 cups sugar
12 ounces frozen orange juice concentrate
water (5 orange juice cans full)
2 tablespoons lemon juice
2 lbs crushed pineapple
fruit (Fresh or Frozen)

Steps:

  • Boil water and sugar until slightly thickened; cool slightly.
  • Add concentrate, water, lemon juice, and pineapple. Add fruit until juice is thick with fruit. Can be fresh or frozen strawberries, blueberries, grapes, peaches, bananas, raspberries, kiwi, etc. (We usually do strawberries, grapes, bananas, and blueberries) Put in individual cups and freeze.(containers with lids will keep longer.).
  • **Serving size depends on the size of containers you freeze this in! 24 is just a random guess, it makes a lot though! The 5 hours freeze time is probably about a minimum**.

7 CREATIVE IDEAS FOR WHAT TO DO WITH FROZEN FRUIT - WELL+GOOD

From wellandgood.com
Estimated Reading Time 5 mins
  • Make fruit compote. If you need a sweet topping for things like yogurt and pancakes, use frozen mixed berries to make fruit compote. "Berries are loved for their cardio-protective properties as they are a good source of fiber as well as anthocyanins," says Maya Feller, MS, RD, CDN, of Brooklyn-based Maya Feller Nutrition.
  • Have them as a snack. You might not think of snacking on frozen fruits the way you would an apple or clementine, but you totally can. The cool thing is you can have access to fruits that aren't in season all year round.
  • Add flavor to your water. If plain water makes you yawn, frozen fruit can help make it more enticing (and also make you feel like you're at a spa). "Adding frozen fruit infuses the water and takes the flavor to the next level," Feller says.
  • Make ice cream. Yes, you can totally make healthy ice cream with frozen fruit. Poon recommends using banana or avocado (you can find a recipe for avo ice cream here).
  • Mix up a vinaigrette. Next time you whip up a homemade salad dressing, consider adding frozen lemons or raspberries. "Mixing just a small amount of frozen fruit into your dressings adds freshness, a bit of sweetness, a ton of flavor, as well as some viscosity," Poon says.
  • Make berry pancakes. "I add frozen berries to my pancake batter along with some crushed nuts," Feller says. "The texture is fantastic with the contrast of crunchy nut and warm cooked berries."
  • Make freezer fudge. Are you craving a healthy dessert? Poon recommends making some strawberry coconut freezer fudge. Start by throwing in 2 cups of frozen strawberries, 1/2 cup of almond butter, 1/3 cup of melted coconut oil, and 2 tablespoons of maple syrup into a blender or food processor until it's smooth.
