- Spread 1 cup cherry pie filling onto bottom of crust. Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in 1-1/2 cups COOL WHIP; spread over cherry layer in crust.
- Spoon remaining COOL WHIP around edge of pie to form 1-inch border. Fill center with remaining cherry pie filling.
- Refrigerate 4 hours or until firm.

- In a large bowl, beat cream cheese, sugar and vanilla until smooth. Add cocoa alternately with milk; mix well. Fold in whipped topping. , Pour into pie shell. Freeze for 8 hours or overnight. - Pulse cookies in a food processor until fine crumbs form. Add butter; process until blended. Press mixture onto bottom and up sides of an ungreased 9-in. pie plate. Freeze until firm, about 15 minutes. Carefully spread hot fudge topping over bottom of crust. Freeze until firm, about 30 minutes., Combine ice cream and 1 cup cherries; spread over hot fudge. Freeze until firm, about 8 hours., Meanwhile, in a large saucepan, combine water, sugar, cranberry juice concentrate and cornstarch; bring to a boil over medium heat, stirring constantly. Stir in remaining cherries. Reduce heat; simmer, uncovered, until thickened and cherries are soft, about 5 minutes. Remove from heat; if desired, stir in liqueur. Cool completely. , Remove pie from freezer 10 minutes before cutting. Serve with sauce.

FROZEN CHOCOLATE PIE
Extraordinarily rich and decadent, this pie is a chocolate lover's dream. Like many of my favorite recipes, it is from the Betty Crocker Recipe Card Library. You can use a traditional, graham cracker or cookie crumb pie crust, but my favorite is a chocolate cookie crumb crust (that I will sometimes mix with some very well-dried and finely chopped maraschino cherries).

- In small bowl, combine 1 cup of confectioner's sugar with the butter on the low speed of a mixer until fluffy.
- Blend in the chocolate and vanilla.
- Then, on high speed, beat in the eggs, one at a time, beating thoroughly after each addition.
- Pour into the prepared pie shell and cover with plastic wrap.
- Freeze for at least 6 hours or until firm.
- For easier cutting, remove the pie from the freezer 10 to 15 minutes before serving.
- When ready to serve, remove the plastic wrap.
- Then, in a chilled bowl, beat the whipping cream and 2 tablespoons of confectioner's sugar until stiff.
- Pile decoratively onto the pie, and top with garnish if desired.
- NOTE: I have found my small hand-held mixer works better for this than my stronger tabletop model.
- If you use a tabletop mixer, be careful you don't overmix.
- This pie should be thick, dense and creamy, and overbeating the eggs will give it a more mousse-like texture.
- It's by no means bad that way, but it is much better when the consistency is thick.

- In a bowl, combine cracker crumbs and 3 tablespoons sugar. Stir in margarine. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Refrigerate for 30 minutes. In a microwave-safe bowl, combine 1/2 cup chocolate chips and 2 tablespoons milk. Microwave, uncovered, on high for 1-2 minutes or until melted. Stir to blend; set aside., In another bowl, beat cream cheese and remaining sugar. Stir in chocolate mixture and remaining milk; beat until smooth. Set aside 1/2 cup whipped topping for garnish. Fold remaining whipped topping into crust. Freeze for 4 hours or until firm. Garnish with the reserved whipped topping and remaining chocolate chips.

- Mousse: Line an 8 1/2" X 4 1/2" loaf pan with plastic wrap, leaving a generous overhang on all sides; smooth plastic to avoid lines in finished mousse.
- Place 1 tablespoons water in a small bowl. Sprinkle gelatin over and let sit 5 minutes.
- Using electric mixer on high speed, beat egg yolks and salt in a large bowl until pale yellow and frothy, about 4 minutes.
- Fit a small saucepan with candy thermometer and bring corn syrup, sugar, and 1/4 cup water to a boil. Cook until thermometer registers 238 degrees. Remove from heat and add gelatin, stirring to dissolve with mixer on medium-low, drizzle syrup into egg mixture. Mix in chocolate.
- Using electric mixer with clean beaters, beat cream in a medium bowl to soft peaks. Mix one-third whipped cream into egg mixture. Fold in pistachios, then remaining whipped cream. Scrape mousse into prepared pan; cover tightly with plastic wrap. Freeze until solid, at least 5 hours.
- Sour Cherry Sauce: Combine cherries and 2 cups very hot water in a small bowl; let sit 10 minutes to soften.
- Meanwhile, bring cherry juice, sugar, and 1/2 cup water to a boil in a small saucepan over medium-high heat. Reduce heat. Drain cherries and add to saucepan; simmer until sugar is dissolved and mixture is slightly thickened, 8-12 minutes. Let cool. Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.
- Topping and Assembly: Combine cream, sour cream, sugar, and salt in a medium bowl. Scrape seed from vanilla bean; discard pod. Beat to soft peaks.
- Let mousse thaw 5-10 minutes, then unmold, unwrap, and slice with a hot knife. Serve with cherry sauce and topping. Place mousse slice ON TOP of Cherry Sauce on dessert plate and topping on the side the mousse.
- Slice mousse into portions and freeze on a parchment-lined baking sheet the day of the party to make serving easy.
