FROZEN BANANA TREATS
Natural Peanut Butter and Chia Jam, sandwiched between two banana slices and frozen. A delicious and healthy snack.

Steps:
- Peel bananas and slice bananas approx 1.5-2cm thick (1/2 - 3/4 inch) thick.
- Add a small amount of nut butter to a banana slice and top with a small amount of chia jam. Top with another banana slice to make a sandwich. *SEE NOTE 4
- Continue until all the banana is used up. I made 14 but how many you make will depend on the size of your banana and how thick you slice.
- Line a baking tray with a silicon mat/baking paper and place the banana treats on the tray in a single layer, ensuring the bites to not touch (this stops them from clumping together.
- Freeze for two hours (or longer) and then transfer to a freezable container. Enjoy straight from the freezer.

- Sprinkle granola onto a large piece of waxed paper; set aside. In a microwave, melt chocolate chips; stir until smooth. Stir in peanut butter until blended., Insert a pop stick into each banana half. Spread with chocolate mixture; roll in granola. Wrap in foil and freeze for 24 hours.

CHOCOLATE-DIPPED FROZEN BANANAS
These are so colorful and festive looking it makes you feel like it's a party when you look at an assortment of them. And they couldn't be easier to make, even your kids could do it. You can use white chocolate too, for a more wintry or icy look.

- Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut
- Line a sheet pan with waxed paper. Cut 1-inch off the end of each banana. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour.
- Melt the chocolate and butter in a bowl over a saucepan of simmering water, stirring occasionally.
- Arrange the dipping decorations on several flat plates. Working with 1 banana at a time, dip it in the chocolate and turn to completely coat (spoon some on, if needed). Roll the dipped banana in the desired decorations, transfer to the sheet pan, and return to the freezer.
- Once frozen, store the bananas in an airtight container.
- Serving suggestion: To serve at a kid's party, paint a hunk of styrofoam and stick the banana handles in the top, so they stand upright.
PEANUT BUTTER AND BANANA FROZEN DOG TREAT

- In a bowl, mash bananas until completely smooth. Mix in remaining ingredients, and stir until well incorporated.
- Pour mixture into ice cube molds, or small dixie cups and freeze overnight. Store in an air tight container, in freezer.

A simple dessert that people love! You can use anything you want in place of the toffee: sprinkles, nuts, cookie crumbs, or whatever! This is also really good with dark chocolate.

- Cover a baking sheet with waxed paper.
- Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
- Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Cover another baking sheet with waxed paper.
- Remove 2 to 4 banana bites from the freezer at a time; coat each bite with chocolate mixture. Place coated banana bites on the second baking sheet; sprinkle each with toffee bits. Repeat until all the bites are coated. Return banana bites to freezer until set, at least 1 hour. Allow bites to sit in room temperature for about 15 minutes before serving.

- Insert 1 ice pop stick into the cut end of each banana half. Place the bananas on a wax paper-covered baking sheet, and freeze until the bananas are frozen through, about 2 hours.
- Remove the frozen bananas from the freezer and spread a layer of peanut butter on each banana. Place the peanut butter-covered bananas back in the freezer for 30 to 45 minutes.
- Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Dip each frozen banana in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll the dipped bananas in the chopped peanuts and place on the wax paper covered baking sheet; freeze until the chocolate is firm, about 1 to 2 hours.

- Slice frozen banana and toss with brown sugar and yogurt.
- Top with chopped nuts, if desired.
FROZEN BANANAS
Based on a recipe from Jennifer Cornbleet's book, Raw Food Made Easy for 1 or 2 People. She says in its introduction, "Freeze your extra bananas so you will always have some on hand for quick shakes." Unfortunately for me, I froze my bananas before reading her recipe! I will update after I discover how truly difficult it is to peel a frozen banana! UPDATE: it's truly difficult! :( I will definitely go with this recipe the next time! :)
