1 cup almond
½ cup cashews
1 cup pitted dates
¼ cup shredded coconut, plus more for garnish
2 tablespoons coconut milk
1 teaspoon vanilla extract
1 pinch salt
2 ripe avocados
¾ cup coconut butter
2 tablespoons cornstarch
1 key lime, zested
1 cup key lime juice
½ cup maple syrup
⅓ cup coconut milk
1 tablespoon vanilla extract
¼ teaspoon salt

Steps:

  • Grease an 8-inch (20 cm) tart pan generously with coconut oil.
  • Add the almonds, cashews, dates, coconut, coconut milk, vanilla, and salt to a food processor and pulse until the nuts are finely ground and the crust starts to clump together.
  • Transfer the crust to the tart pan and use your hands to press it into an even layer. Chill in the refrigerator while making the filling.
  • Add the avocados, coconut butter, cornstarch, key lime zest, key lime juice, maple syrup, coconut milk, vanilla, and salt to a food processor and blend until smooth and fully combined.
  • Pour the filling into the crust and spread into an even layer. Garnish with shredded coconut, if desired.
  • Chill for at least 3 hours, or overnight, until the filling has fully set.

1 Tbsp. sugar
1/2 cup milk
1 cup BAKER'S ANGEL FLAKE Coconut
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/2 tsp. almond extract
1 ready-to-use graham cracker crumb crust (6 oz.)

Steps:

  • Beat cream cheese and sugar in large bowl with mixer until blended. Gradually add milk, beating well after each addition.
  • Add coconut, COOL WHIP and extract; stir gently until blended. Spoon into crust.
  • Freeze 4 hours or until firm. Let pie stand at room temperature 15 min. before cutting into pieces to serve.

1/4 cup sugar
7 tablespoons unsalted butter, melted
2 cups heavy cream
1 14-ounce can sweetened condensed milk, chilled
1 6-ounce can frozen lemonade concentrate (do not thaw)
1 cup blueberries
1 cup raspberries
2 tablespoons sugar
1 tablespoon fresh lemon juice

Steps:

  • Preheat the oven to 350 degrees. Make the crust: In a medium bowl, combine the graham cracker crumbs, sugar and melted butter. Press firmly on the bottom and up the sides of a 9-inch pie plate. Bake for 7 minutes; cool completely.
  • Make the filling: In a cold medium bowl, whip the cream until stiff peaks form. In another bowl, stir together the condensed milk and frozen lemonade. Gently fold the lemonade mixture into the whipped cream. Pour the filling into the crust; freeze overnight.
  • About an hour before you serve the pie, make the topping: Toss the berries in a medium bowl with the sugar and lemon juice. Set aside until ready to serve.
  • Let the pie come to room temperature for 10 minutes before cutting. Top each slice with berries.

LIME COCONUT PIE

2 tablespoons cornmeal cracker crumbs
Pinch of salt
2 1/4 cups sweetened shredded coconut
1 1/4 cups sugar
4 large eggs, separated
1 tablespoon unsalted butter, melted
2 large egg yolks
4 tablespoons unsalted butter, melted
1/4 teaspoon cream of tartar
3/4 cup freshly squeezed lime juice
Finely grated zest of 1 lime
3/4 cups sugar cookie or graham

Steps:

  • Combine the topping and crust ingredients. Press one half of the mixture into the bottom and sides of an ungreased 10-inch glass or ceramic pie plate, building up the sides to the top of the plate to form an edge. Reserve remaining mixture for the topping. To make the lime curd, combine the butter, lime juice, cornmeal, salt and 3/4 cup of the sugar in a large bowl over a pan of simmering water with the bottom not touching the water, and slowly cook, scraping the sides of the bowl and whisking occasionally, another 15 minutes, or until thickened. Cover with plastic and refrigerate. Stir the curd every 10 minutes or so to cool evenly.
  • Preheat the oven to 275 degrees. In a clean bowl, beat the egg whites with the cream of tartar and the remaining 1/2 cup sugar until stiff and glossy. Gently fold half of the beaten whites into the cool lime curd to lighten. Then fold in the remaining whites and the lime zest. (This should be very gentle; it is okay for a few streaks of white to be showing.) Pour the filling into the pie shell and sprinkle on reserved topping evenly to cover. Gently press the sides in so the top 1/2 inch of the crust remains bare. Bake 45 minutes, or until the pie has risen and coconut is golden brown. The filling should be slightly cracked and firm when pressed in the center. Cool completely, cover with plastic and refrigerate 6 hours to chill thoroughly. Serve cold.

Steps:

  • Make the filling: Halve and pit the avocados, then scoop out the flesh and chop. Transfer to a bowl, add the cream cheese and beat with a mixer on medium speed until smooth. Add the condensed milk, lime and lemon juices, and the salt and beat until fluffy, scraping the bowl as needed. Pour the filling into the crust, press a piece of plastic wrap directly on the surface and chill at least 4 hours.
  • Remove the springform ring and slice the pie. Garnish with whipped cream or confectioners' sugar, if desired, and serve immediately (the top will start to brown as the pie sits).

Cook slowly, scraping sides of bowl and whisking occasionally, 15 minutes. Add the 6 egg yolks all at once and cook, whisking occasionally until thickened, about 15 minutes. Press plastic wrap onto surface of custard. Refrigerate until cool, whisking occasionally.

  • Process the crust ingredients (coconut, pecans, dates, lime zest and sea salt) in a food processor or mini chopper until the dates have turned into sticky paste holding the crust ingredients together.
