1 cup Butter (We use Salted Sweet Cream Butter)
1 Tablespoon Milk
1 1/4 teaspoon of Peppermint Extract
Wilton Color Right Food Coloring - Red

Mixer

Steps:

  • Add powdered sugar to mixing bowl.
  • Add softened sticks of butter
  • Add 1 tbsp of milk.
  • Beat on low until powdered sugar is incorporated. Then move mixer up to medium-high speed. Scrape sides and bottom of bowl often. When completely mixed the frosting may appear dry.
  • Add more milk, a little bit at a time until frosting is the proper consistency.
  • Add Peppermint Extract

250g icing sugar
1 egg white
few drops of peppermint essence
dark chocolate (optional)

Steps:

  • Sieve the icing sugar into a large bowl. Add a little of the egg white and a few drops of the peppermint essence and mix really well. You want the mixture to come together as a soft dough, so keep adding a little egg white until this starts to happen (you might not need to use all of it). Taste the mixture and add more peppermint essence if desired.
  • Divide the mixture into 20 small balls, then flatten them gently with your fingertips into discs.
  • Place baking parchment on a large board or tray and space out the discs. Meanwhile, tip the chocolate into a microwavable bowl and heat in 30 second intervals in the microwave until melted, stirring after each blast. Once melted, leave the chocolate to cool for 5-10 mins then carefully dip the peppermint creams in the melted chocolate until they are half coated. Lay them back on the baking parchment to set for 3-4 hours or overnight.

As a child my mother would make these and I hated them. As a child I wanted chocolate, but now as an adult with different tastes, I love these bars. They are sweet, depending on how you frost them, but they are a great escape from chocolate. Another "grown-up" recipe!

1/2 cup shortening (I use margarine)
1 cup sugar
2 eggs
1/2 cup molasses
1 cup sour milk
1 teaspoon baking soda
1 pinch salt
2 cups flour
1 teaspoon cinnamon

Steps:

  • Cream shortening and sugar well.
  • Add beaten eggs and molasses, mixing well.
  • Dissolve soda in sour milk and add to creamed mixture.
  • Mix together flour, salt and cinnamon, then add to creamed mixture.
  • Bake at 350 in greased jelly roll pan (15x10) for 20-25 minutes.
  • Cool and frost with thin powdered sugar butter icing.

Nonstick cooking spray, for the skillet
One 16.25-ounce box white cake mix
1 teaspoon peppermint extract
12 to 14 full-size candy canes
Buttercream Peppermint Frosting, recipe follows
1 pint peppermint ice cream
3 cups confectioners' sugar, sifted
2 sticks (1 cup) unsalted butter, at room temperature
3 tablespoons heavy cream
1 teaspoon peppermint extract

Steps:

  • Preheat the oven to 350 degrees F. Spray a 10-inch cast-iron skillet with nonstick cooking spray.
  • Prepare the cake mix according to the package's egg white method. Add the peppermint extract and mix to combine. Pour the cake batter into the prepared skillet. Bake until the cake is set and a toothpick inserted comes out clean, 35 to 45 minutes. Let the cake cool until the top of the cake is cool to the touch.
  • Pulse the candy canes in a food processor until you get pea-sized candy, 5 to 6 times. Add 1/2 cup of the crushed candy canes to the Frosting and fold to combine. Frost the cake with the Peppermint Frosting, then sprinkle the remaining crushed candy over the entire cake. Serve slices with scoops of peppermint ice cream.
  • In the bowl of a stand mixer fitted with a paddle attachment (or using a hand mixer), beat the confectioners' sugar together with the butter until well combined. Add the heavy cream and continue to beat until extremely light and fluffy. Beat in the peppermint extract until combined.

This recipe came from Mary's mother. Aunt Elsie came to visit and Mary asked Sarah to make these cookies. Not much made Aunt Elsie happy but having these cookies sure did. She even had to double up on insulin so she could have one but did it and said it was well worth it, reminded her of her childhood.

2 egg yolks
1 cup molasses
1 teaspoon baking soda

1 teaspoon cinnamon

flour, enough to make stiff batter
1/2 cup sugar
2 tablespoons water
1/4 cup white Karo
1 teaspoon vanilla

Steps:

  • Seperate the egg whites from yolks you will need both in this recipe.
  • Cream shortening and sugar together. Add egg yolks, mix well.
  • Add enough flour to make a stiff batter. Then add remaining ingredients and mix well.
  • Pour in a greased jelly roll pan(deep cookie pan) and bake at 350 degrees for 30 minute.
  • To make frosting: beat the egg whites till fluffy, set aside. Stir water and karo syrup in sauce pan and cook until it reaches soft ball stage, approx 7 minute Pour over the egg whites beating all the time. Until it is light and fluff then beat in the vanilla.

1 1/2 sticks unsalted butter, at room temperature, plus more for the pans
2 cups sifted cake flour (sift first, then measure), plus more for dusting
1 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 1/2 cups sugar
3 large egg whites, at room temperature
1 1/2 cups sugar
1/2 cup light corn syrup
6 large egg whites
Pinch of salt
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1/4 cup crushed candy canes, plus more for topping

Steps:

  • Make the cake: Position racks in the middle and lower thirds of the oven and preheat to 350 degrees F. Lightly butter three 8-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust with flour, tapping out the excess. Sift the flour, baking powder and salt into a medium bowl. Combine the milk and the vanilla and peppermint extracts in a small bowl; set aside.
  • Beat the butter in a large bowl with a mixer on medium speed until smooth, about 1 minute. Gradually beat in 1 cup sugar, then increase the mixer speed to high and continue beating until light and fluffy, about 5 minutes.
  • Reduce the mixer speed to low and add the flour mixture in 3 additions, alternating with the milk mixture, beginning and ending with the flour mixture, until just combined. Scrape down the side of the bowl, then increase the mixer speed to medium and beat until smooth, about 5 more minutes.
  • In a separate large bowl (using clean beaters), beat the egg whites with a mixer on high speed until foamy. Gradually add the remaining 1/2 cup sugar and continue beating until stiff, shiny peaks form, about 6 minutes. Using a rubber spatula, gently fold the whites into the batter in 3 additions until combined.
  • Divide the batter evenly among the prepared pans. Bake, switching the position of the pans about halfway through, until a toothpick inserted into the center comes out clean, about 20 minutes. Let the cakes cool 10 minutes in the pans, then run a knife around the edges and invert onto racks to cool completely. Peel off the parchment. (The cakes can be made up to 1 day ahead; wrap in plastic and store at room temperature.)
  • Make the frosting: Fill a medium saucepan with 1 to 2 inches of water and bring to a simmer over medium-high heat. Combine the sugar, corn syrup, egg whites, 2 tablespoons water and the salt in a heatproof bowl and set over the saucepan (do not let the bowl touch the water). Whisk until the sugar dissolves and the mixture registers 165 degrees F on a candy thermometer, about 8 minutes. Remove the bowl from the pan and beat with a mixer on medium speed until soft peaks form, about 5 minutes. Increase the mixer speed to high and beat until fluffy and cool, about 4 more minutes. Add the vanilla and peppermint extracts and beat until combined, 1 more minute.
  • Assemble the cake: Place 1 cake layer on a platter and spread 1 cup frosting on top; sprinkle with about 2 tablespoons crushed candy canes. Top with another cake layer, spread with 1 cup frosting and sprinkle with another 2 tablespoons crushed candy canes. Top with the final cake layer, then frost the top and side of the cake with the remaining frosting. Sprinkle more crushed candy canes on top.

This came from Good Morning America's feature on the "Cake Doctor". It was paired with some Red Velvet Cuppies, but I have a sensitivity to red food coloring. So, I posted the cuppies with a note about the food dye. I can eat it in small quantities, but otherwise....noooo thanks! I cannot wait for the holidays to get here so I can bake to the "sounds of the season" and give this stuff to some of my favorite people!

6 ounces white chocolate, coarsely chopped
4 ounces reduced-fat cream cheese, at room temperature
4 tablespoons butter, at room temperature
1 teaspoon peppermint extract
2 -2 1/2 cups confectioners' sugar, sifted

Steps:

  • Place the white chocolate in a small glass bowl in the microwave oven on high power for one minute. Remove the bowl from the oven and stir with a wooden spoon or rubber spatula until it is smooth. Set the chocolate aside to cool.
  • Place the cream cheese and butter in a large mixing bowl. Beat with an electric mixer on low speed until well combined, 30 seconds. Stop the machine. Add the melted white chocolate and blend on low speed until just combined, 30 seconds.
  • Add the peppermint extract and two cups of the confectioners' sugar and blend on low until the sugar is incorporated, 30 seconds more. Increase the mixer speed to medium and beat until the frosting is fluffy, one minute more, adding up to ½ cup more sugar if needed to make a spreadable consistency.
  • Feel free to fold in up to ½ cup crushed peppermint candy for a crunchy and creamy frosting!
