1/2 cup chopped nuts (optional)
3 tablespoons butter, softened
3 tablespoons cocoa
1 tablespoon light corn syrup or 1 tablespoon honey

1 cup powdered sugar
1 -2 tablespoon milk

Steps:

  • Stir oil or melted butter, sugar and vanilla together in large mixer bowl.
  • Add eggs, beat until well blended using a spoon.
  • Combine flour, cocoa, baking powder and salt; gradually add to egg mixture.
  • Add nuts if desired.
  • Spread into a greased 9 inch square pan.
  • Bake at 350° for 20-25 minutes or until brownie pulls away from the edge of the pan.
  • Cool in the pan.
  • Frost with Creamy Brownie Frosting if desired.
  • Cut into squares.

  • Cream butter, cocoa, corn syrup or honey and vanilla in small mixer bowl.

1 cup butter (softened)
1 cup granulated sugar
4 large eggs
2 1/2 teaspoons vanilla extract

1/2 cup pecans (or walnuts, chopped)
For the Chocolate Frosting:
1/2 cup butter
4 tablespoons unsweetened cocoa powder
1 pound (about 3 1/2 cups) confectioners' sugar
1/2 teaspoon vanilla
4 to 6 tablespoons evaporated milk (or half-and-half, heated)

Steps:

  • Heat oven to 350 F.
  • Grease and flour a 9" x 13" baking pan.
  • In a mixing bowl with an electric mixer, combine the 1 cup of butter and granulated sugar; beat until light and fluffy .
  • Add the eggs, one at a time, beating after each addition. Add the 2 1/2 teaspoons of vanilla and blend well.
  • In another bowl, combine flour, baking powder, salt, and cocoa. Stir with a spoon or whisk to blend thoroughly.
  • Add the dry ingredients to the first mixture; stir until blended.
  • Fold the pecans or walnuts into the batter.
  • Spread the batter in the prepared baking pan.
  • Bake for about 18 to 24 minutes, or until a wooden pick inserted into the center comes out clean.
  • Cool in the pan on a rack for about 5 minutes; invert onto a cake platter or leave them in the pan.
  • Melt the 1/2 cup of butter in a saucepan over low heat; add the cocoa powder and stir until smooth.
  • Sift confectioners' sugar and add it to the cocoa mixture along with the 1/2 teaspoon of vanilla and 4 tablespoons of hot evaporated milk or half-and-half.
  • Working quickly, spoon the warm frosting evenly over the brownies and spread to cover thoroughly.

1 1/2 sticks (3/4 cup) unsalted butter, cut into pieces
2 cups granulated sugar
3 large eggs
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup heavy cream
4 tablespoons (1/2 stick) salted butter
1 tablespoon vanilla
1 teaspoon kosher salt
4 cups confectioners' sugar
2 sticks (1 cup) salted butter
1/4 cup heavy cream

Steps:

  • For the brownies: Preheat the oven to 325 degrees F. Line a 9-by-13-inch baking pan with foil or parchment paper.
  • In the top of a double boiler over medium heat, heat the chocolate and butter, stirring, until melted, about 5 minutes. Add the granulated sugar and stir gently until combined. Remove from the heat.
  • In a separate bowl, gently whisk the eggs. Add a small splash of the chocolate mixture to the eggs, stirring immediately (but still gently). Then add the tempered eggs into the chocolate, stirring constantly. Add the flour and stir until combined. Pour the batter into the prepared baking pan and spread to even out the surface.
  • Bake until just beginning to crisp at the edges, 25 to 30 minutes. Let cool completely in the pan.
  • For the salted caramel sauce: Add the brown sugar, cream, butter, vanilla and salt to a pan and cook over medium heat, whisking occasionally, until thickened and combined, about 5 minutes. Remove from the heat and allow to cool.
  • For the salted caramel buttercream: Add the confectioners' sugar, butter and cream to a mixer fitted with the paddle attachment. Mix until light and fluffy, 3 to 4 minutes. Turn the mixer off, drizzle in the salted caramel sauce, turn the mixer back on and mix until combined.
  • To frost the brownies: Remove the cooled brownies from the pan, spread with the buttercream and cut into individual pieces.

1 cup butter
5 eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 13x9-inch baking pan. Place 8 ounces of baking chocolate with 1 cup of butter in a microwave-safe bowl, and microwave on High until the chocolate is soft and the butter has melted, about 2 minutes. Stir to mix.
  • Place the eggs, 3 cups of sugar, and 1 tablespoon of vanilla extract in a large bowl, and beat with an electric mixer on high speed for 2 minutes. Reduce the mixer speed to low, and beat in the melted butter-chocolate mixture. Beat in the flour until just combined (do not overmix), and stir in the chopped walnuts. I got this recipe from one of my mom's best friends. I love this recipe and I also use it for cake. I promise you that this is better than any store bought box mix. They don't turn out as dense as your typical brownie, but if you are like my wife, who likes the real dense chewy brownie, you can omit some of the baking soda. I love them just the way they are. It is up to you, how you like your brownies, but I know that you will love these. Oh, and the frosting rocks.

1 cup water
1/2 lb unsalted butter
4 tablespoons cocoa powder
2 cups flour
2 cups sugar
2 eggs
1/2 cup buttermilk

1/2 teaspoon ground cinnamon
4 tablespoons cocoa powder
6 tablespoons milk
1/4 lb unsalted butter
1 teaspoon vanilla extract
1 lb powdered sugar

Steps:

  • Preheat oven to 350°F.
  • Bring the water to a low boil; add the butter and the 4 tbsp of cocoa.
  • In a mixing bowl combine the brownie dry ingredients and the sugar.
  • Slowly mix in the water/butter/cocoa mixture.
  • Whisk the egg and buttermilk together, and quickly add to the batter.
  • Mix until combined, making sure to scrape the sides and bottom of the bowl.
  • Grease and dust with cocoa a half sheet pan (restaurant supply style), or line with parchment paper.
  • Pour batter into the pan and tap the edge of the pan to settle the batter out.
  • Bake for about 20 min or until brownies test done.
  • You may need to turn the pan once half way through to even out the cooking, depending on your oven. I do just out of habit.
  • To make frosting, combine all the frosting ingredients in a mixing bowl and mix until smooth and creamy.
  • Put frosting in the fridge until you are ready to frost. It is easier to frost if it is a little cool.
  • Bring it out of the fridge and let it come up to almost room temperature (Should be spreadable, but soft like room temperature butter).
  • Remove brownies from the oven and allow them to cool completely before frosting.
  • Cut with a clean knife and enjoy.
  • To make a cake, doubling the recipe yields enough batter to fill 2 9-inch round cake pans. I highly recommend using parchment on the bottom and greasing the side to get the best results when you try to remove the cake from the pan.

Steps:
