MOIST VEGAN CORNBREAD



Moist Vegan Cornbread image

I don't like dry cornbread. This vegan version is tasty, and moist. It does not last long, however, so you do need to eat it within 2 days.

2/3 cup maple syrup
1/3 cup canola oil
1 cup plain soymilk
1 cup whole wheat flour
1 cup fine cornmeal
1 tablespoon baking powder
1 teaspoon kosher salt

Steps:

  • Heat oven to 350 degrees.
  • Stir first three ingredients together.
  • In another bowl whisk together the flour, cornmeal, baking powder and salt. Regular salt will work as well.
  • Mix wet and dry ingredients together and pour into a greased 9x9 square pan. Bake for 35 minutes at 350 (or in miniloaf or muffin pans for about 25 minutes), until tester comes out clean.

1 cup butter, room temperature
1 cup sugar
1/2 cup honey
4 eggs
2 1/4 cups flour
3 teaspoons baking powder
1 1/2 cups cornmeal
3/4 teaspoon salt
2 1/4 cups milk

Steps:

  • Cream the margarine and sugar.
  • Add eggs, one at a time.
  • Add dry ingredients (flour, baking powder, cornmeal and salt).
  • Stir in milk until well combined.
  • Pour in a greased 13x9 pan and bake at 375 degrees for 35-40 minutes.

Well, love peppers, and cheese, and well sweet cornbread. How can you go wrong. It's cheap, easy, and delicious! Great with chili or even a hearty bean soup. Also I usually make this amount to have left overs. It's wonderful by itself just smothered in butter. Surprisingly it is not that hot..a little spice with a little zing from the peppers being pickled

2 (8 1/2 ounce) packages Jiffy cornbread mix
1 cup finely chopped pickled jalapeno pepper
2 cups shredded sharp cheddar cheese
1 cup sweet corn (optional)

Steps:

  • In a large bowl prepare cornbread as directed on the box of cornbread.
  • Add corn, cheddar cheese and finely chopped pickled jalapeños.
  • Mix all ingredients together.
  • Separate mix into two 9x9-inch greased pans.
  • Follow the instructions on the cornbread box for baking.
  • I usually bake at 350°F for about a half hour or until you can insert a toothpick and it comes out clean.

SWEET MOIST CORNBREAD



Sweet Moist Cornbread image

This cornbread is sweet, has a moist texture and a higher rise than a Southern cornbread. It's almost cake-like. My family loves it! It's great hot and slathered with butter, apple and plum butter or jam.

1/3-1/2 cup granulated sugar (depending on your taste for sweetness)
1 cup all-purpose flour
1 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2/3 cup milk
2/3 cup buttermilk
3 tablespoons unsalted butter, melted

Steps:

  • Directions:.
  • Preheat oven to 400 degrees.
  • Spray pan with Pam Baking spray (has flour in it) into an 8"x8" baking pan (I use glass) or brush pan with oil and lightly dust with flour.
  • Add all dry ingredients in a large bowl and whisk to incorporate ingredients.
  • Form a well in middle of the bowl. Set aside.
  • Melt 3 Tbs. butter. Set aside.
  • In medium bowl, whisk together eggs, milk, buttermilk and melted butter.
  • Pour into the middle of well in the large bowl of dry ingredients.
  • With spatula, gently fold in the dry mix into the wet ingredients of bowl.
  • Mix until just wet and leave the lumps alone. Scrape sides and near the bottom of bowl to make sure all the dry ingredients get wet. Do not over mix.
  • Pour into prepared baking pan. Place pan on middle rack in oven and bake for 25 to 30 minutes or until golden and middle of cornbread is set.
  • Remove and set on rack to cool or slice and serve warm.
  • Directions for muffins:.
  • Preheat oven to 400 degrees.
  • Prepare a muffin tin by spraying each well with Pam Baking Spray or just use muffin wrappers.
  • Follow the recipe and directions for the cornbread batter and fill each well with ¼ cup of batter.
  • Place pan on middle rack in oven and bake for 16 to 18 minutes or until golden and middle of corn muffins are set.
  • Remove and set on rack to cool or serve warm.
  • If you're not using wrappers, loosen muffins from pan by gently running a knife around edges of muffins.
