TOMATO FRIKKADELLE (MEATBALLS)

There is one prerequisite for frikkadelle which is that they be soft and juicy just like my mom's. This recipe does justice to this! The frikkadelle can be made smaller if so desired.

4 medium tomatoes
2 large onions
2 tablespoons oil
1 kg minced beef
1/2 cup oatmeal
1/2 cup milk
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons salt
1 ml pepper
1/2 cup water
2 tablespoons soup mix

Steps:

  • Preheat oven to 180C.
  • Peel tomatoes and onions and chop roughly.
  • Braise in oil until soft.
  • Mix half tomato and onion mix with mince and oatmeal.
  • Add milk, vinegar, Worcestershire sauce, salt and pepper and mix well.
  • Shape 14 large frikkadelle from the mixture and place them close together in a shallow ovenproof dish.
  • Mix the water and soup powder and pour this over the frikkadelle.
  • Cover and bake for 1 hour.
  • Spoon the remaining onion and tomato mixture over the frikkadelle and continue baking until nicely browned on the top.

Otherwise known as Dutch Forcemeat Balls. This is my family's favourite dish, so I thought I would share it with you all. Serve with steamy hot rice and salad. We like to use Sweet Chilli Sauce as a dip, but I'm sure any Asian style sauce will do just as well. Don't leave the cloves out - it's important to the flavour of the meatballs. The original recipe came from Charmaine Solomon's - The Complete Asian Cookbook, but I have modified it a little.

Number Of Ingredients 14

1 large brown onion, very finely chopped
1 kg minced steak
1 cup fresh breadcrumb (white, wholemeal or whatever is available)
3 teaspoons salt (I like to use vegie sea salt)
1 teaspoon fresh ground black pepper
4 teaspoons of chopped fresh dill or 1 teaspoon dried dill
1/2 teaspoon cinnamon
1/2-1 teaspoon clove (I think it's best to freshly grind whole cloves)
2 garlic cloves, crushed
1 teaspoon finely grated fresh ginger (you can use powdered if you wish)
4 teaspoons Worcestershire sauce or 4 teaspoons lemon juice
3 -4 eggs, beaten
dry breadcrumbs, for coating
oil (for deep frying)

Steps:

  • Place the first 11 ingredients in a large bowl and mix well.
  • Shape into small balls about 2.5cm (1 inch) in diameter.
  • Dip in beaten eggs, then coat in dry breadcrumbs.
  • Deep fry in hot oil under golden brown.
  • Drain on absorbent paper before serving.
  • Should make 30 + meatballs, so easily serves 6.

1 large onion (sliced thin)
1 tablespoon dry mustard
1 tablespoon garlic powder
1 tablespoon white pepper
2 bottles chili sauce
1 jar grape jelly
1 teaspoon salt
2 eggs
plain breadcrumbs

Steps:

  • combine hamburger,garlic powder,salt,eggs,bread crumbs (enough to hold meat together).
  • in crockpot combine chili sauce,onion,dry mustard,white pepperand grape jelly (about 3/4 jar).
  • form 1 inch meatballs add to crockpot uncooked,cook on high till done they will make own sauce it is good for parties.

This is a recipe I got from my Oma (grandma). It has always been one of my favorites and is commonly eaten mashed up in a bed of rice and vegetable soup. But I like it served as a traditional meatloaf dish, as well.

1 lb ground beef
1 lb ground sausage
2 medium potatoes
1 egg
2 teaspoons ground nutmeg, to taste
1 1/2 teaspoons salt, to taste
2 tablespoons parsley flakes
1 teaspoon black pepper or 1 teaspoon white pepper

Steps:

  • Chop potatoes into small (~1inch square) pieces (skin the potatoes, if you wish) and boil until soft.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Place in bowl large enough for all ingredients and mash.
  • Add all other ingredients and knead with hands until mixed.
  • Note: The potatoes will be VERY hot!
  • You may want to wait a bit for them to cool before using your hands.
  • Also, the meats will be very cold on your hands if not taken out of the refrigerator~ an hour ahead of time.
  • Mold into an ungreased 9x13x2 pan and bake for 1 hour.
  • Loaf will pull away from sides of pan and be surrounded by grease from the meat (more or less depending on the fat content of the meat you used).
  • Cut into pieces and enjoy.

Frikadelle translated is "meatballs". I developed this recipe to recapture the flavours of the rustic South African sausage - "boerewors" means farmer's sausage.

1/2 tablespoon fennel seed
2 tablespoons whole coriander seeds
1 1/2 lbs lean ground beef
1 lb lean ground lamb
1 cup soft breadcrumbs
3 tablespoons low-sodium beef bouillon granules
1 medium onion, finely chopped
2 garlic cloves, minced
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon fresh ground black pepper
1/2 teaspoon ground allspice
1/3 cup balsamic vinegar
1 egg, beaten
2 tablespoons vegetable oil

Steps:

  • Grind the whole fennel and coriander seeds with a mortar and pestle until a coarse consistency. Or, place them in a small Ziploc bag and hammer with a meat mallet, smooth side.
  • In a large mixing bowl combine all ingredients in the order given.
  • Mix well so that everything is evenly distributed.
  • Using an ice cream scoop - or a 1/3 cup measure - roll into balls then press slightly so they resemble chubby hamburgers - 2" in diameter - 3/4" thick.
  • At this stage you can freeze them as you would hamburgers.
  • To cook - heat the oil in a non stick frypan and brown on both sides.
  • Use the pan juice to fry up some sliced onion and make a rich onion gravy.
  • Return the patties to the gravy and cook on low until no longer pink.
  • Serve on top of creamy garlic mashed potatoes.
  • Instead of onion gravy - I sometimes simmer them in a curry sauce made of fried onion, garlic, curry powder (authentic quality) - coconut milk and crushed tomatoes in even quantities. Serve on basmati rice.
