FRYING PAN BREAD (SKILLET FLATBREAD) - NO YEAST
Steps:
- Add the dry ingredients (i.e. flour, salt, sugar, baking powder & herbs) to a large mixing bowl. Mix dry ingredients together. This helps to spread out the baking powder and prevents small pockets of baking powder being found in the finished bread.
- Soften butter in a microwave.
- Add wet ingredients (i.e. milk and melted butter) to the mixing bowl. Stir thoroughly with a large spoon.
- Use your hands to knead the dough together for 1 or 2 minutes in order to create a nice ball of dough.
- Sprinkle some flour on a cutting board in order to prevent the dough sticking to the cutting board (when you roll out the dough).
- Place the dough of the cutting board.
- Sprinkle a small amount of flour on top of the dough (in order to prevent the dough sticking to the rolling pin).
- Use a rolling pin to roll the dough flat. The dough should be no more than 1/8 inch high.
- Use a large cookie cutter (or small cake ring) to create circular flatbreads. Or cut the dough with a knife diagonally & vertically (in a tic-tac-toe fashion) in order to create square flatbreads. Use tips below for more information on shaping the skillet flatbread.
- Add 1 or 2 tablespoons of oil or butter to a frying pan.
- Heat the frying pan with low/medium heat (halfway between the low and medium setting on your range dial).
- Place the flatbread dough in to the frying pan. The amount of flatbread that can fit in your frying pan depends on the size of the frying pan & flatbreads.
- Flip all of the flatbreads in the pan every minute in order to prevent burning. Remove the flatbreads from the frying pan when golden brown on both sides. It should take only 2-4 minutes to fry each batch of flatbread (so you need to watch the frying pan carefully... don't step away from the pan or they will burn).
- Add another 1 or 2 tablespoons of oil or butter to the frying pan when you fry a new batch of flatbreads.
- Place the skillet flatbread on a wire cooling rack.
- Serve while still warm.

My mom used this on the mornings when we had run out of bread. She also used it to make sandwiches if needed. It came from my Granny who used it to round out meals during the Depression.

- Mix flour and baking powder. Add water to make a soft dough. Pat dough out on a sheet of plastic wrap to about 1/2" thick.
- Heat up about 1/4" of oil or lard to medium heat in a cast iron or non stick pan.
- Cut dough into about 9 biscuits.
- Fry on one side until brown. Flip and cook about 2-3 minutes more. Test for doneness by flaking the side of a biscuit with a fork. If it seems dry inside it is done.
- Serve with butter and jam. Can also be napped with gravy and served with stewed hamburger and onions.
PAN FRIED BREAD
This is a rustic bread that comes out sort of like a Norwegian pita. From Andreas Viestad, "New Scandinavian Cooking."

Steps:
- In a medium bowl, stir together yeast, lukewarm water, half the flour, sugar, and salt; let stand 10 minutes so that the yeast can start to ferment.
- Stir in the buttermilk and the remainder of the flour.
- Place a moist cloth over the dough and let rise for 20 minutes; the dough will still be a bit sticky.
- Heat a nonstick pan over medium heat.
- Drop a spoonful of dough in the pan, that has been lightly greased; spread the dough out and fry for 3 minutes on each side.
- Repeat with remaining dough.

FRIED SKILLET BREAD
This is from The Art of American Indian Cooking by Y. Kimball & J. Anderson. It's quick and easy, and makes a good "camp" bread. I've made it both at home, and over a campfire. Cooking time is approximate as it will depend on your heat. This is especially true if cooking it over a campfire.

- Sift 4 cups flour with baking powder and salt.
- Combine milk and melted butter.
- Place flour/baking powder mixture in large bowl and gradually add liquid ingredients, beating well.
- When the mixture has been worked into a soft dough, lightly flour a board with part of the remaining flour.
- Turn out dough onto board and knead lightly, working in remaining flour.
- Divide dough into 3 parts and shape each into a round pone about 1/8 inch thick and a diameter to fit skillet.
- Pour enough oil in skillet to measure about 1/4 inch deep.
- Heat oil and brown each loaf quickly, one at a time until golden on both sides.
SKILLET GARLIC FLATBREAD
This goes so well with Mexican or Indian soups, lentils, beans, or chilies. I'm sure you could also use as a base for quick pizzas or brush with garlic butter for a tasty treat on its own!

- Mix flour, baking powder, and salt in a large bowl; add butter and crush into the flour mixture with hands until it resembles breadcrumbs.
- Mix hot water and garlic into the flour mixture until it all comes together into a dough; turn out onto a cutting board dusted with flour. Knead dough 3 or 4 times. Cut dough into 10 pieces, roll into balls, and flatten into discs.
- Cover dough with a clean kitchen towel and let sit for 20 minutes.
- Heat a cast-iron skillet over-medium high heat.

- Heat oil in a large saucepan to 350 degrees F (175 degrees C). Oil should be at least one-inch deep.
- Mix flour, baking powder, and salt together in a large bowl. Add water a little at a time until dough comes together into a ball and doesn't stick to your hands, about 5 minutes.

- Whisk together flour, baking powder, sugar, and salt in a large bowl. Add milk and water, stirring with a fork until a sticky dough forms. Transfer to a floured work surface and knead a few times with floured hands just until smooth (do not overwork or bread will be tough). - In the bowl of a food processor, combine the flour, baking powder, 1/2 teaspoon salt, and chives and process for 5 seconds to combine. Add the shortening and process until well combined, about 15 seconds. Add the milk and 2 tablespoons water. Process to bring the dough together.
- Remove from the processor and knead 1 minute to form a ball. Cover with plastic wrap and set aside for 30 minutes.
- Heat a cast-iron skillet until very hot. Divide the dough into 3 pieces and form each into a ball. On a lightly floured surface, roll out the dough in a 6 1/2-inch-diameter circle to less than 1/16 inch thick. Prick the dough with a fork, brush with the olive oil, and sprinkle with the kosher salt. Transfer the round of dough, with the oiled side down, to the hot skillet and reduce the heat to medium. Cook about 1 to 2 minutes on each side, until the surface is covered with golden to dark brown speckles. Remove the bread from the skillet and transfer to a baking sheet in a warm oven.
- Repeat the rolling and cooking process with the remaining dough. Cut the bread into wedges with a pizza wheel or sharp knife and serve.
