When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon Asian chili sauce (such as sambal oelek)
2 teaspoons honey
Kosher salt
Vegetable oil, for frying
2 large eggs
3/4 cup all-purpose flour
1/2 cup cornstarch
Kosher salt and freshly ground pepper
1 1/4 pounds small shrimp, peeled and deveined
Bibb lettuce leaves, for serving
Thinly sliced scallions, for garnish

Steps:

  • Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.
  • Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.
  • Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.
  • Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.

1lb large shrimp, peeled and deveined
1 tbsp green seasoning
1/2 tsp black pepper
1/2 tsp paprika
pinch salt
1 tbsp olive oil
1 cup cornstarch
2 large eggs, beaten + 3 tbsp water
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp curry powder
1 tsp paprika
1/2 tsp cayenne pepper (optional)
1/2 cup plain panko breadcrumbs (optional)
6 tbsp guava paste
1 cup pineapple juice
1 red chili pepper or 1/2 habanero pepper
2 cloves garlic
3 tbsp rice wine vinegar
1/2 tsp salt
2 sprigs scallions
1 tbsp cornstarch + 1 tbsp cold water

Steps:

  • Make the guava sauce. Add all ingredients to a food processor or blender and pulse until smooth. Transfer to a sauce pot, boil for about 10 minutes until sauce reduces by 1/4. Remove froth with a spoon. Mix cornstarch plus 1 tbsp cold water, stir into sauce until it thickens. Remove from heat and allow to cool.
  • Season shrimp with green seasoning, black pepper, paprika, salt, and olive oil. Set aside.
  • Heat oil for frying.
  • Arrange your dredging station. Set up three bowls. In the first bowl add 1 cup cornstarch. In the second bowl add egg plus water, beat. In the third bowl add flour and spices, mix thoroughly. Add panko if using.
  • One at a time, dip shrimp in cornstarch, then egg mixture, then into seasoned flour. Batter all shrimp. Fry until golden brown just a couple of minutes.
  • Best served hot.

12 jumbo shrimp, peeled, deveined and butterflied
1 cup coconut flakes
1 cup panko breadcrumbs
3 eggs, Beaten
1 cup flour
3 cups frying oil
1 cup guava, concentrate
1/2 cup rice vinegar or 1/2 cup white vinegar
1/2 cup pineapple juice
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Pre-heat oil to 350 degrees in medium frying pan.
  • In a medium, mixing bowl, combine coconut and panko.
  • Dredge shrimp in flour, then in the egg mixture, then in the panko and coconut mix, pressing down firmly to ensure proper breading.
  • Fry shrimp until golden brown being sure not to burn. (The coconut contains a high sugar content, which may burn quickly.)
  • In a separate saucepan, combine sugar, vinegar, and pineapple juice. Bring to a boil and allow sugar to incorporate into the sauce.
  • Add guava concentrate and allow to boil.
  • Mix the cornstarch and water to make a slurry. (You may use cornstarch slurry to thicken the sauce to the correct consistency. The sauce should be able to coat a spoon.)
  • You may use the sauce as a dip or simply pour the sauce over the shrimp when ready to serve.

  • Preheat grill for medium heat.

Steps:

  • Cut the guava paste into cubes.

1 cup mayonnaise
1/4 cup honey
3 -4 teaspoons hot sauce, to taste (Sriracha works great)
3 teaspoons cajun seasoning, to taste
3 teaspoons salt, divided
peanut oil or vegetable oil, for frying
4 large eggs
1 1/2 cups quick-mixing flour (such as Wondra or Wondra® Instant Flour Substitute)
1 cup cornstarch
2 teaspoons salt (to taste)
1 1/2 teaspoons ground black pepper
2 lbs large raw shrimp, shells and tails removed

Steps:

  • To make the sauce, in a large bowl whisk together the mayonnaise, honey, hot sauce, Cajun seasoning. If your Cajun seasoning has no salt, add salt to taste; set aside.
  • In a large cast-iron skillet or other heavy skillet over medium, heat 3/4 inch of oil to 350 degrees.
  • Meanwhile, in a shallow bowl, whisk the eggs. In a second shallow bowl, whisk together the flour, cornstarch, 2 teaspoons of salt and the black pepper.
  • Working in batches, dip the shrimp first into the beaten eggs, then in the flour mixture to coat well.
  • Fry the shrimp in the oil until golden, about 1 minute per side, adjusting the heat as necessary to maintain the oil temperature. Use a slotted spoon to transfer the fried shrimp to a plate lined with paper towels. Serve with the sauce for dipping.

1 1/2 lbs large shrimp, peeled and deveined
1 1/4 cups buttermilk baking mix
1/2 cup dark beer, more if necessary
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1 egg
1/4 cup tartar sauce
toasted coconut, to garnish

Steps:

  • Heat 1-1/2 inches oil in a heavy deep skillet over medium-high heat to 350ºF.
  • Lightly coat shrimp with 1/4 cup baking mix and crushed red pepper.
  • Combine 1 cup baking mix and remaining ingredients, except tartar sauce, in a bowl.
  • Beat with a hand beater until batter is smooth and thin. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until of desired consistency.).
  • Dip shrimp into batter, letting excess drip into bowl.
  • Place shrimp in hot oil and fry about 2 minutes on each side, until golden brown.
  • Sprinkle with coconut and serve hot with tartar sauce.
