ALMOST-FAMOUS SPICY FRIED SHRIMP
When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

- Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.
- Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.
- Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.
- Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.
FRIED SHRIMP + SPICY GUAVA SAUCE

Steps:
- Make the guava sauce. Add all ingredients to a food processor or blender and pulse until smooth. Transfer to a sauce pot, boil for about 10 minutes until sauce reduces by 1/4. Remove froth with a spoon. Mix cornstarch plus 1 tbsp cold water, stir into sauce until it thickens. Remove from heat and allow to cool.
- Season shrimp with green seasoning, black pepper, paprika, salt, and olive oil. Set aside.
- Heat oil for frying.
- Arrange your dredging station. Set up three bowls. In the first bowl add 1 cup cornstarch. In the second bowl add egg plus water, beat. In the third bowl add flour and spices, mix thoroughly. Add panko if using.
- One at a time, dip shrimp in cornstarch, then egg mixture, then into seasoned flour. Batter all shrimp. Fry until golden brown just a couple of minutes.
- Best served hot.
COCONUT SHRIMP WITH GUAVA SWEET AND SOUR SAUCE

- Pre-heat oil to 350 degrees in medium frying pan.
- In a medium, mixing bowl, combine coconut and panko.
- Dredge shrimp in flour, then in the egg mixture, then in the panko and coconut mix, pressing down firmly to ensure proper breading.
- Fry shrimp until golden brown being sure not to burn. (The coconut contains a high sugar content, which may burn quickly.)
- In a separate saucepan, combine sugar, vinegar, and pineapple juice. Bring to a boil and allow sugar to incorporate into the sauce.
- Add guava concentrate and allow to boil.
- Mix the cornstarch and water to make a slurry. (You may use cornstarch slurry to thicken the sauce to the correct consistency. The sauce should be able to coat a spoon.)
- You may use the sauce as a dip or simply pour the sauce over the shrimp when ready to serve.

SPICY GRILLED SHRIMP

- Preheat grill for medium heat.
- In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
- Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.

- To make the sauce, in a large bowl whisk together the mayonnaise, honey, hot sauce, Cajun seasoning. If your Cajun seasoning has no salt, add salt to taste; set aside.

- Heat 1-1/2 inches oil in a heavy deep skillet over medium-high heat to 350ºF.
- Lightly coat shrimp with 1/4 cup baking mix and crushed red pepper.
- Combine 1 cup baking mix and remaining ingredients, except tartar sauce, in a bowl.
- Beat with a hand beater until batter is smooth and thin. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until of desired consistency.).
- Dip shrimp into batter, letting excess drip into bowl.
- Place shrimp in hot oil and fry about 2 minutes on each side, until golden brown.
- Sprinkle with coconut and serve hot with tartar sauce.
