1 lb center-cut skinless boneless salt cod, rinsed well
1 qt vegetable oil
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons olive oil
1/2 cup plus 3 tablespoons water
1/4 cup finely chopped fresh flat-leaf parsley
1 teaspoon coarse sea salt
Accompaniment: lemon wedges
Special Equipment
a deep-fat thermometer

Steps:

  • Soak cod in a large bowl with water to cover by 2 inches, chilled, changing water 3 times a day, 1 to 3 days (see cooks' note, below). Chill cod until ready to use.
  • Heat vegetable oil in a 5- to 6-quart heavy pot over moderate heat until it registers 385 to 390°F on thermometer.
  • While oil is heating, whisk together flour, salt, olive oil, water, and parsley in a bowl. Drain cod and pat dry, then cut into 3- by 1/2-inch strips. Working in batches of 4, coat strips in batter, then transfer to oil with tongs and fry, turning, until golden, 1 1/2 to 2 minutes. Transfer to a paper-towel-lined baking sheet to drain. (Return oil to 385 to 390°F between batches.)
  • Sprinkle with sea salt and serve immediately.

2 cod fish fillets
3/4 cup all-purpose flour
2 teaspoons sea salt
1 teaspoon cracked pepper
1 egg
1 tablespoon water
Crisco, about halfway up your pan (for frying, I used cast iron)

Steps:

  • Cut each fillet into 3 pieces and dry on paper towels.
  • Heat the fat until the end of a wooden spoon bubbles, about 375*.
  • Mix flour with salt and pepper in a flat dish.
  • Mix egg and water in a bowl.
  • Dredge cod pieces on all sides and shake off excess flour.
  • Dip dredged pieces into egg wash and shake off excess egg.
  • Dip into flour once again and shake off excess flour.
  • Fry in hot fat until the pieces are nicely browned.Don't crowd the pan. Depending on the thickness of the fish it could take 2 to 5 minutes. Try to turn no more than once.
  • Drain on paper towels and serve with a lemon wedge, Recipe #406770 and fries.

If your familiar to Baccala, this is a simple and tasty way to serve it! If your not familiar with Baccala it is salted cod and needs to be soaked in water for two days to remove the salt and to reconstitute the fish. With this recipe I have estimated the oil for frying,flour for dredging and the serving size which depends on the size of the fish how big the pieces are cut .

1 -1 1/2 lb dried salt cod fish, "baccala"-soaked
1/2 cup olive oil, as needed (for frying)
1 cup all-purpose flour
1 bunch fresh parsley, whole springs touch stems removed
4 -10 lemon wedges

Steps:

  • Cut soaked, skinless and boneless Cod into into bite size pieces so they can cook all together quickly in the pan.
  • Heat oil in pan,use 1/2 cup or try for 1/2inch at least in pan (depending of size of pan being used).
  • While cod is moist but not dripping wet, dredge well in flour.
  • Shake off excess and don't worry if patches of flour look to thick.
  • With hot oil, fry cold without crowding the pan and turn pieces when lightly golden.
  • Drain well on rack or paper towels.
  • Serve almost immediately or at room temperature.
  • Fry parsley by putting into hot oil for a few seconds or till it becomes crisp.
  • Place fish on serving platter with parsley and lemon wedges.

1/4 teaspoon salt
1 large russet potato, about 12 ounces, peeled and cubed (about 3/4 cup)
1 cup shredded salt cod (about 6 ounces), recipe follows
1/4 cup finely chopped green onions
2 tablespoons finely chopped parsley leaves
2 large eggs
1/8 teaspoon cayenne
Vegetable oil, for frying
1/3 cup all-purpose flour
3 1/4 teaspoons Essence or Creole seasoning, recipe follows
3 tablespoons milk
2/3 cup fine dry bread crumbs
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 pound dried salt cod, cut into 4-inch pieces

Steps:

  • In a small saucepan, bring the potato and enough water to cover to a boil. Reduce the heat and cook just until fork tender, about 12 minutes. Drain and transfer to a large bowl to cool for 10 minutes.
  • With the back of a heavy fork, mash the potatoes until smooth but still slightly lumpy. Add the salt cod, green onions, parsley, 1 egg, the salt, and cayenne and mix until smooth.
  • In a large, deep heavy pot or electric deep fryer, heat enough oil to come halfway up the sides to 350 degrees F.
  • In a small bowl, combine the flour and 1 teaspoon of the Essence. In another bowl, beat together the remaining egg, the milk, and 1/4 teaspoon of the Essence, and in a third bowl, combine the breadcrumbs with the remaining 2 teaspoons Essence.
  • Divide the cod mixture into 24 and form into balls, about 1 1/4-inches in diameter and 1 heaping tablespoon each.
  • One at a time, dip the cod balls in the flour and roll to coat evenly on all sides. Shake to remove any excess flour, dip in the egg wash, and then roll in the seasoned breadcrumbs. Place on a baking sheet.
  • In batches, gently add the balls to the oil and cook until golden brown on all sides, about 2 1/2 minutes. Remove with a slotted spoon and drain on paper towels.
  • Serve immediately.

  • In a large glass or ceramic dish, lay the salt cod in a single layer. Add enough water to cover the fish by 1-inch, cover the pan tightly with plastic wrap, and refrigerate for 6 hours.
  • Drain the fish in a colander and rinse under cold running water. Place the fish on a work surface covered with paper towels and press each piece firmly with your hands. Pat the fish dry with paper towels and return to the soaking dish. Cover with fresh water, soaking and draining a total of three more times (for a total of 4 times in all).
  • Place the rinsed and dried salt cod in an airtight container until ready to use, and refrigerate for up to 1 week.

1 pound boneless salt cod, soaked and cooked (page 245)
2 tablespoons extra virgin olive oil
3 garlic cloves, peeled and lightly smashed
3 anchovy fillets, or to taste
One 28-ounce can whole plum tomatoes, drained and chopped
Salt and black pepper to taste
2 tablespoons drained capers
1/2 cup pitted green olives
Hot red pepper flakes to taste
Chopped fresh parsley leaves for garnish

Steps:

  • Drain the salt cod and pick out any stray bones or pieces of skin, then cut it into chunks. Combine the oil and garlic in a large skillet over medium heat. Add the anchovies and cook, stirring occasionally, until the garlic is lightly golden and the anchovies broken up. Raise the heat to medium high and add the tomatoes along with a little salt and some pepper. Cook for a few minutes, stirring occasionally, until the mixture gets saucy, about 15 minutes.
  • Add the capers, olives, pepper flakes, and cod. Cook for about 10 minutes, stirring occasionally and gently, until the cod is hot. Taste and adjust the seasoning, then garnish and serve.
  • Fried Salt Cod in Tomato Sauce
  • More work, but better: After poaching the salt cod, cut it into chunks. Drain well on paper towels, then dredge in flour and fry on both sides in at least 1/4 inch of hot olive oil. Add to the tomato sauce as directed.
