ROCK SHRIMP WITH SPICY CREAMY SAUCE

Vegetable oil
1/2 cup real mayonnaise
1/4 cup plus 1 tablespoon heavy whipping cream
2 teaspoons Szechuan seasoning
2 cups tempura batter mix (recommended: Hime)
1 1/2 cups ice water
1 pound rock shrimp*
Endives, for garnish
Crispy onions (recommended: French's Original), for garnish

Steps:

  • Add enough oil in skillet to come 2 inches up the side of the pan. Heat oil to 375 degrees F.
  • In a small mixing bowl, whisk together mayonnaise, heavy cream and Szechuan seasoning.
  • Once oil is heated, in a large bowl combine tempura mix and ice water. Mixture will be thick and lumpy. Working in batches, dip rock shrimp in batter (shaking off any excess) and add to oil. Fry for 2 to 4 minutes or until golden brown. Remove shrimp from oil and drain with a slotted spoon. Make sure oil temperature does not fall below 350 degrees F. Skim oil between batches.
  • In a large bowl toss cooked shrimp in sauce until lightly coated. Serve warm on endive leaves. Top with french-fried onions.

This recipe is a skinnier version of Nobu's famous fried rock shrimp appetizer that's typically fried and doused in a creamy spicy mayo-based sauce. My version is baked and uses Greek yogurt, sriracha and sesame oil to create a healthier, yet still drool-worthy copycat!

1 lb. frozen rock shrimp (I used pre-coated "Boom Boom Shrimp" by Royal Asia, found at Whole Foods)
1 tsp. paprika
1 tsp. kosher salt
1 tsp. pepper
cooking spray
½ cup greek yogurt (I used 2%)
2 tsp. sriracha sauce (or chili garlic sauce)
1 tbsp. sesame oil
¼ lemon (juice only)
1 egg yolk
¾ cup iced water
½ cup all purpose or gluten free all purpose flour
1 cup panko bread crumbs

Steps:

  • Preheat oven to 400 degrees.
  • If making tempura batter, whisk all ingredients together well.
  • For tempura shrimp: In a bowl, place dethawed rock shrimp and toss with paprika, salt and pepper. Then place shrimp into tempura batter and toss. In another bowl, place panko bread crumbs. With tongs, take a few battered rock shrimp and place into the crumbs to coat. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.For pre-coated shrimp: In a bowl, spray frozen shrimp well with cooking spray. Toss coated rock shrimp with paprika, salt and pepper. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.
  • Meanwhile, in a large bowl mix together ingredients for the creamy spicy sauce, whisking in the sesame oil. Set aside.
  • After 10 minutes in the oven, remove sheet pan and using tongs, flip over each shrimp. Bake for another 10 minutes.
  • After another 10 minutes in the oven, remove shrimp from pan and gently place into the large bowl with the creamy sauce. Toss carefully to coat. Top with green onions and serve immediately!

1 teaspoon rice vinegar

When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

  • Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.
  • Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.
  • Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.

2 pounds small, large or jumbo shrimp, peeled, deveined, tails intact
1 cup milk
2 large eggs
1 cup cracker meal

Steps:

  • Heat 3 inches of oil to 365 degrees in a Dutch oven.
  • Place the shrimp in a medium bowl. Mix the milk and eggs in a glass measure with a fork until blended and pour over the shrimp. Toss the shrimp until coated and drain in a colander.
  • Roll the shrimp in the cracker meal and shake off excess.
  • Fry the shrimp till golden, turning as necessary, 1 to 2 minutes. Remove with a strainer or Chinese spider (also called a skimmer) and shake off the excess oil. Serve with tartar sauce, if desired.

Once the shrimp are mixed with onion and celery and mayonnaise, taste the shrimp salad as a whole to decide if it could stand even another pinch of salt or grind of pepper. But use unsalted butter on the bun when griddling, to get the perfect play between the sweet and the saline.

1/2 cup kosher salt, plus more for seasoning
1 1/2 pounds peeled raw rock shrimp
1/2 of 1 small white onion, finely minced
1 small celery rib from inner core, finely minced
5 tablespoons mayonnaise (Hellmann's or Best Foods only!)
Freshly ground black pepper
2 large, bushy branches of dill, stems removed, feathery leaves chopped
1/2 of 1 lemon
4 tablespoons unsalted butter, at room temperature
4 hot dog buns, preferably potato
2 large hard-boiled eggs, peeled then sliced into thin rounds using an egg slicer
1 small red or green Belgian endive, cut crosswise into thin coins

Steps:

  • In a stockpot, bring 2 1/2 quarts of water to a rolling boil, and add the 1/2 cup salt. In a large bowl, prepare an ice bath with 3 to 4 quarts of cold water and about a quart of ice.
  • Season the shrimp all over with kosher salt, and turn off the heat under the boiling water. Wait 1 full minute before dropping the shrimp into the hot water. Let shrimp cook just until they lose their translucence, 1 to 2 minutes. Strain, then plunge into the ice bath just until cooled, no more than 2 minutes. Pat shrimp dry, and transfer to a cutting board. Roughly chop the shrimp by making a few cuts through the pile with your chef's knife until shrimp is cut into medium, bite-size pieces.
  • Transfer chopped shrimp to a bowl, and stir in the onion, celery and 3 tablespoons mayonnaise. Season to taste with kosher salt, pepper, chopped dill and a few drops of lemon juice. Set aside.
  • Heat a large cast-iron skillet over medium. Evenly butter the interior and exterior of each hot dog bun. Working in batches, toast the buns inside and out in the skillet until golden brown. (We love as much buttery griddled surface area as possible.)
  • To assemble, remove the buns from the skillet, and slather the interiors with the remaining mayonnaise. Evenly distribute the shrimp salad among the buns. Top each roll with alternating slices of hard-boiled egg and endive, then sprinkle each roll with a little kosher salt, a short grind of fresh black pepper and a few drops of lemon juice.
