½ cup onion, diced
1 tablespoon garlic, minced
½ cup carrot, diced
½ cup bell pepper, diced
½ cup ham, diced
3 eggs, beaten
3 cups brown rice, cooked
2 tablespoons soy sauce
pepper, to taste
1 cup pineapple, diced

Steps:

  • In a wok or deep skillet, heat up the oil over high heat and cook onion, garlic, carrots, bell peppers, and ham until onions are translucent and ham is slightly browned. Push all of the cooked ham and vegetables to the side of the pan.
  • Beat the eggs and pour into the cleared half of the pan. Scramble the eggs and mix with the rest of the vegetables.
  • Add rice, soy sauce, pepper, and pineapple. Mix well and let the rice cook until slightly crispy.
  • Enjoy!

1 cup cubed fully cooked ham
3/4 cup chopped onion
1 garlic clove, minced
2 tablespoons vegetable oil
2 cups chicken broth
1 can (14-1/2 ounces) stewed tomatoes
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon each cayenne pepper, chili powder and pepper
1 bay leaf
1 cup uncooked long grain rice
1 pound uncooked medium shrimp, peeled and deveined

Steps:

  • In a large skillet, cook the ham, onion and garlic in oil until onion is tender. Stir in the broth, tomatoes, parsley and seasonings. Bring to a boil. Stir in rice. Reduce heat; cover and simmer for 15 minutes. Add shrimp; cook 5 minutes longer or until the shrimp turn pink and rice is tender. Discard bay leaf.

Thai fried rice with shrimp (khao pad goong ข้าวผัดกุ้ง), is a very typical Thai street food dish, available at all stir fry restaurants. Though you can order the dish with your choice of meat, shrimp is the most popular option. What really makes Thai fried rice unique, is that it's served with a squeeze of lime on top to give it a nice sour tinge, and always accompanied by prik nam pla (พริกน้ำปลา), the Thai condiment of chilies and fish sauce. 1.5 cups of cooked Jasmine rice cooled (or day old rice works well too) - Or just estimate about 1 normal bowl full
About 5 - 10 shrimp, head peeled, but tail on
¼ of a big white onion (or ½ of a very small white onion, like I used)
1 leaf of Chinese broccoli (or any crisp green leafy vegetable)
2 cloves garlic
1 egg
½ tablespoon soy sauce
½ tablespoon oyster sauce
Pinch of sugar (optional)
1 tablespoon of oil for frying
5 Thai chilies
3 tablespoons of fish sauce
½ of a lime

Steps:

  • If you're using whole fresh shrimp like I did, first pinch off the head, and peel the outer shell of the shrimp, leaving only the tail on (that's Thai style). You can also devein them if you'd like, but for small shrimp, to me it doesn't really matter.
  • Peel 2 cloves of garlic, and then just finely mince them
  • Slice ¼ of a sweet white onion into medium sized strips
  • Finely dice about 3 - 4 green onions
  • Take just 1 leaf of Chinese broccoli (kai-lan), slice it in half first along the spine, and then slice it into 1 centimeter sized strips
  • Turn on your stove to medium high, heat up your wok (or frying pan), and add about 1 tablespoon of oil
  • Once your oil is hot, add the garlic first, and stir fry continuously for about 15 seconds or so, until it gets nice and fragrant
  • Next, toss in your shrimp, and fry for about 30 seconds - your shrimp should start to turn pink and feel more firm
  • Add in a little less than ½ of your rice first. This is going to soak up all those delicious shrimp juices and oils and keep your rice nice and dry. Stir fry for about 10 more seconds - This is a little known trick to make good rice, so it remains nice and dry
  • Scoot all your rice to one side of the pan, and then crack in the egg into the empty side
  • Whirl the egg up, let it cook for a few seconds, and then start to mix it up with the rice and shrimp
  • Keep stir frying for about 20 seconds until the egg is fully cooked, and then add in the rest of your rice, and give it a quick stir
  • Add ½ tablespoon of soy sauce, ½ tablespoon of oyster sauce, just a pinch of sugar (optional), and continue stir frying your rice, making sure all the sauce get mixed in
  • Then add your chopped Chinese broccoli and onions, and stir fry for another 30 seconds until the vegetables wilt, but they can still be crisp and not fully cooked
  • Lastly, toss in your green onions, stir it a few more seconds, and it's ready
  • Immediately dish your fried rice onto a plate
  • Slice off a wedge of lime, and serve it on the plate next to the rice
  • For the final touch, I like to sprinkle some freshly ground black pepper on top to give some extra flavor
  • Add 3 tablespoons of fish sauce to a small bowl
  • Slice about 5 Thai chilies (you can add more or less, up to you), and add them to the fish sauce
  • Finally, I like it with a little squeeze of about ½ of a lime - but this is optional - and at many Thai restaurants it's only fish sauce and chilies
  • That's is, give it a stir, and set it aside

2 Tbs sesame oil
1 small white onion (chopped)
1 cup frozen peas and carrots (thawed)
2-3 Tablespoons soy sauce (more or less to taste)
3 eggs (lightly beaten)
2 Tbsp chopped green onions (optional)

Steps:

  • Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion, chopped ham, peas and carrots and fry until tender.
  • Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  • Add the rice to the veggie, ham and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

Using proper technique and a bit of science makes it possible to make a delicious fluffy Shrimp Fried Rice that's better than Chinese take-out. Here are all my secrets for making the best fried rice.

150 grams small shrimp ((peeled and deveined))
1 teaspoon shaoxing wine
360 grams cooked rice ((use leftover rice))
1 tablespoon vegetable oil
1 large egg
2 tablespoons XO sauce
2 scallions ((chopped))
Salt ((to taste))

Steps:

  • Toss the shrimp with the Shaoxing wine and a pinch of salt to marinate while you prepare the other ingredients.
  • Use your hands to crumble the rice, so there are no clumps
  • Heat a large frying pan over high heat until hot. Add the oil and the marinated shrimp and spread them out in a single layer. Stir-fry the shrimp until they're cooked through, and then remove them from the pan, leaving behind as much oil as possible.
  • Break the egg into the pan and scramble for a few seconds. Add the rice before the egg is fully cooked.
  • Toss and stir the egg and rice together until the rice is fluffy (about 1 minute).
  • Add the XO sauce and toss together until the rice is uniform in color. Taste the rice and season with salt if needed. Continue tossing and stirring until the rice is very fragrant.
  • Return the shrimp to the pan and add the scallions. Toss to distribute everything evenly, and the fried rice is done.

4 eggs, whole, beaten
1 tablespoon olive oil (to fry the beaten eggs)

1 cup mushroom, pre-cooked, chopped

3 eggs (beaten)

Steps:

  • Cook rice according to package directions. Heat vegetable or sesame oil in a wok or skillet over medium-high heat. Add onions to the hot oil and stir until clear and light brown. Stir in garlic.
  • When garlic is lightly browned, add ham and cook for 3-4 minutes.

cold, cooked long grain rice
vegetable oil
1 -2 beaten egg
raw shrimp, cut in pieces (optional)
leftover ham, diced (or any leftover meat, poultry or seafood)
dry sherry
light soy sauce (optional)
frozen peas, defrosted
sliced yellow onions or Spanish onion
salt
white pepper (optional)

Steps:

  • The rice should be smoothed out to get rid of any lumps.
  • Day old, cold rice works best.
  • If using eggs (recommended), lightly beat them with a pinch of salt.
  • Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
  • Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
  • After the eggs set up a little, lightly scramble them so you have medium small pieces.
  • Remove eggs to a bowl.
  • Wipe out wok.
  • If adding raw shrimp, heat a little more oil and stir fry them to just cook.
  • Remove to a bowl.
  • Wipe out wok again.
  • Heat a little more oil.
  • Add the onions& stir fry until they start to darken.
  • Stir in the rice, breaking up any lumps you missed.
  • Drizzle a little dry sherry down the sides of the wok.
  • (The surface of the wok should be slick with oil. If too dry looking, drizzle a little more oil down the sides of the wok).
  • If you want the rice to look brown, drizzle in a little light soy sauce.
  • Stir in all of the other ingredients and season to taste with salt and white pepper.
  • Continue to stir and cook until heated through.

2 tablespoons sliced green onion
2 tablespoons diced carrot

Steps:

  • Whisk eggs with pinch of salt until blended. Heat 1 tablespoon oil in wok or heavy medium skillet over eggs into skillet. Using spatula, lift eggs as they cook, letting uncooked part run underneath until set. Transfer to cutting board. Cut eggs into shreds.
  • Combine shrimp, wine and cornstarch in small bowl. Heat 3 tablespoons oil in same wok over medium-high heat. Add shrimp and stir-fry until just pink, about 3 minutes. Add ham and vegetables and stir-fry 1 minute. Add shredded eggs, rice and 1 tablespoon soy sauce and stir-fry until heated through. Season with pepper. Serve, passing soy sauce separately.

spicy ketchup sauce ingredients: (sauce - optional)
2 Tbsp ketchup
1 Tbsp sriracha chili sauce
fried rice ingredients:
1 small handful dried shrimp, (optional)
2 Tbsp peanut oil
3 eggs, lightly beaten
1 Tbsp peeled and grated ginger
1 medium carrot, cut in 1/4-inch dice
4 oz cooked chinese pork ( char siu) or ham, cut in 1/4-inch dice
3 fresh shiitake mushrooms, stemmed and diced
1 c frozen peas
3 c cooked jasmine rice, a day old
1 - 2 Tbsp light soy sauce
sea salt and freshly ground white pepper to taste
1 tsp toasted sesame oil
1 - 2 green onions, sliced on a diagonal, for garnish

Steps:

  • 1. If desired, in a small bowl, soak the dried shrimp in hot water for 20 minutes, then drain and set aside.
  • 2. For the spicy ketchup sauce, if using: In a small bowl, combine the ketchup and chili sauce and set aside.
  • 3. For the fried rice: Heat a wok over high heat and add 1 tablespoon peanut oil. Add the eggs and scramble, then set aside on a plate.
  • 4. Add the remaining 1 tablespoon peanut oil to the wok.
  • 5. Add the ginger and stir-fry for less than 1 minute.
  • 6. Then add the carrots and stir-fry for 1 minute more.
  • 7. Add the pork, the soaked dried shrimp if using, and mushrooms and cook for 2 minutes.
  • 8. Then add the peas and cooked rice and toss together.
  • 9. Add the cooked egg back into the wok. pepper. Garnish with green onions and serve immediately.
  • 10. Season the mixture with the light soy sauce, salt and pepper.
  • 11. At the very end add the sesame oil and spicy ketchup sauce if using.
  • 12. Check the seasoning and adjust to taste with salt and pepper.
  • 13. Garnish with green onions and serve immediately.
  • 14. Note: For my picky eater,I would omit the dried shrimp and use fresh shrimp.
