FRIED RICE RESTAURANT STYLE
A quick fried rice like you get at your favorite Chinese restaurant. A couple of eggs, baby carrots, peas and soy sauce is all you need.

- In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
- Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

FRIED RICE WITH EGGS AND PEAS (MEAT IS OPTIONAL)

- Following the directions for the rice you're using, cook it in your homemade broth, or part broth/part water. While it simmers, you can get all the other ingredients prepared.
- Once the rice has cooked and all the broth has been absorbed, get your frying pan hot (that link has my fav pan that I use, we have the 16") and add butter and sesame oil. Add optional veggies and cook until soft. Add green onions and peas and cook 'til hot, just a few seconds or so. Add rice and garlic powder, then continue stirring to get the flavors all mixed together and keep scraping the pan as it fries up and makes more yummy crispy parts of the rice. Add in some sea salt and pepper, keeping in mind that the Tamari will also add some saltiness so not too much at first, and continue to stir. Add Tamari and continue turning the rice over to make sure all of it is getting blended well. Add meat if desired.
- Now push all of your rice to the sides of the pan, creating a hole in the middle and crack your eggs into the hole you just made. Stir the eggs (only) at this point and allow them to cook through and then stir the eggs into the rice mixture blending it all well. Add more sea salt and pepper if needed. Enjoy!

- Melt 1 tablespoon butter in skillet or wok.
- Scramble eggs in butter, breaking up the cooked eggs into small pieces.
- Set aside.
- Melt 1 tablespoon butter in skillet or wok.
- Saute onions and/or green peppers in butter for 3 minutes.
- Combine eggs, onions, rice, and meat.
- Stir in soy sauce until color of rice is uniform.
- Stir in peas.
- Heat only until warm.

FRIED RICE WITH PEAS AND CARROTS

- In a pot with a tight fitting lid, add the rice and 4 cups cold water. Put in the ginger and salt. Bring to a boil, reduce to a simmer, cover, and cook for 15 to 20 minutes. Remove from the heat and set aside for about 10 minutes.
- Heat a wok or large nonstick skillet over medium-high heat. When it is hot, pour in the sesame oil. Add the scallions, ginger, and garlic; stir-fry for 1 minute until fragrant. Stir in the peas and carrots and cook for about 2 minutes. Pour in the eggs and stir-fry until they are cooked, about 2 to 3 minutes. Remove the ginger from the rice and add the rice to the wok; stir everything together and break up any clumps of rice. Add the soy and hoisin and stir some more. Taste for seasoning and add some salt if needed. Stir in the cilantro leaves and serve.
KOREAN " OMA" FRIED RICE WITH EGG TOPPING
This is the rice my mom would make with leftovers. You can have any type of meat and vegetables you want inside but the special touch is the egg that is draped over the rice and specially seasoned. The measurements are all approximate. Back in the day we would use reserved bacon fat instead of or along with the sesame seed oil because it would add a lot of flavor but this option of course is not very healthy.

- Rice:.
- In pan, add oil, vegetables, meat, rice and any other additional leftover ingredients you choose. Cook for about 5-7 minutes on medium-high heat stirring and covered the last 3 minutes on medium-low heat.
- Add soy sauce at the end to preserve taste and benefits of soy sauce and remove from heat. Mound it on a plate and place to the side.
- Egg Topping:.
- Place vegetable oil in a small frying pan and spread around well so that it covers the entire pan.
- On low heat slowly put beaten eggs in pan. Cook like you would an omelet without folding (nice and happy, flat eggy) Make sure it is thoroughly cooked.
- When egg is cooked flip the egg onto the fried rice and drizzle on the sesame oil. Sesame oil has more healthy benefits when it's not cooked.
- Add the following the sesame seeds, green onions plus if you choose, crumbled roasted seaweed, pinch of red pepper flakes.
- Salt and pepper to taste and eat up while hot!
- My dad and brother would of course cover this all with ketchup if it didn't have the kimchee while my mom would use her hot pepper paste. I just liked mine plain.
- =P.
- You can use the egg topping method for the entire plate of rice or make individual egg toppings for each person.

- Put the rice in a saucepan with 600ml water. Bring to boil, cover, then simmer for 10 mins or until almost all the water has gone. Leave off the heat, covered, for 5 mins more.
- Heat the oil in wok or large frying pan. Add the garlic and chilli, then cook for 10 secs - making sure not to let it burn. Throw in the cooked rice, stir fry for 1 min, then push to the side of the pan. Pour the eggs into the empty side of the pan, then scramble them, stirring. Once just set, stir the peas and spring onions into the rice and egg, then cook for 2 mins until the peas are tender. Add the prawns and soy sauce, heat through, then serve with extra soy sauce on the side, if you like.

- In a large skillet, over medium heat, warm 1 tablespoon of oil. Whisk the eggs in a small bowl, then add them to the warm skillet and oil. Scramble the eggs until they are fluffy and cooked through. Do not overcook the eggs. Remove the eggs from the skillet, and set aside until later. Wipe out the skillet, and then return it to the stove-top.
- Over medium-high heat, add the remaining 1 tablespoon of oil to the skillet. Then, add all the veggies except the peas to the warm skillet and oil. Sauté the veggies for 6-7 minutes, until they are slightly soft. The carrots will still have a nice crunch to them. While the veggies cook, whisk together the sauce ingredients: soy, minced garlic, and ground ginger.
- Stir the rice into the skillet with the veggies. Then, add the scrambled eggs, frozen peas, and sauce. Continue to cook the fried rice until well combined and heated through, about 1-2 minutes.
- If you're making a meat-lover's fried rice, add the cooked and shredded meat to the rice with the eggs, peas, and sauce.
