Superior Sweet and Sour Whole Fish image

A restaurant-styled dish of Chinese sweet and sour whole fish is easy to do at home! This is prepared with a whole fish, coated and fried twice for a crispier skin. Plus, get this fantastic recipe for a superior sweet and sour sauce!

1 whole fish (750 g scaled and gutted)
½ tbsp potato starch
½ tbsp plain flour
1 tbsp minced garlic
1 onion
1 to mato
¼ cup green pepper
¼ cup red pepper
¼ cup pineapple cubes (canned or fresh)
5 tbsp tomato sauce or ketchup
2½ tbsp chilli sauce
2½ tbsp plum sauce
1 tbsp rice vinegar
5 tbsp water
1 tbsp lemon juice
3 tbsp sugar
Pinch of salt
2 tsp corn starch mixed in 1 tbsp water for thickening

Steps:

  • Wash the fish and pat dry with paper towels. Cut three diagonal slits into each side of the fish. Set aside.
  • Dice the coloured peppers into 2-cm cubes. Peel and slice the onion into thin wedges. Slice the tomato into 8 wedges.
  • Combine the sauce ingredients in a bowl.

1 1/2 kilo. whole maya-maya
salt and pepper to taste
cooking oil for frying
3 cloves garlic (minced)
1 pc onion (chopped)
20 grams ginger (sliced or julienne)
2 small red and green bell pepper (julienne)
10 grams yellow ginger (juiced)
1 cup vinegar
5 Tbsp. sugar
1 cup grated green papaya
Salt and pepper to taste
chopped scallion for garnishing (optional)

Steps:

  • Season fish with salt and pepper. Fry fish in oil and keep warm.
  • Saute garlic, onion and ginger. Stir for 2 minutes.
  • Add red and green bell pepper, yellow ginger juice, vinegar, sugar and grated green papaya.
  • Simmer for 5 minutes. Season with salt and pepper.
  • Arrange fish on an oval platter. Pour sauce over it. Garnish with scallion (optional). Serve hot.

GRILLED SNAPPER AND ASPARAGUS WITH RED PEPPER SAUCE



Grilled Snapper and Asparagus with Red Pepper Sauce image

3 tablespoons extra-virgin olive oil, plus more for the grill
1 large red bell pepper, seeded and chopped
2 cloves garlic, sliced
1 shallot, sliced
4 sprigs thyme
Kosher salt and freshly ground pepper
1 tablespoon sherry vinegar, plus more to taste
1/2 cup heavy cream
4 red snapper fillets (about 6 ounces each)
2 bunches asparagus, trimmed
2 tablespoons chopped fresh parsley

Steps:

  • Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the bell pepper, garlic, shallot, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook until the bell pepper is tender, 6 to 8 minutes. Stir in the vinegar, scraping up any browned bits from the bottom of the pan; cook until mostly evaporated, about 1 minute. Add the heavy cream and bring to a boil, then reduce to a simmer. Cook, stirring occasionally, until slightly thickened, about 2 minutes; discard the thyme. Transfer the mixture to a blender and puree; season with salt and pepper and add up to 1 more teaspoon vinegar, if needed.
  • Preheat a grill to high and generously oil the grates. Rub the fish with 1 tablespoon olive oil and season with salt and pepper. Rub the asparagus with the remaining 1 tablespoon olive oil and season with salt and pepper. Grill the fish skin-side down until the skin is marked and crisp, about 3 minutes. Carefully flip and grill until just cooked through, 1 to 2 more minutes. Grill the asparagus, turning occasionally, until charred in spots, 4 to 5 minutes.
  • Spoon the pepper sauce onto plates. Top with the fish and asparagus; sprinkle with the parsley.
