Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
½ teaspoon cayenne pepper
1 teaspoon dried thyme
¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

1 c red beans, cooked until creamy
1 c cooked rice
1/4 c finely chopped ham
2 green onions, chopped
4 Tbsp panko bread crumbs
1/4 tsp black pepper
1 pinch cajun seasoning
2 eggs
1/4 c milk
1 egg
1 c all purpose flour
1 c panko bread crumbs
1/4 tsp cajun seasoning
vegetable oil for deep frying
2 pinch salt
cajun dipping sauce
CAJUN DIPPING SAUCE
1 c mayonnaise
2 tsp sweet pickle relish
1 tsp finely minced onion (optional)
2 tsp fresh lemon juice
1 dash(es) louisiana hot sauce

Steps:

  • 1. Mix together red beans, cooked rice, green onions, ham, 4 tablespoons bread crumbs, eggs, black pepper and cajun seasoning to form a tight mixture.
  • 2. Form mixture into small hushpuppy size balls, pressing FIRMLY together to hold their shape. Chill for an hour or so or even overnight.
  • 3. Whisk milk and remaining egg to make an egg wash.
  • 4. Gently roll balls first in flour, then coat with egg wash and roll in remaining 1 cup bread crumbs to which cajun seasoning has been added.
  • 5. Heat vegetable oil to 360-375 degrees and fry until golden brown. Drain on paper towels, sprinkle with salt and serve with Cajun Dipping Sauce (prepared tartar sauce or Ranch dressing could also be used).
  • 6. For Cajun Dipping Sauce: Combine all ingredients and refrigerate until serving time.

1/2 cup long-grain white rice (Mahatma® brand if you can find it)
Peanut oil for frying
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
3 large eggs
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Cane syrup for serving

Steps:

  • Bring 1 cup of water and a pinch of salt to a boil in a small saucepan. Add the rice, stir once, reduce the heat to low, and cover the pan, cooking 18 to 20 minutes or until the grains of rice are plump and fluff apart with a fork. Turn the rice out onto a parchment paper--lined baking sheet and cool for 15 minutes, then transfer to a plastic container (don't pack it in). Cover with plastic wrap and poke a few holes in the top. Refrigerate for at least 8 hours or up to 2 days.
  • Pour enough peanut oil into a large pot to fill it to a 2 1/2- to 3-inch depth and bring to a temperature between 350°F and 360°F over medium heat. Line a plate with paper towels and set aside.
  • While the oil heats up, place the flour, baking powder, and cinnamon in a medium bowl. Using a stand mixer or a hand mixer, beat the eggs, sugar, and vanilla on high speed until foamy and tripled in volume, 1 1/2 to 2 minutes. Sift in half of the dry ingredients, add the salt, and mix on low speed until only a few dry streaks remain. Sift in the remaining dry ingredients and mix on low speed for a few turns, then add the rice and mix until the fritter batter just comes together into a loose, roughly textured ball.
  • Once your oil is hot, dip a teaspoon in the hot oil, then into the batter and scoop out a heaping teaspoonful. Hold the spoon close to the oil and let the batter roll off and into the oil. Repeat with the remaining batter; using a slotted spoon, turn and baste the fritters occasionally, allowing them to become golden brown on all sides. (Fry the fritters in two batches if your pot becomes overcrowded.) If the temperature of the oil dips below 350°F, increase the heat to medium-high. Once the fritters are golden brown, transfer them to the prepared plate to cool slightly. Serve on a small plate drizzled with lots of cane syrup.

1 red bell pepper, chopped (1 1/2 cups)

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over high. When it shimmers, add eggs and cook, undisturbed, 10 seconds. Stir with a spatula until just set, about 30 seconds; transfer to a plate.
  • Add 2 tablespoons oil and mushrooms to skillet; season with salt and pepper. Cook, stirring occasionally, until golden, 6 to 8 minutes. Add remaining 1 tablespoon oil, scallions, cilantro stems, and bell pepper; season with salt and pepper. Cook until soft, about 5 minutes more. Stir in hot sauce and rice. Spread mixture in a single layer and let cook, undisturbed, until underside crisps slightly, about 5 minutes.
  • Stir in beans and cook until warm, about 1 minute. Fold in eggs and cilantro leaves; season to taste. Serve with avocado, scallion greens, tortilla chips, and more hot sauce.

I recently came across a recipe similar to this in a magazine and couldn't resist changing it up to suit my taste. The panko bread crumbs give these a crispy crunch on the outside but when you take a bite...the surprise inside is creamy red beans and rice. I served them up country-style for the rice cooking contest at the 2011 Texas Rice Festival and they won a 1st place medal in the adult appetizer division! Serve with ranch dressing for dipping.

1 cup cooked rice
¼ cup finely chopped ham
2 green onions, chopped

¼ cup milk
1 cup all-purpose flour
1 cup panko bread crumbs
vegetable oil for deep frying

Steps:

  • Mix red beans, rice, ham, green onions, 4 tablespoons panko bread crumbs, 2 eggs, 1/4 teaspoon Cajun seasoning, and black pepper together in a bowl to form a tight mixture.
  • Form mixture into small, hush puppy-sized balls, pressing firmly together to hold their shape. Chill for 1 hour to overnight.
  • Whisk milk and remaining egg together in a small bowl to make an egg wash. Mix remaining bread crumbs and remaining Cajun seasoning together in a shallow dish. Roll chilled balls first in flour, coat with egg wash, and roll in bread crumb mixture.
  • Heat oil in a deep-fryer or large saucepan to 360 to 375 degrees F (182 to 190 degrees C).
  • Fry fritters in the hot oil until golden brown, about 10 minutes. Drain on paper towels and sprinkle with salt.

2 tablespoons olive oil
1 pound andouille sausage, sliced on the bias 1/2-inch-thick
1 green bell pepper, seeded and chopped
1 celery stalk, chopped
1/2 cup chopped white onion
Kosher salt and freshly ground black pepper
One 15.5-ounce can red kidney beans, liquid reserved
2 cloves garlic, grated on a rasp or minced
1 smoked ham hock
4 cups cooked white rice
Hot sauce, to taste

Steps:

  • Add the olive oil and sausage to a Dutch oven over medium heat. Cook, stirring, until the sausage releases some fat and begins to curl a bit on the edges, 3 to 5 minutes. Add the bell pepper, celery, onion, a pinch of salt and plenty of hefty grinds of black pepper (more than usual!). Cook, stirring, until the veggies are tender and the celery and onion are translucent and beginning to brown, 3 to 5 minutes. Stir in the beans and their liquid, garlic and ham hock.
  • Add 1 cup water and bring to a boil. Lower to a simmer, then cover and cook until the beans are very tender, about 30 minutes. Serve over white rice with a shake of hot sauce.

1 pound dried red beans (soaked overnight)
1 large yellow onion, diced
1 1/2 celery stalks, diced
4 garlic cloves, finely chopped or minced
2 bay leaves
3/4 cup olive oil
3 to 4 cups water
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 to 3 cups cooked rice

Steps:

  • Drain the beans, discarding the water, and set them aside in a pot.
  • Place the onion, celery, garlic and bay leaves in a medium mixing bowl. Drizzle the olive oil over them and let the mixture sit at room temperature for at least 30 minutes.
  • Pour the olive oil and vegetables over the beans and let sit at room temperature for 10 to 15 minutes. Add enough of the water to cover the beans and bring to a boil. Lower the heat to a simmer, add the salt and pepper, cover, and cook until the beans are tender, about 3 to 4 hours. Remove the bay leaves and serve the hot beans over the rice.

12 ounces pickled pork, cut into 1-inch pieces, recipe follows
3 bay leaves
1 teaspoon dried thyme
1 teaspoon hot sauce
1/2 teaspoon cayenne pepper
2 quarts water
1 pound red kidney beans, rinsed and picked of debris
3 cups water
1 1/2 tablespoons unsalted butter
2 cups long-grain rice
1/2 to 1 teaspoon kosher salt
2 cups water
1 cup apple cider vinegar
1/4 cup kosher salt
6 cloves garlic, peeled and crushed
2 tablespoons sugar
2 tablespoons yellow mustard seed
2 tablespoons hot sauce
1 tablespoon celery seed
1 bay leaf
1/4 teaspoon whole black peppercorns
8 ounces ice
1 1/2 pounds fresh boneless pork butt, cut into 2-inch cubes

Steps:

  • Place the vegetable oil in a 7-quart Dutch oven and set over medium-high heat. Add the onion, bell pepper, celery, salt and pepper to the pot. Cook, stirring frequently, until the onions and celery are semi-translucent and the bell peppers are tender, 6 to 8 minutes. Add the garlic and cook for 1 to 2 minutes, stirring constantly. Add the pickled pork, bay leaves, thyme, hot sauce, cayenne pepper, water and beans to the pot and increase the heat to high. Cook, stirring frequently until the mixture comes to a boil, approximately 6 to 8 minutes. Decrease the heat to maintain a simmer, cover and cook for 1 1/2 hours, stirring every 30 minutes. Uncover, increase the heat slightly to maintain a steady simmer and continue to cook for another 30 to 40 minutes or until the beans are tender and the sauce is thickened to your liking. If you prefer an even creamier texture, mash some of the beans with a potato masher.
  • Prepare rice during the last 30 minutes of cooking the beans. Place the water into an electric kettle and bring to a boil. While the water is coming to a boil place the butter into a 3-quart saucepan, set over medium heat. Once the butter begins to bubble, add the rice and stir to combine. Add the salt and cook for 2 to 3 minutes, stirring frequently. Carefully pour the water over the rice and stir to combine. Decrease the heat to the lowest setting, cover, and cook for 15 to 20 minutes. Serve the beans over the rice.
  • Combine all of the ingredients except the ice and the pork in a 2-quart non-reactive saucepan, set over high heat and bring to a boil. Reduce the heat and maintain a simmer for 3 minutes. Remove from the heat, add the ice and stir. Place the pork into a 1-gallon zip top bag and add the cooled pickling liquid. Remove as much air as possible; seal the bag and place in the refrigerator for at least 3 days, turning the bag occasionally. Use within 2 weeks or remove from the pork from the brine and freeze.

1 small onion, chopped
1/2 cup chopped green pepper
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (8 ounces) tomato sauce
1 cup uncooked instant rice
1 can (16 ounces) refried beans
Shredded cheddar cheese and chopped green onions, optional

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add taco seasoning and water. Simmer, uncovered, for 10 minutes. Add the kidney beans, tomatoes and tomato sauce., Bring to a boil. Reduce heat; add rice. Cover and let stand for 5 minutes or until rice is tender. Drop rounded spoonfuls of refried beans over rice; heat through. Sprinkle with cheese and onions if desired.

1 cup cooked rice, packed
1 onion, grated
1 large egg
2 tablespoons tapioca starch (to be corn free, or you can use corn starch in the same quantity)
canola oil (for frying, to be soy free or you can use vegetable oil!)

Steps:

  • Combine all the ingredients except for oil and mix well.
  • In a pan, heat oil for shallow frying.
  • When the oil is hot, add a tablespoon of batter, pressing down slightly to form a flat fritter.
  • Fry one side until golden and flip. If there are too many holes in the fritter, add more cornstarch to the batter.
  • Drain fritters on paper towels to absorb excess oil.
  • Serve with salsa, tzatziki or anything else that has a zesty fresh flavor!
  • Enjoy!
