DOMINICAN STYLE CHICHARRON ( FRIED PORK SKINS)
This ia an authentic recipe from Dominican Republic that a friend of mine gave to me. This recipe was one that she used to make the chicharron she sold while in D.R. Hope you enjoy as my family and I did!

Steps:
- Place pork, water salt and oregano in a large pan. squeeze the juice from the lime in with the rest of the ingredients. Place on high until it comes to a boil then turn to med.- high. Continue cooking uncovered until all the water is absored. The pork will then produce its own oil to fry. Continue cooking the meat until meat is crispy but not burned and brown in color.
- Remeove and drain on paper towels. Serve with lime and hot sauce. (optional).

We use our smoker to make bacon. Once the bacon is smoked you cut the skin away from the pork belly. Steps:
- 1. Put the skin on the chopping board with the fat side up, try to remove all the fat you can, cut the clean skin into strips about 1/2 x 1 1/2.
- 2. Cook the strips in boiling water for 10 min and then strain, let them cool a bit.
- 3. Spread them in a single layer in a dehydrator or on a rack in an oven at 125F for at least 12 hrs or until dried (it should be hard). OR us your smoker. :) At this point you can cook immediately or save for another time.
- 4. Prepare a pot with oil at 350F
- 5. Add the dried skins, they will puff very fast so be ready with a slotted spoon and a plate to drain them on. Remove from the oil and place them on paper to drain.
- 6. Sprinkle with sea salt, bbq seasonings, your favorite rub, herbs, whatever.

- Cut pork skin into pieces 2 inches long and 1/2 an inch thick; season with salt. Cover and refrigerate 1 hour.
- Preheat fryer to 375. Fry the pieces about 5 minutes, until golden and crispy. Remove and drain on paper towels. Season to taste with salt; serve warm.

- Acquire Pork Skin. Typically found in charcuteries or smaller or local butcher shops or international markets. Make sure to use skin within 3 days of purchase, as the high moisture content makes it subject to quick spoilage.
- Cut Pork Skin Into Pork Squares. Cut skin into small squares roughly 1" x 1". Each one of these squares will become a singular rind. This process is harder than it looks - pork skin is VERY tough and best cut with sanitary kitchen shears.
- Boil Skins. Boil water in a pot sized to accommodate your skin squares. Add skins carefully once water is boiling. Let the skins boil for about one hour.
- Chill Skins. After skins have been boiled, pour out water and allow them to cool down and place in refrigerator for 4 hours or longer. This will solidify the layer of fat beneath the skin.
- Eliminate Fat From Skin. Cut off the fat from each skin piece starting with a knife and scraping with spoon like tool. Pork Rinds are made of pork skin.
- Place Skins Face Down On Drip Tray. Place all skins spaced apart as much as possible facing down on a mesh tray with a pan underneath.
- Render And Dehydrate Skins. Set your oven to a low temperature - setting 170˚-180˚F is ideal - and leave the door cracked. This allows air to circulate and carry away the moisture in the skins.
- Prep Oil And Tools. Fill a fryer or stainless steel pot with your chosen frying oil. If using pot, make sure to add a thermometer to monitor oil temperature - if it smokes it is absolutely too hot!
- Fry Skins. When oil reaches about 400˚F, gently add a few skins into your fryer or pot. The skins will begin to make popping noises after a few seconds and start to float to the top.
- Cool And Season Skins. When skins are completely puffed, remove them from the oil and place on the dehydrating try or similar grate surface. This allows excess oil to drip off and the skins to cool.

- Procure Some Pork Skin. Depending on where you live, this might be the hardest part of making chicharrónes: you need to procure 1 1/2 to 2 pounds of fresh pork skin.
- Cut the pork skin into large pieces. The easiest way to cook chicharrónes is to roast the pork skin in large-ish pieces—about 6 inches long by 4 inches wide is a good manageable size.
- Roast the pork skin. Before you deep-fry the pork skin into puffy chicharrones, you need to roast it for a few hours at low heat to dry it out. Extra fat will drip out of the skin during this phase, so arrange the pork skin on a wire rack set inside a foil-lined rimmed baking sheet to catch the drips.
- Heat the frying oil. Traditionally, chicharrónes are fried in lard, but that can get a little stinky to do at home, so you can use canola, grapeseed oil, or another vegetable oil with a high smoke point instead.
- Deep-fry the chicharrónes. Add a piece of your roasted pork skin and watch it closely. It should start to bubble and pop and expand within 30 seconds—if it doesn't, your oil isn't hot enough.
- Season and Enjoy. As soon as the chicharrónes are finished frying, sprinkle them with salt. You can also sprinkle them with some chile powder or lime zest too if you want—but salt is the most essential ingredient.
