- Mix corn meal and crumbs together on a plate, put flour onto a plate, milk in a bowl. Slice squash 1/2 to 1 inch, depending on the thickness you want Mix each slice in flour, dip into the milk, dredge through cornmeal/flour mix, place on paper towel laden plate. If placing in fridge, remove after 20 minutes. Place 1 cup of oil in large pan, heated well on medium ( about 2-3 minutes) Place squash in pan, reduce flame, shake 1 tbs of mrs dash over squash. let cook no more than 5 minutes on each side, depending on the softness and your taste. Drain on paper towel.

- Crack eggs into a pie plate, beat and add generous amounts of salt and pepper, mix well. Then in a large plastic zip-lock bag, add cornmeal and generous amounts of salt and pepper. Wash, peel and slice squash. Dip in egg wash and then cornmeal. Fry in 1/4 inch hot oil, for 2-3 minutes each side. Remove and set aside on paper towel to cool. Enjoy.

These fried squash patties are a nice summer side dish and are very similar to potato patties.

- 1. Mix squash, onion, sugar, salt and pepper and place in colander to drain. The salt and sugar will draw the moisture out of the squash. You want most of the moisture out of the squash, so you may leave in the colander for a while or squeeze mixture with your hands to remove as much of the liquid as possible. Place squash mixture in bowl and add flour and eggs. Mix well. Place extra virgin olive oil plus a small amount of canola oil in a frying pan and heat. (The canola oil will keep the olive oil from burning as olive will get very hot and burn quickly.) Form squash mixture into patties and fry until done and browned.
OVERSTUFFED PATTYPAN SQUASH

- Heat the oven to 400 degrees F. Put a half sheet pan in the oven to heat for 15 minutes.
- Trim the woody ends and halve the squash crosswise. Scoop out the squash seeds, leaving a 1/2-inch shell. Reserve the flesh. Brush the cut sides of the squash with 1 tablespoon of the olive oil, and season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Arrange the squash, cut side down, onto the preheated pan and roast until the squash is tender and the flesh side is browned, about 15 minutes. Transfer the squash to a serving platter and set aside.
- Meanwhile, finely chop the reserved squash flesh. Heat a 10-inch cast iron skillet over medium heat and add the remaining tablespoon of olive oil. When the oil shimmers add the chopped squash, shallot, garlic, remaining 1/2 teaspoon salt, and 1/4 teaspoon of pepper. Cook, stirring occasionally, until tender and browned, about 2 to 3 minutes. Add the corn, limas, pecans, and thyme. Cook until heated through, approximately 1 minute. Divide the stuffing evenly among the cooked squash and serve immediately.
PATTY PAN SQUASH FRITTERS
As we grow our own squash, don't we always have a surplus and wonder how it can be used. Well, I found this recipe, tweaked it a bit and it is wonderful - crispy on the outside, moist on the inside and full of flavorful goodness. My husband loved these and what a great way to add vegetables to the menu!

- Before shredding, cut out the stem of the squash, but there's no need to peel it. Remove any large seeds, especially if using a large squash.
- Preheat about 1/2 inch oil (I prefer olive oil) over medium-high heat in a deep skillet.
- Place the squash and onions into a large bowl.
- Beat the eggs, milk and oil into the squash/onion mixture. Then add the flour, baking powder, salt and pepper and mix all until combined.
- Scoop batter using a 1/4 cup measure and drop batter into hot oil. Do not crowd.
- Cook until brown, turn with a spatula and cook the other side until brown.
- Drain on paper toweling.
- Add oil to pan when necessary.
- Keep warm until served.
- Serve with horseradish sauce, ketchup or whatever you like. They are great as is!
SAUTEED PATTY PAN SQUASH
Rarely can you find patty pan (aka scalloped) squash in the grocery store. However, many farmers markets have them. In Texas, it seems that every farmers market is overflowing with squash come June. However, if you can't find them, any summer squash will do. I also have made this recipe using yellow squash and zucchini and it was quite delicious. The freshness of the ingredients scream "summer".

- Heat olive oil and butter in a skillet over medium-high heat until foaming, 1 to 2 minutes. Saute onion in the olive oil-butter until tender and translucent, about 3 minutes. Add squash and garlic; season with lemon pepper. Saute mixture until squash is easily pierced with a fork, 5 to 6 minutes.

STUFFED PATTY PAN SQUASH
An abundant harvest of patty pan squash led me to this recipe elsewhere on the internet. Very tasty! and I cooked a full package of bacon so my picky eaters could have BLTs while I enjoyed this! BTW I use Recipe #173076 to cook my bacon (see my notes in my review for details).

- Preheat oven to 350°F (175°C).
- Bring one inch of water to a boil in a saucepan over medium-high heat. Add squash, cover, and cook for 10 minutes, or until a fork can pierce the stem with little resistance.
- Drain, and slice off the top stem of the squash. Use a melon baller to carefully scoop out the centers of the squash. Reserve all of the bits of squash. (I used larger squash so discarded the seeds - warning the squash is very liquidy in the center so I drained it a bit after scooping.
- Mince the reserved squash.
- Combine remaining ingredients in a bowl with the minced squash, mixing well.
- Stuff each squash to overflowing with the mixture, and place them in a baking dish. Cover the dish loosely with aluminum foil.
- Bake for 15 minutes in the preheated oven, or until squash are heated through.
PATTYPAN SQUASH FRITTERS
Pattypan is very mild-flavored, so my husband will eat it. And it's abundant, too, so we're always looking for ways to serve it. Served with fresh corn and sliced tomatoes, this is a meatless meal. Try a horseradish sauce for the fritters.

FRIED CYMLINGS (PATTY PAN SQUASH) WITH BACON
From a reprint of the vintage cookbook the Williamsburg Art of Cookery Or, Accomplifh'd Gentlewoman's Companion originally published in 1742. Cymlings are also known as patty pan squash. (I called them UFOs as a child and still do!) No amounts were given in the recipe therefore measurements and yield are estimated. Original recipe used either bacon ends or "fatback", if I'm understanding the language.

- In a cast iron skillet fry the bacon on medium heat until crisp. Set aside. When cool enough to handle, break up bacon into small pieces.
- In same pan, fry the patty pan squash until golden brown on both sides, stirring often to avoid burning, about 10 minutes.
- Season with salt and pepper to taste and transfer to serving dish.
