  • First, make the batter. Sift the flour into a basin, work in the egg and gradually beat in the water. Leave to rest for an hour or so. Prepare the shellfish. Cut it into suitable pieces, trim off any ragged bits and discard the black intestinal lines. Dust with the seasonings and roll in the cornflour. Coat with the batter and drain off excess. Gradually heat the oil which should be deep enough to cover the 'balls' when they are dropped into it. The oil should be hot enough to colour the surface and also cook the raw lobster through about 7-8 minutes. Drain, transfer to a heated serving dish and garnish with parsley.

Imagine the best parts of a lobster roll--buttery brioche, chunks of lobster and fresh lemon--married with your favorite mac and cheese. That's what you get in this crisp on the outside, creamy on the inside appetizer.

Kosher salt
8 ounces elbow macaroni
11 tablespoons unsalted butter
1 1/4 cups all-purpose flour
2 cups milk
1/4 cup grated Parmesan
2 tablespoons mascarpone cheese
1 1/2 pounds cooked lobster meat, roughly chopped
1 tablespoon chopped fresh tarragon, plus 1/2 cup leaves
6 ounces Muenster cheese, shredded
4 ounces Gruyere, shredded
4 large eggs
10 ounces fresh brioche breadcrumbs (about 3 3/4 cups)
Vegetable oil, for frying
1/2 cup fresh parsley leaves
1/2 cup chopped chives (1 1/2-inch pieces)
Zest of 1 lemon, plus wedges, for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions for al dente. Drain and set aside.
  • Melt 3 tablespoons of the butter in a medium saucepan over medium-high heat. Whisk in 1/4 cup of the flour and cook until bubbling, about 1 minute. Whisk in the milk and 2 teaspoons salt and bring the mixture to a boil. Reduce to medium heat and cook, whisking occasionally, until thickened and the flour taste is gone, about 6 minutes. Remove from the heat and whisk in the Parmesan and mascarpone until melted and smooth. Fold in the macaroni, lobster and chopped tarragon.
  • Put the Muenster and Gruyere in a large bowl. Add the macaroni mixture and fold until just combined. Spread the mixture evenly over a quarter baking sheet and freeze until just solid, about 1 hour.
  • Set up a breading station with 3 shallow dishes: Mix 1 teaspoon salt and the remaining 1 cup flour in the first dish. Beat the eggs and 1 teaspoon salt in the second dish and add the breadcrumbs and 1 teaspoon salt to the third dish.
  • Cut the chilled macaroni mixture into 1-inch squares with a paring knife. Coat each square in the flour, then dip in the egg, letting any excess drip off. Press into the breadcrumbs and transfer to a baking sheet. Freeze for 10 minutes.
  • Meanwhile, fill a large, heavy-bottomed pot with 2 inches of oil and set over medium-high heat. Heat until a deep-frying thermometer registers 375 degrees F.
  • Fry the breaded macaroni squares in batches until golden brown on the outside and hot in the middle, about 2 minutes. Bring the oil temperature back up between batches.
  • After the last batch, bring the oil temperature back up again. Add the tarragon leaves, parsley and chives in 1/4-cup batches to the hot oil and fry until the water is released and the herbs are no longer bubbling, about 30 seconds. Drain on paper towels and season with salt.
  • Put the lemon zest and remaining 8 tablespoons butter in a small saute pan and heat until melted and foamy.
  • Drizzle the mac and cheese squares with the lemon butter and sprinkle with the fried herbs. Serve with lemon wedges.

1 pound elbow macaroni
2 lobster tails
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups half-and-half, warmed, plus 2 tablespoons for egg wash
1 pound Cheddar, grated
1/2 pound smoked gouda, grated
1/2 pound spicy gouda, grated
2 large eggs
3 cups seasoned bread crumbs
Canola oil, for frying
Long bamboo spears or toothpicks

Steps:

  • Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Transfer to a large bowl.
  • Bring a medium pot of water to a boil and add the lobster tails. Cook for about 3 to 5 minutes. Remove the tails from the water and cool. Gently remove the meat and chop into small chunks. Add the meat to a small bowl and lightly season with salt and pepper, to taste. Set aside.
  • In a medium saucepan, over medium heat, add the butter. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk in the warmed 2 cups of half- and-half into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper, to taste. Gently mix in chopped lobster meat. Fold the lobster-cheese sauce into the macaroni.
  • Pour the macaroni and cheese into a shallow pan and refrigerate until cold, at least 2 hours. Shape the cold macaroni and cheese into individual size balls and arrange them on a parchment paper-lined tray. Freeze the balls at least another 2 hours. In a shallow bowl, beat the eggs and 2 tablespoons half-and-half together to form an egg wash. Put the bread crumbs into another shallow bowl. Remove the macaroni and cheese balls from the freezer. Dip the frozen balls into the egg wash, then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
  • In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 350 degrees F. Fry the macaroni and cheese balls, in batches, until they are golden brown and center is hot, about 5 minutes. Remove the balls to a paper towel lined plate to drain.
  • Skewer the balls with a long bamboo spears to help hold together, and serve.

4 teaspoons Cajun seasoning
1 cup garlic butter
1/2 cup freshly minced garlic

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  • Sprinkle the butterflied lobster tails on both sides with some Cajun seasoning, then spread on both sides with some garlic butter. Spread the lobster flesh with the minced garlic; sprinkle more Cajun seasoning over the garlic layer. Top with more garlic butter.
  • Bake until cooked through, about 15 minutes (do not overcook).

2 cups cornmeal
½ cup all-purpose flour
salt and pepper to taste
1 teaspoon ground cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
4 pounds fresh lobster tails, cleaned and halved but still in shell
2 quarts oil for deep frying

Steps:

  • In a gallon sized plastic closeable bag combine, cornmeal, flour, salt, pepper, cayenne, garlic powder and onion powder. Shake well. Place one half of a lobster tail at a time in to the bag. Shake to coat the tails completely.
  • Heat vegetable oil in a deep fryer or large skilled to 365 degrees F (180 degrees C). Place one coated lobster tail at a time into the oil. Cook until the lobster turns white and the coating is lightly browned. Let the fried tails dry on paper towels.

1 lobster (raw, crayfish)
peanut oil (3 cups for frying- obviously all won't be used and will upset nutritional panel scores)
20 g ginger (cut into thick slices)
15 g spring onions (scallions cut into 5cm slices, white portion only)
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sugar
2 teaspoons rice wine
1/2 teaspoon light soy sauce
1 cup chicken stock
1 tablespoon egg white (lightly beaten)
1 pinch salt
1 pinch pepper
1 teaspoon cornflour (cornstarch mixed in a little cold water or stock)
1 tablespoon cornflour (cornstarch mixed with a little water for thickening at the end)

Steps:

  • Mix the marinade ingreditents together.
  • Remove the meat from the tail and cut into bite size pieces and mix with the marinade for 5 to 10 minutes.
  • Heat the peanut oil in a hot wok until the oil is smoking and then reduce to a medium heat.
  • Add the lobster pieces to the oil and cook for 1 minute and then remove with a slotted spoon, drain and put to one side.
  • Drain and reserve the oil from the wok, and wipe the wok clean.
  • Put 2 tablespoons of the oil back in the wok and heat and then fry the ginger and spring onions for 30 seconds.
  • Return the lobster to the wok and stir fry over a high heat for a few seconds and then add the salt, pepper, sugar, soy and wine and continue to stir fry quickly.
  • Add the chicken stock, cover the wok with a lid and simmer for 1 minute.
  • Stir in the cornflour slurry a little at a time until and thicken and the lobster is glazed to you liking.
  • Serve immediately (would suggest over rice).
