FRIED CORN
Steps:
- In a large skillet over medium-high heat, melt 4 tablespoons butter. When butter is foamy add the corn stirring to coat with the butter. Cook stirring frequently for 1 minute. Add sugar or honey and cook for 2 minutes more. Increase heat to high and add heavy cream-continue to stir so corn won't stick to pan. Add salt and pepper. Cook corn until most all of the cream has absorbed about 5 minutes more. Remove add serve hot.
FRIED CORN OFF THE COB
This is a delicious side dish and so easy and quick! It goes great with everything and adds a little color to your meal. I ordered this at a local restaurant and decided I would try to figure out how to make it! The waiter told me it was fresh corn. It is really close to theirs!! It is so yummy!!! I prepare my veggies early in the day and store in zip lock bag.

Steps:
- Remove corn from the cob using a sharp knife.
- Chop red bell pepper and green onion tops.
- Melt butter in large frying pan.
- Add all ingredients to hot pan.
- Stir fry over high heat for 5-6 minutes.
- Do not overcook. Do not saute! Veggies should be crisp.

MS.DELORES "FRIED CORN OFF THE COB" JUST LIKE GRANDMAS
This is a recipe that my grandma use to make. She passed away and I never got her recipe. I got this recipe from my friend Mrs. Delores and it taste just like grandmas. This dish is perfect for any occasion or just a dish all by itself. This is also a perfect Thanksgiving or Christmas dish.

Steps:
- Begin cutting corn off the cobb in a soft downward motion. After cutting corn scrap cobb for excess corn.
- Fry bacon until crisp; drain well, leaving about three tablespoons of the fat in the skillet.
- Add the corn, salt, pepper 3 tbl spoons of sugar and cornstarch or flour to the fat.
- Add water as needed stir occasionally.
- Sauté everything together for about 20 minutes or until the vegetables are tender.
- Add the fresh corn and crumble the cooked bacon over the top.
- Continue cooking for an additional ten minutes.
- Serve while hot.

Steps:
- Melt the butter in a large saute pan over medium heat. Add the onions and saute until softened, about 3 minutes. Add the chicken stock, heavy cream, corn and some salt and pepper and cook, stirring occasionally, until the liquid is mostly evaporated and the corn is soft. If the corn isn¿t done but the liquid is gone, add a little more stock and continue cooking. Stir in the vinegar and serve.
FRIED CORN
Steps:
- In a medium saute pan, saute peppers in 1/4 cup butter. Add corn, sugar, milk, salt, and pepper and bring to a boil. Meanwhile, in a small saucepan, make a roux with the remaining 1/4 cup butter and the flour by cooking it over low heat for a couple minutes until a pale yellow color. Add roux to corn mixture. Cook until thickened and then serve.
SKILLET FRIED CORN
Great side dish with chicken, beef or pork. Easy to prepare.

- Combine milk and egg in shallow dish and mix well.
- Combine flour, seasoned salt and pepper in shallow dish and mix well.
- Dip each ear of corn into milk and egg mixture, then roll in seasoned flour. Knock off excess flour.
- In a large skillet, heat oil to 350 degrees.
- Add corn and fry for 5 minutes or until golden brown (approximately 2-1/2 minutes on each side).
- Drain on paper towels.

BUTTERY FRIED CORN WITH BACON
A perfect holiday side dish. Not for everyday eating as it has both bacon and butter, but let yourself indulge for the special occasion! Use fresh corn if you can, but frozen works okay as well. A nifty way to remove corn from the cob is by cutting a small part off both ends, then cutting the cob in half. vertically. Then turn the cob on it's end and you have a much more stable way to cut the corn off. This recipe is adapted from Paula Deen. Update: I forgot to say that I only simmer it for 5 more minutes, corn doesn't need to be cooked for 15 minutes in my opinion.

- Remove corn from cobs by using a corn grater or knife, and mash the whole kernels a little.
- Slice bacon into 1-inch pieces. Cook bacon until brown in a large skillet. Remove bacon from skillet and add 1/2 stick butter to bacon grease.
- Over medium-high heat, pour in the corn. Fry in the grease and butter mixture.
- Lower the temperature and cook for 5 minutes, then put on simmer until corn is done, 10 to 15 minutes.
- Add black pepper and salt to taste.
- If corn seems too dry, add a little milk or water.

Steps:
- Scrape kernels of corn off the cob using a sharp knife. Be sure to get as much liquid from the cob as possible. Set aside.
- In a heavy skillet cook the bacon until crisp; remove from skillet and crumble. Set aside.
- Stir corn into hot bacon drippings. Add water and sugar.
- Cook, stirring constantly, until mixture begins to thicken.
- Gradually stir milk into cornstarch until smooth. Add to corn.
- Cook over low heat until thickened.
- Stir in butter and salt.
- Top with crumbled bacon before serving.
