FRIED CLAMS WITH TARTAR AND COCKTAIL SAUCES



Fried Clams with Tartar and Cocktail Sauces image

2 cups corn flour
1 cup all-purpose flour
1 tablespoon seafood seasoning, such as Old Bay
1 tablespoon kosher salt, plus more for seasoning
Freshly ground black pepper
1 cup milk
1 large egg
Canola oil, for frying
1 pound shucked frozen long-neck or soft-shell clam bellies, thawed, or freshly shucked clams
1 cup Tartar Sauce, recipe follows
1 cup Cocktail Sauce, recipe follows
Lemon wedges, for serving
1 cup mayonnaise
2 tablespoons dill relish
1 tablespoon chopped fresh dill
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
Freshly ground black pepper
1 cup ketchup
1 tablespoon Calabrian chile paste, or more to taste
1 tablespoon prepared horseradish, or more to taste
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Combine the corn flour, all-purpose flour, seafood seasoning, salt and pepper in a large bowl. Whisk together the milk and egg in a small bowl and season with salt and pepper.
  • Add enough oil to a heavy-bottomed pot fitted with a deep-frying thermometer to reach 4 inches up the sides. Heat the oil to 365 degrees F and line a sheet tray with paper towels.
  • Dip the clams in the milk, then into the seasoned flour. Add 8 to 10 clams to the oil at a time and fry in batches until they are crispy and golden brown, 45 seconds to 1 minute. Remove the clams to the lined sheet tray. Continue frying the remaining clams.
  • Sprinkle the clams with salt and pepper and transfer to a platter. Serve with the Tartar and Cocktail sauces and lemon wedges.
  • Stir together the mayonnaise, relish, dill, lemon juice, salt and pepper in a medium bowl and refrigerate at least 1 hour and up to 2 days.
  • Stir together the ketchup, chile paste, horseradish, lemon juice, Worcestershire, salt and pepper in a medium bowl and refrigerate until serving, or up to 1 week.

150 grams Greek Flatbread
100 milliliters olive oil
150 grams caviar Salmon
0.5 lemon (juice)
parsley
100 black Olives (pitted)
fried mussels
1 egg
1 Tbsp olive oil
freshly ground peppers
100 grams Pastry flour
1.5 kilograms mussels
1 carrot
1 onion
1 stalk Celery
1 bay leaf
1 tsp black peppercorns
2 cloves
1 pc organic Lemon peel (about 3 cm)
250 milliliters dry white wine
vegetable oil (for frying)
1 bunch Arugula
1 bunch parsley
2 organic lemons

Steps:

  • For the sauce: Cut the flatbread into small pieces. Soak in cold water. Squeeze the excess moisture from the bread and add to a blender. Add the olive oil, lemon juice and caviar and blend into a paste. Place in a bowl, cover with plastic wrap and refrigerate for 1 hour.
  • Arrange the sauce on plates and garnish with the parsley and black olives if desired.
  • For the batter: In a bowl, beat the egg with 125 ml (approximately 1/2 cup of water) and oil, and season with salt and pepper to taste. Stir in the flour and allow to sit for 30 minutes.
  • For the clams and mussels: Rinse clams and mussels thoroughly and discard the open ones. Peel and slice the carrot and onion. Rinse the celery and cut into pieces.
  • Place the vegetables in a pot along with the bay leaf, peppercorns, cloves, lemon peel, 1 teaspoon salt, wine and 750 ml (approximately 3 1/4 cups) water. Bring to a boil. Add the clams and mussels, and cook until the shells open, about 7-8 minutes. Discard the clams that haven't opened.
  • Loosen the clam and mussel meat from the shells. Coat in the batter. Fill a pot up to 6 cm (approximately 2 1/2 inch) of oil. The oil is hot enough when bubbles form.
  • Cook the clams and mussels until golden brown, remove and drain on paper towels. Serve with lemon wedges, parsley and arugula, on the plates with the sauce and olives.

1/2 cup milk
1 egg yolk
1 tablespoon butter, melted and cooled
1/4 teaspoon salt
1/2 cup all-purpose flour
1 egg white
1 pint shucked clam, rinsed and well drained
oil (for deep frying)
tartar sauce, for dipping

Steps:

  • In a medium sized bowl mix milk, egg yolk, butter, and salt. Sift the flour into the milk mixture stir until smooth. In a small chilled bowl beat the egg white with an electric mixer until soft peaks form. (For best results: refrigerate the bowl, mixer blade and egg white prior to mixing) Fold the beaten egg white into the milk mixture.
  • In a large saucepan or deep fat fryer heat oil to 375'. Poke each clam with fork. Dip clams into the batter. Fry a few at a time around 1-1/2 minutes or until golden brown, turning once. Remove with slotted spoon, drain on paper towels or on brown paper bags. Keep warm in a 300' oven while frying the remaining clams.
  • Serve with tartar sauce.

2 cups buttermilk
2 cups Italian-style breadcrumbs
1/2 pound, small, shucked clams, about 20 to 25
1/2 pound, small, shucked oysters, about 8 to 10
1 lemon, cut in 1/2
Sea salt
1 1/2 cups marinara or arrabiata sauce (store bought or homemade), warmed
1/4 teaspoon red pepper flakes, optional, if using marinara (not arrabiata) sauce

Steps:

  • Pour enough olive oil into a large, deep, heavy frying pan to reach a depth of 3 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
  • While the oil is heating, put the buttermilk and the bread crumbs in separate shallow bowls. Working in batches, dip clams and oysters in buttermilk to coat completely. Allow the excess buttermilk to drip back in to the bowl. Dredge clams and oysters in the bread crumbs. Place the clams and oysters on a baking sheet, and continue.
  • When the oil is hot, fry the clams and oysters in batches, about 3 minutes per batch. Using a slotted spoon, transfer the fried seafood to paper towels to drain.
  • Immediately sprinkle the fried seafood with freshly squeezed lemon and sea salt. Serve with a bowl of warmed spicy marinara or arrabiata sauce for dipping.

flour

4 -6 cloves garlic
1/2 cup coarsely chopped walnuts
3 cups stale crumbled bread, without crusts
1 cup extra virgin olive oil
2 -4 tablespoons red wine vinegar
salt

Steps:

  • Wash the mussels, scrubbing their shells and pulling off the little"beard" with a sharp paring knife.
  • Place the mussels in a large wide pot with about two inches of water.
  • Cover and steam until the mussels open, about six or seven minutes.
  • Remove and drain, discarding any mussels that haven't opened.
  • Remove the mussels from their shells and place in a colander.
  • Season lightly with salt and toss with about one and a half cups of flour, until all the mussels are coated.
  • Tap the colander to rid it of excess flour.
  • Fill a large skillet with about one and a half inches of oil and heat until almost smoking.
  • Add the mussels, in batches i f necessary and fry until crisp and golden.
  • Serve warm Either in a mortar or pestle or in the bowl of a food processor, pulverize the garlic and salt to a paste.
  • Add the walnuts and pound or pulverize until the mixture is mealy.
  • Dampen the bread under the tap and squeeze dry.
  • Add to the bowl and continue pulverizing all together.
  • Drizzle in the olive oil and vinegar, alternating between each, and pound all together until the skordalia is creamy.
  • If it is too thick, add a little water.
  • Serve as a dip, or as an accompaniment to fresh or fried vegetables and various fish.
