This recipe was featured on week 45 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Cambodia is my 45th stop. Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. This paricular recipe is by Mylinh Nakry and was originally posted on a site called Khmer Krom Recipes.

1 lb chicken breast, cut into strips
3 garlic cloves, minced
1 green onion, minced
2 tablespoons minced lemongrass (I grated mine)
2 tablespoons curry powder
1 tablespoon honey or 1 tablespoon light brown sugar
1/2 tablespoon soy sauce
1/2 tablespoon fish sauce
1/2 tablespoon fresh lime juice
1 teaspoon paprika
1/4 teaspoon black pepper
1/4 cup water
2 tablespoons vegetable oil (to prevent drying)

Steps:

  • Mix all the ingredients together in a large bowl. Cover and refrigerate for at least 4 hours.
  • Place the chicken strips on skewers and pour the rest of the marinade over. Cook on a grill over low heat until the chicken is golden brown all over (I just put mine under the broiler. They really do need an open flame.).
  • Serve with mango salsa on the side.

10 cinnamon sticks
1/2 cup whole cloves
1/2 cup coriander seeds
1/2 cup black mustard seeds
1/2 cup whole black peppercorns
10 cups water
1 cup curry powder
1 cup Garam Masala
1 cup chopped garlic
1 cup ginger paste
1 cup lemon juice
1/2 cup kosher salt
1/2 cup ground black pepper
1/2 cup white vinegar
10 pounds chicken drums and thighs
2 cups green lentil
2 cups yellow lentil
8 cups water
1/2 cup curry powder
1/2 cup Garam Masala
1/2 cup red chile powder
5 tablespoons kosher salt
1/2 cup curry powder
5 tablespoons red chile powder
5 tablespoons ground black pepper
3 tablespoons kosher salt
4 cups all-purpose flour
1/2 cup Curry Fried Chicken Powder
1 tablespoon ground black pepper
1 tablespoon red chile powder
1 tablespoon curry powder
1 tablespoon kosher salt
4 to 5 cups vegetable oil, for deep frying
1 cup vegetable oil
1 cup chopped onions
5 tablespoons ground cumin

Steps:

  • For the garam masala: Combine the bay leaves, cinnamon sticks, cloves, coriander seeds, mustard seeds, and peppercorns in a saucepan over medium heat. Toast the spices until fragrant, stirring, for 7 to 8 minutes. Let cool, and then grind in a spice blender until it becomes a fine powder.
  • For the chicken: Add the water, curry powder, Garam Masala, garlic, ginger paste, lemon juice, salt, pepper and vinegar to a large tub. Mix well, and then add the chicken. Refrigerate and let brine for 24 hours.
  • For the lentil curry: Add both lentils to a stock pot and add the water. Mix in the curry powder, Garam Masala, chile powder and salt. Bring to a boil over high heat and let it boil for 20 minutes. Then lower the heat and simmer until the lentil are soft, about 1 hour.
  • For the Curry Fried Chicken powder: Combine the curry powder, red chile powder, pepper and salt in a bowl. Add 1 cup of the freshly ground Garam Masala and stir to combine.
  • For the chicken breading: Mix the flour, Curry Fried Chicken Powder, black pepper, red chile powder, curry powder and salt in a large bowl. Remove the chicken from the brine and dredge in the seasoned flour the chicken. Let sit on a baking tray for 20 minutes.
  • Heat the oil to 300 degrees F in a large, deep skillet. Fry the chicken, in batches, until golden brown and the pieces float to the top, 15 to 18 minutes.
  • For the onion sizzle: Heat the oil in a large fry pan over high heat. Add the onions, and fry, stirring constantly, until dark golden brown, 8 to 10 minutes. Add the cumin at the end for 2 to 3 minutes. Top off the lentil curry with the onion sizzle. Serve with the curry fried chicken.

DEEP-FRIED SNICKERS ON A STICK

4 large Snickers bars
1 cup cake flour
2 teaspoons baking soda
3/4 cup seltzer
Vegetable oil, for deep-frying

Steps:

  • Push each candy bar onto a skewer or popsicle stick; refrigerate for at least 2 hours or overnight.
  • Whisk the flour and baking soda in a medium bowl. Whisk in the seltzer to make a smooth batter (about the consistency of pancake batter). Heat 4 to 6 inches of vegetable oil in a deep pot until a deep-fry thermometer registers 330 degrees.
  • Hold the Snickers by the skewer and dip into the batter, turning to coat. Carefully place the Snickers in the hot oil (skewers and all); fry, turning as needed, until crisp, 1 1/2 to 2 minutes. Use tongs to remove each bar by the stick; drain on paper towels or a rack and serve warm.

Pieces of cheese on sticks, deep fried in batter, is a common snack at county fairs. A good tip for coating the cheese is to pour the batter into a tall glass and immerse the skewered cheese in the glass, covering it all at once, before frying.

2 cups pancake mix
1 cup yellow cornmeal
1 large egg
Two 8-ounce blocks mozzarella, cut into 1/2-by-3-inch pieces
Marinara sauce, warmed, for serving

Steps:

  • Heat 2 inches of oil in a wide heavy-bottomed pot to 350 degrees F.
  • Meanwhile, combine the pancake mix, cornmeal and egg in a large bowl. Add 3 cups of water and stir until a thick batter forms. The batter should be thick but pourable; thin with a little more water if needed. Pour the batter into a glass tall enough to completely immerse the length of the cheese.
  • Skewer each piece of cheese on a bamboo or wooden chopstick.
  • To fry: In batches of three, dip the skewered cheese into the batter, ensuring each piece is covered completely. Slowly lower the cheese into the hot oil. Very quickly, flip the cheese over so all parts of the batter have a chance to set and begin cooking. Cook, flipping frequently, until golden and crisp, 1 to 2 minutes. Remove to a paper towel-lined plate and repeat with the remaining ingredients.
  • Serve warm with warm marinara sauce on the side.

2 tablespoons canola oil
2 tablespoons lemon juice
2 tablespoons reduced-sodium soy sauce
4 garlic cloves, minced
2 teaspoons honey
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground ginger
3/4 pound skinless chicken breasts, cut into thin strips

Steps:

  • In a large bowl, combine the oil, lemon juice, soy sauce, garlic, honey and seasonings. Pour 1/4 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for at least 3-4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. On metal or soaked wooden skewers, thread chicken. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, uncovered, over medium-hot heat or broil 4 in. from the heat for 3-4 minutes on each side or until chicken is no longer pink, basting frequently with reserved marinade.

  • Crush lemongrass, garlic, shallots, ginger, and Thai chilis in a mortar and pestle (or a food processor but it'll be less tasty) until it resembles a paste. Stir in curry powder, turmeric, crushed chili flakes, and 2 tablespoons oil. Coat chicken throughly with the curry paste and let marinate for 30 minutes.
  • In a large dutch oven, heat up another 2 tablespoons of oil and fry the chicken, skin side down, until golden. Flip the chicken skin side up and add the potatoes. Stir in coconut milk, chicken stock, cinnamon stick, star anise, and lime leaves.
  • Bring to a gentle simmer and cook for 1 hour, or until chicken is soft and tender. Season with fish sauce and brown sugar and enjoy!

  • In a large pot, heat the oil over medium-high. Add the onions, garlic and ginger; sauté for a minute or two, until the onions begin to sweat, and everything is so fragrant you begin to weep. Add the garam masala, sweet paprika and cinnamon stick. Toss to combine. Add the shredded chicken and toss it all together to coat.
  • Then add the diced tomatoes, tomato sauce, chicken stock and coconut milk. Partially cover and reduce the heat the medium-low. Simmer for 20 to 30 minutes, while you make the rice and/or bread. I made both because I have zero carb self control, and I'm okay with that. (fish the cinnamon stick out about 10 minutes into the simmering. or leave it in! totally your call.)
  • After half an hour, taste it. Oooooo! Add the lemon juice and a pinch of salt and pepper, if you feel it needs it. Garnish with lots and lots of cilantro and serve with the rice and bread. And extra lemon wedges! Always always.
