A real kid pleaser. Best made with fresh potatoes, as opposed to instant, with a stiff potato consistency. I just boil a few potatoes and smash them with a fork.

2 cups cooked smashed potatoes (plain, boiled and fork-smashed potatoes work best)
1 cup shredded mozzarella cheese (can substitute cheddar)
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder or 2 tablespoons thin sliced green onions
1/4 teaspoon black pepper
1 egg, lightly beaten
1 cup breadcrumbs
1/4-1/2 cup vegetable oil

Steps:

  • Combine first 7 ingredients; chill.
  • Shape mixture into 6 patties.
  • Dip each patty into lightly beaten egg then lightly coat with breadcrumbs.
  • Heat vegetable oil and fry over medium heat until lightly browned, turning once.
  • Tip: If you feel your potatoes are too watery, lightly dust with flour prior to dipping into the egg wash.

Fried Potato Patties are the best way to use up leftover mashed potatoes -- gorgeously golden brown on the outside, and fluffy, creamy potato heaven on the inside!

2 cups cold, leftover mashed potatoes
1 large egg
1/3 cup grated yellow onion
1/2 cup all-purpose flour
3/4 teaspoon Kosher salt
1/4 teaspoon black pepper
About 1 1/2 cup canola oil

Steps:

  • In a large mixing bowl, mix together the cold mashed potatoes and the egg. Make sure the egg is evenly distributed through the potatoes.
  • Add the grated onion, flour, salt, and pepper and use a fork to gently mix in the ingredients.
  • Add enough oil to a large fry pan so that it is approximately 1/2" deep and place over medium heat. Allow the oil to come to temperature, about 350°F.
  • Scoop scant 1/2 cups of the potato mixture and gently drop them into the hot oil. Do not overcrowd the pan -- cook no more than 3-4 patties at a time. Gently, flatten each mound into a patty shape with a spatula.
  • Fry for about 2 1/2 to 3 minutes on the first side, until golden brown. Then, slide the spatula under the patty and turn it over. You'll find enlisting a second utensil makes the flip a bit easier! Then, cook for another 2 to 2 1/2 minutes.
  • Transfer the cooked patty to a cooling rack placed over paper towels. Allow to cool slightly, serve, and enjoy!

Number Of Ingredients 8

4 tablespoons clarified unsalted butter
1 medium onion, thinly sliced
4 strips smoked bacon, cooked until crisp and then crumbled or diced
2 1/2 pounds red-skinned potatoes, peeled
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 tablespoon chopped fresh parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Meanwhile, put 1 tablespoon of clarified butter in a saute pan over medium heat. Add the sliced onion and saute until golden brown, about 10 minutes. Stir in the crumbled bacon. Set aside.
  • With the julienne blade of a mandoline or the large holes of a shredder/grater, shred the potatoes. By handfuls, squeeze any excess liquid from the shreds and transfer them to a mixing bowl. Add the remaining butter and the salt and pepper and mix well.
  • Heat a 10-inch nonstick ovenproof skillet over medium heat. Add the olive oil. Squeezing away any liquid that has accumulated in the bowl, arrange half of the potatoes in an even layer. Spread the sauteed onion over the potatoes, and then top with the remaining potatoes in an even layer. Saute over medium heat until the underside of the potatoes are golden brown, 10 to 15 minutes.
  • To flip the cake, slide it out of the skillet browned side down onto a large plate, then invert the skillet over the plate and flip both together to return the cake to the skillet browned side up.
  • Put the skillet in the oven and bake until the cake is cooked through, about 10 minutes more. The potatoes should feel tender when the cake is pierced with a skewer or a sharp knife tip. With a spatula, lift 1 side of the cake slightly to check if the underside is well browned. If not, put the skillet on top of the stove over medium-high heat and cook briefly to brown the underside.
  • Slide the potato cake onto a serving platter. Garnish with parsley and, with a sharp knife, cut it into 6 wedges. Serve immediately.

Some people call these potato pancakes but here in Tennessee, my family always called them potato patties. This is the way my mother alway used up the left over creamed potatoes. Number of servings depends on the amount of potatoes you have.

  • Drop by tablespoon into hot oil and fry until crispy and golden brown.

Try this for breakfast: creamy mashed potato, with tangy Sauerkraut and smoky bacon in a pattie! Adapted from a recipe on the Simply Great Recipes website. The original recipe is obviously an Edgell recipe and listed in the ingredients 1 cup (100g) Edgell Instant Mash. Zaar would not accept this as an ingredient, so I have replaced it with 2 cups of mashed potato. If you do track down - or regularly use - Edgell Instant Mash, the step now removed from the instructions is "In a medium bowl combine the Edgell Instant Mash and 1 1/4 cups of boiling water". To use canned instant mash would obviously be a time-saver! Depending on whether cream or milk has already been added to the mashed potato, you may like to add some in step 2.

1 teaspoon oil
3 slices bacon, chopped
1 onion, finely minced
2 cups mashed potatoes
1/2 tablespoon sour cream (your mashed potatoes may already be adequately creamy) (optional)
410 g edgell sauerkraut, well drained
1 egg, lightly beaten
1 teaspoon brown sugar, to taste
1 teaspoon caraway seed
fresh ground pepper, to taste
salt, to taste (depends on how much salt has already been added to the potato and sauerkraut)
2 tablespoons oil, for cooking

Steps:

  • Heat 1 teaspoon of oil in a large (preferably non-stick) pan, add the bacon and cook for about a minute, then add the onions and cook for another minute, or until the onion is just beginning to soften. Put the pan aside for use later in cooking the patties.
  • In a medium-to-large bowl, combine the mashed potato, (optional) sour cream, the well-drained Edgell Sauerkraut, the egg, the cooked onion and bacon, the brown sugar, the caraway seeds and freshly ground black pepper, and (if necessary) salt, and mix well to combine all the ingredients.
  • Shape the mixture into 1/2 cup patties. Heat 2 tablespoons of oil in the pan used for cooking the bacon and onions, add the patties and cook for 2-3 minutes on each side or until golden brown.
  • Serve as part of a "big breakfast" or with barbecued sausages.
  • TIP: Chopped fresh herbs such as parsley or thyme can be added in step 2.

¼ teaspoon salt
1 tablespoon vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, egg, flour, and salt together in a bowl.
  • Heat a thin layer of vegetable oil in a frying pan. Drop large spoonfuls of the potato mixture into the frying pan. Flatten into a patties as you flip; cook until browned on both sides, 6 to 7 minutes per cake. Repeat with remaining potato mixture.

Steps:

  • Mash the potatoes (make sure there are no lumps).
  • Sprinkle with salt and drizzle with the butter.
  • Knead in enough flour to make a pliable dough (usually 3/4 cup is enough).
  • Roll out to about 1/2" thick and cut into round patties about 4"across.
  • Heat a non stick skillet and brown on each side 3-4 minutes or until golden brown.
