LIFE-CHANGING CRISPY FRIED PIZZAS
Crispy fried pizzas that are light, airy, and the perfect combination of crispy/chewy. It is the ABSOLUTE BEST way to make amazing, restaurant-level pizza at home!

Steps:
- Make the pizza dough according to package directions. Let the dough rise (for DeLallo pizza dough, the rise time is 45 minutes).
- Divide the pizza dough into 6 sections. Roll each into a ball and flatten into a pizza shape (mine were about 6-8 inches in diameter and about 1/2 inch thick around the outside).
- Heat a large cast iron skillet with oil (about 1 inch deep). Turn the heat to medium/low. Test the oil by dropping a speck of water in it - when it sizzles or bubbles, then the oil is ready.
- Working one at a time, gently place the pizzas into the oil and fry for 30 seconds to 1 minute until light golden brown. Flip with tongs and repeat on the other side. Transfer to a paper towel lined pan to cool.
- Preheat the oven to 450 degrees. Spread each pizza with sauce, cheese, and any other toppings you want. Bake for 5-10 minutes or until the cheese is melted. Top with fresh basil, pesto, or anything else you want and serve warm. And then enjoy those puffy, crispy, personal-pan-sized bites of pizza crust! YUMMMMM.

EASY FRIDAY NIGHT PIZZA
We love to make pizza every Friday night for our family movie night! I wanted to make the process as quick as I could and this recipe does just that. This is a no rise recipe so you can whip it up fast and throw it in the oven! Everyone raves about this low cost recipe!

Steps:
- 1. Combine 2 C. flour and all other ingredients in a KitchedAid mixer with bread hook attatchment. Mix well, adding enough flour to make a soft dough. Total mixing time should be 5 minutes. Cover and let rest 10 minutes.
- 2. Roll dough out on a floured surface in a circle about 1/2 inch larger than your pizza pan. You can make it as thin or thick as you want. Place on your greased pizza pan, add toppings and bake at 400 degrees for 10 min. (thin crust) up to 20 min. (thick crust). Family pizza night is on!
CRISPY DEEP-FRIED PIZZA
Steps:
- Preheat the oil to 365 degrees F. A deep-fryer is best, but if using a stove top method, fill a cast iron Dutch oven or heavy chicken fryer with oil about 4 inches deep.
- Roll dough out and cut it in half. Stir the oregano and basil into the pizza sauce. Slice the pepperoni. Spread half of the pizza sauce on half of each side, of the dough, add the cheese and pepperoni, distributing evenly. Apply a thin line of the water to the edge of the dough and fold each over onto itself and press to seal.
- Check the oil temperature and carefully add the pizza pockets. Cook for 2 minutes, turn over and cook for 1 minute more. Remove to a paper towel lined plate. Transfer the pizza to serving plates and garnish with remaining pizza sauce, Parmesan and fresh basil leaves.
- Combine all the dry ingredients in bowl of food processor or stand mixer. Or if by hand, combine in a medium bowl. Add the warm water to small glass bowl. Sprinkle the yeast over and let it sit for 10 to 15 minutes. Add oil and yeast mixture to dry ingredients and depending on method using, combine until a dough ball forms. For food processor, pulse on dough setting until dough is smooth and elastic. For stand mixer, slow speed until dough is smooth and elastic. For hand method, knead on lightly floured surface until smooth and elastic. Form the dough into a ball. Lightly oil a large bowl, add the dough ball to it, cover tightly with plastic wrap or a well-floured tea towel, and set in a warm place or a 100 degree F oven until doubled, about 1 hour.
- Punch down, and let rest for 5 minutes. Divide the dough in half for 2 large pizzas or into 4 equal pieces for calzones or small individual pizzas. Roll the dough into 1/4-inch thick rounds. Cooks Note: Can be made ahead and also freezes well.
FRIDAY PIZZA
Steps:
- Preheat oven with a pizza stone to 350 degrees F.
- Roll out a piece of dough flat and thin, and large enough to cover handle of peel and complete the half circle of the peel. Brush parts of dough that will cover the handle with beaten egg. Once the dough is firm, cut the dough to complete the circle. Let dough rest for 1 hour.
- Combine remaining ingredients in a bowl. Mix well by hand. Put mixture on top of pizza. Bake pizza on pizza stone until cooked through, about 15 minutes.
PIZZA FRITTA - ITALIAN FRIED PIZZA

- Heat up the passata in a small saucepan along with the garlic and olive oil. Simmer for a few minutes for the flavours to infuse, then switch off the heat. Note: Skip this step if you want to use plain passata.
- Sprinkle flour over a clean work surface and your fingers, then portion out pizza dough into pieces roughly the size of your fist. Flatten and stretch the dough out into rough circles around 1 cm / 0.4 inch thick and 10-15 cm / 4-6 inch wide.
- Pour vegetable oil into a small frying pan until it's just covering the bottom of the pan by about 0.5 cm / 0.2 inch. Heat through. Test with a wooden chopstick or toothpick and when bubbles form on the tip, it's ready to start frying.
- Stretch each piece of dough out again just before cooking so it cooks evenly. Fry each piece separately for 1 minute per side until golden brown and puffy. Drain on paper towel.
- Top fried dough with quick pizza sauce or passata, mozzarella / bocconcini and fresh basil leaves or your chosen pizza toppings. Garnish with freshly grated parmesan.

DAD'S FRIDAY NIGHT PIZZA
This is the recipe my dad uses for "Pizza and Movie Night" every Friday, a tradition started when my dad was a food service officer on a submarine and they would make pizza every Friday night for the crew. Add any toppings you like. Be creative!

Steps:
- Combine flour, sugar, and yeast in a large bowl. Add warm water and olive oil; stir with a wooden spoon to combine well.
- Cover with a clean dishtowel and/or set in a warm place to let rise about 20 minutes.
- When risen, transfer the dough to a floured surface. Flour your hands and the dough before kneading a couple of times.
- With a pizza cutter, divide the dough into three pieces; set two pieces aside.
- Knead one pie again before shaping into a small, flat circle. Roll the dough out with a rolling pin, being careful to retain a circle shape (if the dough starts sticking, try flouring the rolling pin as well).
- Carefully place the dough in a 12-inch pizza pan, trimming with a pizza cutter if needed.
- Repeat steps 5-6 for the other two pieces of dough.
- Combine the sauce ingredients in a small bowl. Spread evenly on each pizza with the back of a spoon.
- Sprinkle the shredded cheese on each pizza, along with any desired toppings.
- Bake each pizza at 425 degrees F until the cheese starts to brown on the edges.
- Let cool a bit before slicing and serving.
- Try using any leftover ingredients to make a miniature pizza.
