APPLEBERRY-PEACH STRUDEL-STYLE PASTRY



Appleberry-Peach Strudel-Style Pastry image

4 tablespoons butter
2 Granny Smith apples peeled, cored, and cut into 1/4-inch thick wedges then crosswise into 1/4-inch pieces, tossed with the juice of the lemon ingredient above
1 fresh lemon, zest grated and reserved, and juice reserved
2 ripe peaches, peeled, pit removed and cut into 1/4-inch thick wedges then crosswise into 1/4-inch pieces
3/4 cup finely chopped walnuts
1/3 cup white raisins
2 teaspoons ground cinnamon
1/2 cup brown sugar
1/2 cup all-purpose flour
1 pint raspberries
2 sheets puff pastry dough (these are often sold in 17 or 18 ounce packages containing 2 9 or 10-inch square sheets of puff pastry)
8 tablespoons (1 stick or 1/2 cup) butter, melted
2 tablespoons sugar
2 tablespoons apricot jelly

Steps:

  • In a large skillet, melt the butter over medium heat and stir in apples. Saute for about 5 to 7 minutes until they begin to caramelize. Add lemon zest and juice, peaches, walnuts, and raisins and cinnamon and cook for about 5 more minutes. Stir in brown sugar and flour, remove from heat and gently fold in raspberries, and cool to room temperature.
  • Preheat oven to 350 degrees F.
  • While the fruit is cooking, roll puff pastry out on a floured surface. Spoon some of the fruit mixture onto the pastry and begin to roll up the pastry, brushing each fold of pastry with butter and sprinkling some of the sugar as you go. If you are using 2 sheets of puff pastry, you will be making 2 strudel "rolls." Brush each roll with apricot jelly, place on a baking sheet and bake until golden brown, about 40 minutes. Let cool completely and serve. (This is best served on the day it is made.)

There are two great things about this summer slab pie: It serves a big crowd and you don't have to roll out the dough. We opted for a press-in dough (reminiscent of shortbread), which is super easy to make and saves lots of time. For something a little different, substitute pecans or skinned hazelnuts for the almonds in the streusel topping.

2 sticks (1 cup) unsalted butter, at room temperature and cut into small pieces, plus more for greasing the baking sheet
3 cups all-purpose flour
2/3 cup confectioners' sugar
1/2 teaspoon kosher salt
3 pounds peaches (about 6 peaches), cut into 1/2-inch wedges
1 1/2 cups firmly packed light brown sugar
Juice of 1 lemon
3 tablespoons cornstarch
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
3/4 cup all-purpose flour
1/2 cup sliced skin-on almonds
1/2 cup firmly packed light brown sugar
6 tablespoons unsalted butter, melted
1/4 teaspoon kosher salt

Steps:

  • Adjust a rack to the bottom third of the oven and preheat the oven to 375 degrees F. Grease the bottom and sides of a rimmed 10-by-15-inch baking sheet with butter.
  • For the dough: Combine the butter, flour, confectioners' sugar and salt in a food processor and process until the mixture comes together in a solid mass (this may take a few minutes). Drop pieces of the dough all over the prepared baking sheet. Use your fingers to press the dough evenly along the bottom and about 1/2 inch up the sides of the pan, filling any gaps. Set aside.
  • For the filling: Toss together the peaches, brown sugar, lemon juice, cornstarch, vanilla, cinnamon, salt and nutmeg in a large bowl until the cornstarch dissolves. Transfer the filling onto the crust and spread in an even layer. Bake for 30 minutes.
  • For the streusel: While the pie bakes, make the strussel topping by combining the flour, almonds, brown sugar, melted butter and salt in a small bowl until evenly moistened.
  • Remove the pie from the oven and sprinkle the streusel evenly over the filling. Return the pie to the oven and bake until the topping is golden brown and the filling is bubbly, 25 to 30 minutes more. (If the crust browns too quickly during baking, cover the pie loosely with foil.)
  • Let the pie cool. Serve warm or at room temperature.

16 - fresh peaches
- pinch of nutmeg
1/4 teaspoon(s) cinnamon
4 - graham crackers
4 - sheets filo dough
1/2 cup(s) sugar
2 tablespoon(s) melted butter
1 - whole egg

Steps:

  • Peel and core peaches, then cut into wedges and place in mixing bowl.
  • Add nutmeg 1/4 cup sugar, cinnamon, and ground graham cracker, toss well and set aside.
  • Place one sheet parchment paper on work area.
  • Layout filo dough on parchment paper one sheet at a time.
  • Drizzle a little melted butter and sugar between each sheet.
  • Repeat process four times to create four layers of dough.
  • Place peach filling towards front of dough. Roll with parchment paper as tight as possible. Cut air vents every 2 inches so that the strudel does not burst.
  • Brush with beaten egg and bake at 350 degrees until golden brown. Let set for 10 minutes before cutting.

1/2 cup whole almond, toasted
3/4 cup oatmeal
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
2 teaspoons cinnamon
3 medium peaches, peeled and cut into 1/4 inch dice
1/2 pint fresh raspberry
1/2 teaspoon vanilla extract
6 sheets phyllo dough
6 tablespoons melted butter

Steps:

  • Preheat oven to 375ºF.
  • Chop the almonds in a food processor.
  • Add the oatmeal and process until the texture resembles coarse cornmeal.
  • Add sugars and 1 teaspoon of the cinnamon.
  • Process just combine the ingredients.
  • Set aside.
  • Combine diced peaches, raspberries, remaining 1 teaspoon cinnamon and vanilla extract, and toss to mix well.
  • Place one sheet of phyllo on a clean counter.
  • Brush lightly with melted butter to cover the entire sheet.
  • Top with a second sheet of phyllo and brush with melted butter.
  • Sprinkle about one-fifth of the pecan mixture generously over the top.
  • Add another sheet of phyllo, butter it, and top with the pecan mixture, and keep the layers going to the last sheet of phyllo is used.
  • Sprinkle the remaining pecan mixture over the top of the filo dough.
  • Spread the fruit mixture in a log down one of the long sides of the phyllo sheets, leaving a 1-inch border on each end.
  • Starting with the long end, roll the phyllo and fruit into a log, tucking the ends under so that the fruit is completely enclosed.
  • Cut a piece of baking parchment big enough to fit the strudel.
  • Place the strudel seam side down on a baking pan lined with the parchment.
  • Brush the tops and sides of strudel with remaining melted butter.
  • Make shallow cuts with a serrated knife along the top of the strudel, where you'll want to cut it after it is baked.
  • Bake in a preheated 375ºF oven for 25 to 30 minutes.
  • Serve warm or cold, dusted with powdered sugar and topped with ice cream or whipped cream.

Steps:

  • Heat the oven to 400°F Beat the egg and water in a small bowl with a fork. Stir the peaches, brown sugar, flour, pecans and vanilla extract in a large bowl.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14x12-inch rectangle. Spoon the peach mixture lengthwise down the center of the pastry. Cut slits 1 inch apart from the 2 sides of the pastry rectangle to within 1/2 inch of the peach mixture. Starting at one end, fold the pastry strips over the peach mixture, alternating sides, to cover the peach mixture. Brush the pastry with the egg mixture. Sprinkle with the coarse sugar. Place the pastry onto a baking sheet.
  • Bake for 25 minutes or until the pastry is golden brown. Let the pastry cool on the baking sheet on a wire rack for 20 minutes.
