In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

3 tablespoons milk

Steps:

  • In a large bowl, combine the peaches, sugar, 1 tablespoon of biscuit mix and cinnamon. Transfer to a greased shallow 1-1/2-qt. baking dish. , In another bowl, combine brown sugar and remaining biscuit mix. Cut in butter until crumbly. BISCUIT CINNAMON ROLLS:
1 1/2 c all purpose flour
1 Tbsp brown sugar, firmly packed
2 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
6 Tbsp cold butter
1/2 c milk
3 Tbsp melted butter
CINNAMON FILLING:
1 c chopped walnuts
1 tsp cinnamon
1/3 c brown sugar, firmly packed
FRUIT:
1 c brown sugar, firmly packed
2 Tbsp cornstarch
1 Tbsp lemon juice
1 c water
9 c peeled, sliced nectarines (or peaches)

Steps:

  • 1. Preheat oven to 400 degrees. Mix together flour, 1 tablespoon brown sugar, baking powder, salt, and baking soda. Cut in cold butter with a fork just until mixture resembles coarse crumbs. Stir in milk just until blended. Do not over-mix. Knead dough on a floured board briefly- just 10 times or so. Pat dough out into a 12 inch square. Brush with melted butter. Set aside briefly.
  • 2. Stir together ingrdients for cinnamon filling. Spread evenly over buttered dough, leaving a 1/2 inch margin at the edges with no filling. Roll up like a jelly roll. Seal edges by pinching with your fingers. Set aside in refrigerator while making fruit.
  • 3. Make fruit by combining 1 cup brown sugar, cornstarch and lemon juice. Gradually stir in water. Stir until blended well. Add nectarines or peaches. In a large saucepan bring this mixtue to a boil and cook, stirring, until mixture thickens (about 3-5 minutes). Pour into a buttered 9 by 13 inch baking pan.
  • 4. Remove dough from refrigerator. With a sharp knife cut biscuit dough into 12 equal slices or biscuits. Place on top of nectarines. Bake uncovered for 20-25 minutes or until biscuits are nicely browned and fruit is bubbly. Great served warm with ice cream.

FILLING
2 c fresh sliced peaches
2 c fresh sliced nectarines
1 c sugar
1/8 tsp fresh ground nutmeg
1/4 tsp cinnamon
1 tsp vanilla extract
COBBLER MIXTURE
3/4 c flour
1 c sugar
2 tsp baking powder
1/2 tsp salt
3/4 c milk
1 stick butter, melted

Steps:

  • 1. Mix sliced peaches and sliced nectarines with 1 cup of the sugar, cinnamon, and nutmeg, then set this bowl aside.
  • 2. Preheat oven to 350. Put the oleo/butter in a 13x9 inch baking dish and melt it in the oven.
  • 3. Stir up remaining cup of sugar, flour, baking powder, salt, and milk and pour this batter over the melted oleo/butter, but DO NOT STIR.
  • 4. Put the 1st bowl of sugared sliced peaches and nectarines on the top of the batter, but DO NOT STIR!
  • 5. Bake for an 1 hour 10 min at 350. The batter will rise to the top and the top will be CRISP and BROWN.
  • 6. Serve with vanilla ice cream and enjoy!!!
