Hello, My daughter lives in the UK Cornwall Anyway we love spicy foods and this is a wonderful salsa recipe. Make it as hot or as mild as you want the flavor will still be wonderful. It can be doubled or tripled or whatever. This recipe will feed 4 adults a snack. Let me know what you think.

2 large tomatoes, seeded (don't have to) and diced
1/2 small sweet onion, finely chopped (like Texas sweet or red)
1 -3 jalapeno, finely chopped
2 tablespoons cilantro, chopped
1 clove garlic, finely chopped
2 tablespoons lime juice, fresh squeezed
1 teaspoon olive oil
3/4 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon black pepper

Steps:

  • Combine all the ingredients and chill for 2 hours before serving with chips.
  • The Cilantro is very important to this dish.

28 oz can whole plum tomatoes (including juice)
1 small onion ((see note 1))
3 cloves garlic
1 tsp ground cumin
1/2 tsp ground coriander
1 1/2 tsp salt
2 tsp granulated sugar
3 tbsp lime juice
1 cup cilantro (tightly packed)

Steps:

  • Pour the canned tomatoes and their juice into a food processor (or blender).
  • Peel and roughly chop the onion then add it to the tomatoes
  • Peel the garlic and add them to the processor
  • Add the spices, salt, sugar and lime juice. Then add the cilantro to the top.
  • Pulse chop your salsa until you have the desired consistency.
  • Transfer the salsa to an airtight container and refrigerate for at least 3 hours and up to 4 days.

1/2 medium white onion
1 jalapeño pepper (seeded)
1 - 2 cloves garlic
3 cups cherry tomatoes
1/2 cup loosely packed fresh Cilantro leaves (optional)
1/2 large lime
1/2 teaspoon sea salt
1/4 teaspoon coarse ground black pepper

Steps:

  • Roughly chop the onion and add to the bowl of a food processor or mini chopper along with the jalapeño pepper, and garlic cloves. Pulse until the contents are finely diced.
  • Add the cherry tomatoes and pulse until the salsa is the consistency you desire - I like mine a bit chunky.
  • If using, add the cilantro and pulse one or two more times.
  • Strain the salsa through a mesh strainer to remove the excess juices.
  • Add the salsa to a bowl and add the lime, salt, and black pepper. Taste and adjust the amount of lime and salt to your liking.
  • Serve immediately (or chill first if you prefer) with tortilla chips.
