Herbed Ricotta and Tomato Crostini image

Enter these Herbed Ricotta and Tomato Crostini. They take less than 10 minutes to make. Probably more along the lines of 5 minutes.

1 cup of Whole Milk Ricotta Cheese
Fresh Basil, minced
Fresh Parsley, minced
1/2 teaspoon lemon juice
1 1/2 - 2 cups Grape Tomatoes, sliced in half
1 1/2 teaspoons olive oil
Salt and Pepper, to taste
1/2 teaspoon white balsamic vinegar
Fresh Parmesan Cheese, grated
1 loaf Whole Grain Artisan Bread, sliced

Steps:

  • In a medium bowl, combine the ricotta cheese, fresh basil, fresh parsley, lemon oil or lemon juice. Stir until well mixed. Set aside.
  • In a small bowl, combine the grape tomatoes, olive oil, balsamic vinegar, and salt and/or pepper to taste. Set aside.
  • Meanwhile, toast the whole grain bread. After toasting, spread the tops with the ricotta mixture and spoon the tomato mixture on top. Sprinkle each slice with freshly grated parmesan cheese. Enjoy immediately!

1/4 cup olive oil
2 garlic cloves, pressed
1 (8.5-oz.) French bread baguette, cut into 1/4-inch-thick slices
3 Tbsp. fresh lemon juice
2 Tbsp. olive oil
1/4 tsp. salt
1/8 tsp. pepper
1 large tomato, finely chopped
3/4 cup finely chopped green onions
1/2 cup chopped fresh parsley
1 Tbsp. chopped fresh mint
1/3 cup feta cheese

Steps:

  • 1. Preheat oven to 175°. 2. Stir together olive oil and garlic; brush on 1 side of each bread slices. 3. Place bread slices, garlic sides up, on a baking sheet. Bake 10 to 12 minutes or until lightly toasted. 4. Whisk together lemon juice, olive oil, salt and pepper in a large bowl. 5. Add tomato, green onions,parsley and mint; gently toss to coat. 6. Top each bread slice with tomato mixture (about 2 rounded teaspoonfuls each). Sprinkle with cheese.

2 cups seedless grapes
2 tablespoons olive oil, divided, or as needed
2 teaspoons fresh thyme leaves
2 teaspoons chopped fresh oregano
salt and freshly ground black pepper to taste
1 crusty baguette, cut into 1/2-inch slices
½ cup ricotta cheese
1 teaspoon lemon zest
1 tablespoon balsamic glaze, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and set aside.
  • Toss grapes, 1 tablespoon olive oil, thyme, and oregano together in a medium bowl. Spread grapes out evenly on the prepared baking sheet and sprinkle with salt and pepper.
  • Bake in the preheated oven until grapes are tender and their skins start to wrinkle, 12 to 15 minutes.
  • Meanwhile, brush baguette slices lightly with remaining olive oil and place on another baking sheet.
  • Toast in the preheated oven until lightly browned, 3 to 4 minutes. Remove grape mixture and crostini from the oven and let cool slightly.
  • Mix ricotta cheese and lemon zest together in a bowl. Spread onto each crostini and top with grape mixture. Drizzle with balsamic glaze and serve.

1 baguette, sliced 1/4-inch thick
Extra-virgin olive oil
Salt and freshly ground black pepper
8 red pear tomatoes, halved
8 yellow pear tomatoes, halved
6 red cherry tomatoes, quartered
6 yellow cherry tomatoes, quartered
Green tomatoes, diced (or get some of the small heirloom tomatoes also)
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1 teaspoon honey
1 tablespoon fresh Mexican oregano, finely chopped
1/2 cup queso fresco

Steps:

  • Preheat a broiler, oven or grill to medium-high heat.
  • Toast the bread until lightly golden brown on both sides-the bread should be crisp but still tender on the inside, not brittle. Remove and drizzle with extra-virgin olive oil and season with salt.
  • Combine the tomatoes, olive oil, vinegar, honey and oregano in a medium bowl and season with salt and pepper. Gently toss in the queso fresco. Let the relish sit at room temperature for at least 15 minutes before serving. Top the bread with the relish and serve.

1 loaf French bread, such as ficelle or demi-baguette, thinly sliced on the diagonal
4 1/2 teaspoons extra-virgin olive oil, plus more for brushing
1 1/2 pounds assorted fresh garden and cherry tomatoes
1/2 teaspoon coarse salt
Pinch of freshly ground pepper
1/2 cup loosely packed fresh basil leaves, plus small sprigs for garnish
1/4 cup loosely packed fresh chervil
1 tablespoon red-wine vinegar

Steps:

  • Heat a grill or grill pan or preheat oven to 350 degrees. Place bread on grill or on a baking sheet in the oven; toast until golden on both sides, turning once. Transfer to a serving platter, and lightly brush one side of each slice with oil.
  • Roughly chop or slice tomatoes, and place in a large bowl. Add the salt and pepper, and toss to combine. Add basil and chervil, and drizzle with the oil and vinegar. Gently toss again. To serve, spoon tomato mixture over bread, and garnish with basil sprigs.
