- In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

- Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. (I use my hands.) Immediately add the lemon juice, hot pepper sauce, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.
THE BEST GUACAMOLE
Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

- Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
- Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
- Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.
EASY & FRESH GUACAMOLE
I like this recipe because it's sooo easy. I make this for parties and it's always finished quickly. The most difficult part of this recipe is opening the jar of salsa! :)

- Mash up avacados in a bowl, make them as smooth or as chunky as you like. (We like it fairly chunky).
- Peel and dice red onion.
- Chop up fresh Cilantro, stems and all.
- Dice jalepeno(s), de-seed if desired *Remember that the seeds give more heat* I leave them in because we love our mexican food spicy!
- Add everything into a large bowl and stir, add in salt and freshly ground black pepper to tase, add the juice of the two limes.
- Stir to combine, taste to see if it is hot, salty or sour enough, adjust to your taste, if you want more heat add the hot sauce -- once it is to your liking cover with plastic wrap and put in the fridge untill you are ready to serve.
- This goes well with my salsa recipe, and tastes great with tacos, burrito's, nachos, tortilla chips or even carrot and celery sticks.

GUACAMOLE - REAL AUTHENTIC MEXICAN "GUAC"
I am surprised how difficult it is to find a genuine guacamole recipe. No need for mayo or sour cream or all the other additives. This is the original, handed down generations, yet the most simple basic way to make Guacamole. - Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
- Add juice of one fresh lime immediately to prevent browning. Use a fork and mash to desired consistency.
- Add chopped onions, tomato, and cilantro. Stir gently to mix ingredients.
- Add juice of second lime and then salt to taste. Stir just slightly, until incorporated.
- Add jalapeño to taste.
- Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish.

- Peel the skin off the avocados. Slice it off the pit using a knife. Mash the avocados up in a bowl till smooth. I have seen many opinions on this subject here on zaar but here in Tx I have only seen guacamole served smooth and creamy, that's the only way I've had it. Plus you get more!
- Add garlic and salsa and mix together. Add salt and pepper to taste and combine.
- Add some lime juice if you prefer or if it will be sitting out for while. Enjoy!
