A Southern staple, this creamed corn recipe from Food Network will leave you feeling satisfied.

8 ears corn, husked
2 tablespoons sugar
1 tablespoons all-purpose flour
Salt and freshly ground black pepper
1 cup heavy cream
1/2 cup cold water
2 tablespoons bacon grease
1 tablespoons butter

Steps:

  • In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
  • Whisk together sugar, flour, and salt and pepper, to taste. Combine with corn. Add the heavy cream and water. Mix.
  • In a large skillet over medium heat, heat bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy, about 30 minutes.
  • Add the butter right before serving.

1 (10 -16 ounce) package frozen corn, cooked
water, for cooking corn
3 tablespoons butter
3 tablespoons flour
2 cups milk
2 -3 tablespoons sugar
salt and pepper (optional)

Steps:

  • Cook corn according to package directions; I use the microwave.
  • Melt butter in saucepan, stir in flour and blend well.
  • Add milk, about 1/2 cup at a time, and blend with whisk.
  • Cook over medium heat until thickened.
  • Stir in sugar, salt and pepper.
  • Add cooked, drained corn.
  • Hint: sometimes I use part milk, part cream.

9 ears sweet corn, husked (approx. 5 cups kernels), divided
1 cup half and half, divided
4 tbsps butter (preferably Kerrygold)
2 cups heavy cream
1/2 tsp cayenne pepper
salt to taste

Steps:

  • Carefully cut kernels from ears of sweet corn. Using the back of a knife, scrape the cob to extract the milk. Divide corn in two and three cup measurements.
  • Puree two cups corn in a food processor or blender with 1/2 a cup of half and half.
  • Melt butter in a nonstick saute pan (no smaller than 12") over medium high heat.
  • Add remaining corn kernels, pureed corn mixture, cream, remaining half and half, cayenne and salt to taste. Simmer until thickened, stirring often, about twenty minutes.

2 tablespoons olive oil
1 jalapeno pepper, seeded and diced
8 ears fresh corn, kernels cut from cobs
1/4 cup heavy cream
1 1/4 cups milk
3/4 teaspoon coarse salt
1/4 teaspoon fresh ground pepper

Steps:

  • Heat oil in a large saute pan over medium heat. Add jalapeno, and cook for 1 minute. Add corn; cook, stirring until kernels are tender but not browned, about 5 minutes. Remove from heat.
  • Transfer 1 1/2 c cooked corn to the bowl of a food processor fittel with the metal blade, and add cream and milk. Process until mixture is very smooth, about 3 minutes. Pass mixture through a fine sieve into a medium bowl, pressing down on the solids to sxtract as much liquid as possible.
  • Return strained liquid to saute pan, and stir to combine with remaining corn mixture. Cook over medium heat until liquid just comes to a simmer. Remove from heat, and season with salt and pepper. Serve hot.

6 ears corn
2 tablespoons unsalted butter
1 shallot, minced
1 teaspoon kosher salt, or more as needed
1/2 teaspoon freshly cracked black pepper, or more as needed
1/4 cup chive-onion cream cheese
1 tablespoon chopped fresh chives

Steps:

  • Cut the kernels off the corn and place in a bowl. Use the back of a knife or a butter knife to "milk" the cobs. (This means applying pressure to remove any of the juice left from the kernels being cut off.)
  • Melt the butter in a large nonstick skillet over medium heat. Add the shallot and cook until softened and translucent, 2 to 3 minutes. Pour in the corn and any liquid scraped from the cobs. Cook until the kernels are bright yellow, shiny and softened, 2 to 3 minutes. Sprinkle with the salt and pepper. Stir in the cream cheese until it is melted and combined into the corn, another 2 to 3 minutes. Taste for seasoning. Transfer the corn to a serving dish and sprinkle with the chives. Serve immediately.

2 cups water
2 tablespoons unsalted butter
1 cup heavy cream
2 teaspoons all-purpose flour
2 tablespoons chopped fresh chives

Steps:

  • Cut corn from cobs (reserve cobs) and put in a large saucepan with water, butter, 1 tsp salt, and 1/2 tsp pepper. Simmer over medium heat, uncovered, stirring occasionally, until tender, 5 to 7 minutes.
  • Meanwhile, scrape cobs in a small saucepan to extract "milk." Whisk in cream and flour. Boil over medium heat, whisking constantly, 1 minute. Carefully transfer cream mixture and 2 cups corn with some of cooking liquid to a blender and purée (use caution when blending hot liquids). Stir purée into corn and simmer 5 minutes. Stir in chives; season with salt and pepper.

4 ears corn on the cob (in husks)
1 cup milk
2 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 Tbsp. flour
1/4 lb. (4 oz.) Queso Blanco VELVEETA, cut into 1/2-inch cubes
1/4 tsp. black pepper
2 Tbsp. chopped fresh parsley

Steps:

  • Cut 1/2-inch piece off top of each ear of corn; discard. Snap off and discard any inedible ends of corn. Microwave 2 ears of corn on HIGH 3 min.; set aside. Repeat with remaining corn. Cool 5 min.
  • Remove husks and silk from corn; discard. Cut kernels off corn cobs. Place 1 cup corn kernels in blender. Add milk; blend until smooth.
  • Cook and stir bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Crumble; set aside. Discard all but 1 Tbsp. drippings from skillet.
  • Whisk flour into reserved drippings in skillet; cook and stir on medium heat 1 min. Gradually stir in puréed corn. Add VELVEETA and pepper; cook and stir 3 to 5 min. or until VELVEETA is completely melted and mixture is well blended. Add corn kernels; cook 2 to 3 min. or until heated through, stirring frequently. Remove from heat.
  • Stir in parsley; top with bacon.

1 (15.25 ounce) can whole kernel corn
¼ pound butter, softened
1 (8.5 ounce) package corn bread mix
1 (8 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C ). Put butter in 2 quart casserole dish, place in oven until melted.
  • Remove casserole dish and add creamed corn, kernel corn, corn muffin mix and sour cream. Mix well, bake uncovered approximately 30 minutes.
