SALMON CAKES

Salmon Cakes image

For an elegant main course, serve Ina Garten's Salmon Cakes, made with a mix of fresh veggies, capers and Old Bay, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     appetizer

Time 2h20m

Yield 5 servings

Number Of Ingredients 17

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

DINNER PARTY WORTHY FRESH ASPARAGUS

Dinner Party Worthy Fresh Asparagus image

There's nothing better than fresh asparagus & this is a very tasty way to serve it & impress for a company meal w/a chicken breast & green salad. Sadly fresh asparagus is rarely available here in Iceland & very expensive when I find it, so I don't fix this often like I did in the US. It can be prepared ahead, but don't refrigerate (read note below).

Provided by twissis

Categories     Vegetable

Time 55m

Yield 6 serving(s)

Number Of Ingredients 10

2 lbs fresh asparagus
6 hard-boiled eggs (sliced)
6 slices bacon (sliced crosswise & crisped)
1/4 cup butter
1/4 cup flour
2 cups milk
1 (3 ounce) package cream cheese
1 tablespoon mccormick lemon-pepper seasoning
6 tablespoons crushed croutons (cheese flavored)
chopped fresh chives (to garnish, or parsley)

Steps:

  • Wash asparagus well & trim stem-ends so spears are 8" long. Parboil spears till just barely fork-tender, but still fairly crisp. Quickly drain & cover w/cold water to stop cooking process. Drain again when cool & set aside.
  • Cut bacon slices crosswise, fry till crisp & drain well on paper towel.
  • Slice ea egg crosswise into 6 slices.
  • To assemble, pat asparagus spears dry w/paper towel & place equally in 6 groups in a 9"x13" baking dish. Top ea group w/1 sliced egg + equal amts of the crisped bacon pieces along their length & set aside.
  • Microwave cream cheese in sml dish to soften & warm slightly. Set aside.
  • Combine butter & flour over med-low heat to make a roux & gradually add milk. Use the flat a spatula to eliminate any lumps as you go.
  • Do not overcook sauce. When milk has been added & the sauce is smooth & thickening, remove from heat & incorporate the softened cream cheese & lemon pepper seasoning salt.
  • Spoon cream sauce over ea asparagus group, "dust" w/1 tbsp crushed croutons + sprinkle w/fresh chives or parsley.
  • Bake in hot oven (400F) just till bubbling & serve immediately. (Can also microwave till heated through, but do not refrigerate as this will lengthen the cooking time & potentially cause the sauce to separate).
  • NOTES: Sliced fresh mushrooms also work well as an addition -- For a 1-dish meal w/only a salad on the side, use this combo to stuff a well-pounded chicken breast & add mushrooms on top as a finishing touch.

OVEN-ROASTED ASPARAGUS

Oven-Roasted Asparagus image

Ree Drummond's oven-roasted asparagus recipe is one of the most ridiculously simple vegetable dishes in existence. Make it for the holidays, or a weeknight dinner.

Categories     Christmas     Thanksgiving     dinner     main dish     roasted     side dish     snack

Time 20m

Yield 4 servings

Number Of Ingredients 4

1 bunch asparagus
4 tbsp. (up to 5 tablespoons) olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Preheat oven to 425 degrees.
  • After you wash the asparagus thoroughly, stack a bunch together and lop off the tough/thick bottom an inch or so.
  • Spread out the asparagus in a single layer on a rimmed baking sheet. Pat it as dry as you can, as you don't want any water to "steam" the asparagus in the oven.
  • Begin by generously drizzling olive oil all over the asparagus and then sprinkle the asparagus generously with kosher salt and freshly ground black pepper.
  • Roast the asparagus for about ten minutes. The secret here is for the oven to be very hot so the asparagus can begin to brown on the outside without overcooking and getting too flimsy. You want the finished asparagus to still have a bite to it. Enjoy!

CRAB CAKES WITH AIOLI DIPPING SAUCE

Crab Cakes With Aioli Dipping Sauce image

Green onion potato chips instead of bread crumbs? Yes! They fry up to a nice, crunchy golden brown. Many brands are gluten free, which is critical for me. If you like crab cakes without a lot of filler, I recommend trying this recipe. I also highly recommend using a cast iron skillet for frying them. My husband deemed these the best crab cakes he'd ever eaten, and said he'd also love to try them on a potato roll with lettuce, tomato and the dipping sauce. A great, quick and easy side dish that also cooks in about 8-10 minutes is fresh asparagus sauteed in olive oil with chopped garlic, then drizzled with lemon juice and kosher salt just before it's done cooking.

Provided by adiadv1

Categories     Lunch/Snacks

Time 18m

Yield 4 patties, 2 serving(s)

Number Of Ingredients 15

8 ounces lump crabmeat, shells picked out
1 1/2 cups finely crushed green onion flavor potato chips (I use Mikesell's brand)
1/4 cup real mayonnaise (do not substitute)
1/2 teaspoon Old Bay Seasoning
1 dash white pepper
1/2 tablespoon worchestershire sauce
1/2 teaspoon dry mustard
unsalted butter (for frying, approx. 2-4 tablespoons)
1 lemon, cut in half (other half is for the dipping sauce)
1 fresh garlic clove
1/2 cup real mayonnaise
1 1/2 tablespoons horseradish mustard (I use Grey Poupon Horseradish Mustard)
1/2 teaspoon chili powder
2 tablespoons lemon juice
1 dash kosher salt (optional)

Steps:

  • In a mini chopper, finely crush the potato chips.
  • In a med. size bowl, mix together mayonnaise, Old Bay, white pepper, worcestershire sauce, and dry mustard until creamy.
  • Add the crab meat and mix evenly but gently so as not to break up the clumps of crab too much. Clumps of crab are a good thing!
  • Gently stir in 1/4 cup crushed potato chips.
  • Form the mixture into 4 patties and coat with remaining potato chip crumbs.
  • Melt about 2 tablespoons unsalted butter over medium heat. Add more butter if needed.
  • When the butter starts to sizzle, gently place the crab cakes into the pan (they're delicate).
  • Sprinkle with a little kosher salt if desired and cook for about 4 minutes.
  • Carefully flip the patties, and drizzle with lemon juice from 1/2 of the lemon. Cook for 4 minutes or until golden brown.
  • Dipping Sauce: Place all ingredients in mini chopper and push the button. That's it! Make it ahead of time if desired and refrigerate.

HOW TO COOK ASPARAGUS - BBC GOOD FOOD
Roasting asparagus is one of the easiest ways to cook this vegetable. Simply drizzle with olive oil and pop in the oven. Heat the oven to 200C/180C fan/gas 6. Snap any woody tips off the asparagus where they naturally break apart. Put on a roasting tray, drizzle with oil and season with salt and pepper. Roast for 12 mins until they are tender.
