Steps:
- In a large nonstick skillet, heat oil over medium-high heat. Add turkey; cook and stir 2 minutes. Add peppers, onion, garlic, salt, cumin, pepper and cayenne. Cook and stir 5 minutes or until turkey is no longer pink and peppers are crisp-tender. Stir in cilantro and lime juice; cook 1 minute longer. Serve in tortillas.

TURKEY FRITTATA

- Preheat the broiler.
- Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
- In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs
WET CHICKEN OR TURKEY BURRITOS
These are good with canned refried beans, but really excellent with Recipe #115728. It will not use the whole batch of beans, but there are many ways to serve those leftovers.

Steps:
- Remove skin from chicken or turkey if it's there. Shred into bite-sized pieces.
- If you are using canned refried beans, mix them with the taco sauce. You can use salsa too. The point is to loosen up the beans a little.
- Lay out tortillas. In each one, put some beans and chicken. Roll up in normal burrito fashion. As each tortilla is rolled up, put in a pan.
- When finished filling and rolling tortillas, pour enchilada sauce over them.
- Cover top with cheese.
- Bake at 350 for 30 minutes. Top with sour cream.

QUICK CHICKEN FAJITA BURRITOS
Always made with refried black beans, which is why I call them burritos. It just doesn't taste right with just meat and veggies. I also like to serve this dish with spinach instead of crunchy lettuce, because it's one of those things that you can easily sneak spinach into for the kids (as if they needed to grow any taller). There are much better recipes for fajitas out there that actually involve marinating or at least brining the chicken, which really does give it better flavor. This is the "quick and dirty" version. - Cook chicken in a large skillet with oil. Remove cooked chicken; cover and keep warm.
- Add sliced veggies to pan and cook over high heat 10 minutes or until tender and blackened.
- Stir in 3 tablespoons of fajita seasoning (recipe below), 1/4 cup water, and lime juice.
- Bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally.
- Meanwhile, heat beans until hot and shred the cheese. Briefly warm the tortillas.
- Spoon beans, meat and veggies into tortillas and top with cheese, spinach and sour cream, or have people assemble themselves.
- Combine last 10 ingredients in a lidded container - I used an old spice jar - and use 3 tablespoons to equal 1 packet of fajita or taco seasoning.

LEFTOVER TURKEY BURRITOS
I made this recipe while trying to figure out what to do with leftover holiday turkey. Very delicious! Prep time includes time to marinate.

- Combine turkey, tequila, lime juice, onion, garlic and 1 tbsp oil in a medium bowl.
- Add salt, garlic and onion powder, black and red pepper, cumin, and chili powder to turkey mixture and stir until everything is well coated.
- Cover and let sit in the refrigerator for no more than 1 hour.
- Heat 1 tbsp canola oil in skillet over medium heat.
- Wrap tortillas in foil and let heat in 300 degree oven for about 10 minutes.
- Add turkey mixture to skillet and cook until onions are soft and mixture is thoroughly heated through(about 10 minutes).
- Remove tortillas from the oven and sprinkle pepper-jack cheese down the middle of each tortilla.
- Add hot turkey filling on top of cheese, wrap, and serve!
FRESH AND EASY TURKEY FAJITA BURRITOS

- Heat 2 tbsp of the oil in a large frying pan and stir-fry the turkey breast for 3-4 minutes, until starting to brown, then remove with a slotted spoon to a plate.
- Increase the heat, add the remaining oil and stir-fry the onion and peppers for 5-6 minutes, stirring only occasionally so that they color quickly without softening much.
- Reduce the heat and return the turkey back to the pan. Stir in the beans and cooked rice. Season well. Squeeze over the filling with the lime and remove from heat.
- Spoon the filling onto the tortillas, roll them up and arrange them in a rectangular ovenproof dish. Pour the salsa over the tortillas and scatter them with jalapeno pepper slices and the cheese.
- Bake in a preheated 400 degree F oven for about 20 minutes, until hot and the cheese has melted. Serve immediately.
