LA ISLA'S STUFFED FRENCH TOAST

La Isla's Stuffed French Toast image

Provided by Food Network

Time 1h5m

Yield 4 servings

Number Of Ingredients 16

2 tablespoons soft unsalted butter, plus additional for sauteing
4 ounces cream cheese, room temperature
1 1/2 tablespoons guava marmalade, plus additional for drizzling (recommended: LaFe)
5 ounces diced strawberries
3 ounces guava shells (recommended: LaFe)
4 thick slices Pullman-style bread, refrigerated
Powdered sugar, for dusting
6 extra-large eggs
1 tablespoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons sugar
1 teaspoon vanilla extract
4 ounces whole milk
4 ounces evaporated milk
10 ounces corn cereal (recommended: Cornflakes)
6 ounces sliced almonds

Steps:

  • In a medium bowl, using a hand beater, beat the 2 tablespoons of butter, and the cream cheese until combined. Add the marmalade and mix until incorporated, then fold in the strawberries and guava shells, using a rubber scraper. Transfer the mixture to a pastry bag fitted with a large tip.
  • Make an incision (pocket) on the crust side of the 4 pieces of bread about 3/4 of the way through. The incision will allow you to stuff the pocket. Leave the slices with the incision, covered, at room temperature before stuffing. Gently stuff the room temperature slices with the filling. Refrigerate the stuffed slices with the pocket opening facing up for 20 to 30 minutes.
  • Preheat oven to 375 degrees F.
  • Egg batter:
  • Add all the ingredients to a medium shallow bowl and mix well.
  • French Toast:
  • Add the corn cereal and almonds to a sheet pan and crush together. Dip the bread slices in the egg batter and then into the cereal mixture.
  • Put a large skillet on medium-high heat and add 3 to 4 tablespoons butter. When the butter has melted add the stuffed bread slices and brown on 1 side, then flip and put the skillet in oven for 8 minutes. Remove the skillet from the oven and transfer the toast to a serving platter. Drizzle with guava marmalade and a dusting of powdered sugar before serving.

JEAN'S STUFFED FRENCH TOAST STRATA

Jean's Stuffed French Toast Strata image

We had this the morning after Christmas. This is another of my MIL's recipes. Gosh...her house smelled wonderful when this was baking. I haven't cooked this recipe myself, but my kids and DH want me to. The Apple Cider Syrup recipe is being posted and I will post it's recipe #. This tastes like it should be served with Cool Whip.

CREAM CHEESE-STUFFED FRENCH TOAST

Cream Cheese-Stuffed French Toast image

My husband clipped this one out of the newspaper(not sure which one) several years ago and made it for me on Mother's Day! What a delicious surprise!

Provided by lorirn0000

Categories     Brunch

Time 15m

Yield 6 serving(s)

Number Of Ingredients 17

1 large French baguette, preferably day-old (16-20 oz)
1 (8 ounce) package reduced-fat cream cheese
1/4 cup chopped pecans or 1/4 cup walnuts
dried cherries (optional) or cranberries (optional)
1 teaspoon vanilla extract
2 tablespoons pure maple syrup
4 eggs
1 cup reduced-fat milk
1/4 cup fat-free or regular half-and-half
1 pinch salt
1/4 teaspoon cinnamon
1 pinch nutmeg
2 teaspoons cannola oil
1 tablespoon butter
confectioners' sugar
sliced fresh berries
pure maple or favorite syrup

Steps:

  • The night before, slice the baguette into 1 to 1 1/2-inch thick slices; you should get at least 12. Make a small slit on the bottom side of each slice to make a deep pocket for stuffing. you can do this when ready to cook, but it's best to let the bread sit out overnight.
  • Just before cooking, in a small bowl, mix the cream cheese, nuts, dried fruit if using, vanilla extract and maple syrup. Evenly divide the cream cheese mixture, using a spoon to stuff it in each pocket.
  • In a large bowl, whisk the eggs, milk, half-and-half, salt, cinnamon and nutmeg.
  • When ready to cook, warm the oil and butter on a griddle or large skillet over medium-high heat.
  • Dip the stuffed baguette slices in the egg mixture for a few seconds so it coats evenly. Don't let them soak too long or they will become mushy. Transfer to the griddle and cook on each side until browned.
  • Remove from the griddle and place on a serving plate. Garnish with a dusting of confectioners' sugar and sliced berries. Serve with your favorite syrup.

STUFFED FRENCH TOAST II

Stuffed French Toast II image

This is a nice change from ordinary French toast. I make this more than the standard recipe. Although this is my family's favorite version, it is very versatile. You can substitute peanut butter for the cream cheese, use different jams or preserves, different extracts or spices - the options are practically limitless! Serve with maple syrup and sprinkle with powdered sugar.
