THE BEST FRENCH ONION SOUP

The Best French Onion Soup image

This bistro classic is deceptively easy to make. It just takes a little time and a few good ingredients. We found that yellow onions, also known as Spanish onions, work best for this recipe. They have a nice balance of sweetness and bitterness and caramelize perfectly. Just don't take them too dark -- a nice golden brown is perfect. Good beef broth also makes a big difference. If you can't make your own, look for a high-quality prepared variety.

Time 1h55m

Yield 8 servings

Number Of Ingredients 9

6 tablespoons unsalted butter
8 medium yellow onions, thinly sliced (see Cook's Note)
3 bay leaves
3 to 4 sprigs fresh thyme
Kosher salt and freshly ground black pepper
2 cups dry white wine
8 cups low-sodium beef broth
8 slices French-style baguette (about the size of the top of the soup crocks)
4 cups coarsely shredded Gruyere (about 2 pounds)

Steps:

  • Melt the butter in a very large Dutch oven or pot over medium heat. Add the onions, bay leaves, thyme, 1 teaspoon salt, and a few grinds black pepper. Cook, stirring occasionally, until the onions are very soft and light golden-brown, about 1 hour. (The onions will begin to stick to the bottom of the pan and turn brown after about 30 minutes; just keep scraping them up and stirring them into the rest of the onions. If they are browning to quickly, lower the heat.)
  • Add the wine to the pot, bring to a simmer and cook until it has almost completely evaporated, about 4 minutes. Add the beef broth and 1 cup of water, bring to a simmer and cook until the flavors come together and the soup is rich, about 45 minutes. Remove the bay leaves. Season with 1/2 teaspoon salt and a few grinds of black pepper. Keep the soup warm on a low burner or cool completely and refrigerate to reheat later. (The soup can be refrigerated for up to 2 days or frozen for up to 1 month.)
  • Preheat the broiler. Place four soup crocks on a rimmed baking sheet and fill them about 3/4 of the way with hot soup. Float a slice of baguette on top of each and cover with 1/2 cup Gruyere. Broil until the Gruyere is golden brown (don't be alarmed if some soup bubbles out), 2 to 3 minutes.

FRENCH ONION SOUP

Categories     appetizer

Time 2h45m

Yield 8 servings

Number Of Ingredients 11

4 large yellow onions
1/2 cup (1 stick) butter
1 generous cup dry white wine
4 cups (1 quart) low-sodium beef broth
4 cups (1 quart) low-sodium chicken broth
3 tablespoons fresh thyme leaves
4 to 5 dashes Worcestershire sauce
2 cloves garlic, minced
Several thick slices French bread or baguette
Olive oil, for drizzling
8 ounces Gruyere cheese, sliced thick

Steps:

  • For the soup: Preheat the oven to 400 degrees F. Slice the onions in half from root to tip, then slice them thin.
  • Melt the butter in a heavy ovenproof pot or Dutch oven over medium-low heat. Add the onions, stir to coat them in the butter and cook, covered, until translucent and soft, about 20 minutes.
  • Transfer the pot to the oven with the lid slightly ajar. Roast the onions for 1 hour, stirring twice to keep them from burning. (Some brown bits on the bottom of the pan are fine though.)
  • Return the pot to the stovetop over medium heat (keep the oven on) and pour in the wine. Stir, scraping the pan. Cook until the wine reduces, 5 minutes. Next, add the beef broth, chicken broth, thyme, Worcestershire sauce and garlic. Reduce the heat to low and let the soup simmer for 45 minutes.
  • For the croutons: Meanwhile, drizzle slices of French bread with olive oil and toast in the oven until golden. Set aside.
  • To serve, turn on the oven broiler. Ladle the soup into ovenproof bowls. Place 1 or 2 pieces of the croutons on top of each serving of soup, depending on the size of the bowl. Place a thick slice of cheese on top of each bowl, then place the bowls on a baking sheet and broil just long enough for the cheese to become melted, bubbly and slightly toasted.
  • Serve immediately.

FRENCH ONIONS ON A HALF SHELL

French Onions on a Half Shell image

They don't call me the Sassy Chef for nothing, This onion pie is so delicious, a taste teaser, almost as good as "french onion soup" andthis dish has already acquired many fans. Since I love bread and soup, why not pull the two together in a harmonious ensemble of flavors... crusted dough, onions, beef and cheese. When the cheese melts on top and the broth meets the cheese, it looks so gourmet, and you will feel very proud of yourself. It makes a nice dish for any occasion.

Categories     Vegetable

Time 45m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 7

2 -3 sweet onions, peeled, cut into rings, and cut in halves
1 pre-made refrigerater pie crust
1/4 cup butter
2 small beef bouillon cubes or 1 large beef bouillon cube
2 slices swiss gruyere cheese or 2 slices muenster cheese
1 egg white
1 deep dish pie plate

Steps:

  • Preheat oven to 425 degrees and grease your pie or tarte deep dish plate. .
  • In meantime of dough stick setting out at room temperature, slice onions into rings, then cut in half, so you should have long thin strips of onions, about 3-4" .
  • Back to the pie shell, place dough inside dish, fancy your sides, I like to pinch the sides etc, and give the shell a nice egg wash, not too much. Bake for about 15-20 minutes or until the shell is nice and golden brown, careful not to burn.
  • While the shell bakes, sautee onions in a frying pan or skillet alongside the butter and beef cubes. I gradually add the beef flavor cubes one at a time, depending on the flavor, (beef cubes are very salty so use to your descretion, two small is fine) The onions should take almost as long the pie shell, they are ready when the onions have begun to carmelize. Remove your shell from the oven, place sauteed hot onions inside the dish, top with two slices of cheese, and bake until cheese begins to melts, I allow brown spots to form to give it an authentic feel. You can also use shredded cheese to your preference.

FRENCH ONION SOUP

French Onion Soup image

Warm, cozy, and flavorful, this French onion soup is prepared with beef stock and caramelized onions. Top with croutons covered in melty Gruyere and Parmesan cheese.

Provided by Elise Bauer

Categories     Soup     Restaurant Favorite     Caramelized Onion     Onion     Soup

Time 1h20m

Yield 6

Number Of Ingredients 14

6 large red or yellow onions (about 3 pounds), peeled and thinly sliced root to stem (see How to Slice an Onion ), about 10 cups of sliced onions total
4 tablespoons extra virgin olive oil
2 tablespoons butter
1 teaspoon of sugar
Salt
2 cloves garlic, minced
8 cups of beef stock, chicken stock , or a combination of the two (traditionally the soup is made with beef stock)
1/2 cup of dry vermouth or dry white wine
2 bay leaves
1 tablespoon (loose) of fresh thyme (can also use a few sprigs of fresh thyme) OR 1/2 teaspoon dried thyme (more to taste)
1/2 teaspoon freshly ground black pepper
2 tablespoons brandy (optional)
8 slices French bread or baguette cut 1-inch thick
1 1/2 cups of grated Swiss Gruyere and a sprinkling of Parmesan

Steps:

  • Caramelize the onions: In a 5 to 6 quart thick-bottomed pot, heat 3 tablespoons of olive oil on medium heat. Add the onions and toss to coat with the olive oil. Cook the onions, stirring often, until they have softened, about 15 to 20 minutes. Increase the heat to medium high. Add the remaining tablespoon of olive oil and the butter and cook, stirring often, until the onions start to brown, about 15 more minutes. Sprinkle with sugar (to help with the caramelization) and 1 teaspoon of salt. Continue to cook until the onions are well browned, about 10 to 15 more minutes. Add the minced garlic and cook for a minute more.
  • Deglaze the pot with vermouth or wine: Add the wine or vermouth to the pot and scrape up the browned bits on the bottom and sides of the pot, deglazing the pot as you go.
  • Add the stock, bay leaves, and thyme: Add the stock, bay leaves, and thyme. Bring to a simmer, cover the pot and lower the heat to maintain a low simmer. Cook for about 30 minutes. Season to taste with more salt and add freshly ground black pepper. Discard the bay leaves. Add brandy if using.
  • Toast the French bread slices: While the soup is simmering, line a sheet pan with parchment paper or foil and preheat the oven to 450°F with a rack in the upper third of the oven. Brush both sides of the French bread or baguette slices lightly with olive oil (you'll end up using about a tablespoon and a half of olive oil for this). Put in the oven and toast until lightly browned, about 5 to 7 minutes. Remove from oven. Turn the toasts over and sprinkle with the grated Gruyere cheese and Parmesan. Return to oven when it's close to serving time and bake until the cheese is bubbly and lightly browned.
  • Serve: To serve, ladle soup into a bowl and transfer one cheesy toast onto the top of each bowl of soup. Alternatively, you can use individual oven-proof bowls or one large casserole dish. Ladle the soup into the bowls or casserole dish. Cover with the toast and sprinkle with cheese. Put into the broiler for 10 minutes at 350° F, or until the cheese bubbles and is slightly browned. FRENCH ONION BREAKFAST BREAD BOWL WITH BROCCOLI

French Onion Breakfast Bread Bowl with Broccoli image

This recipe is sponsored by Birds Eye®. Transform a humble loaf of bread into a shell filled with a delicious combination of caramelized onions, broccoli and eggs. Then top it off with tons of Gruyere and broil it until it's melty-just like everyone's favorite part of classic French onion soup! It's a total showstopper and the perfect holiday breakfast for the whole family.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 12

One 10-inch round loaf sourdough bread (about 1 3/4 pounds)
One 10.8-ounce bag frozen broccoli florets, such as Birds Eye® Steamfresh® Broccoli Florets
6 tablespoons unsalted butter
2 large onions, thinly sliced (about 1 pound)
2 large sprigs thyme
1 bay leaf
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
10 large eggs
1/2 cup heavy cream
1 pound Gruyere, grated (about 5 cups)

Steps:

  • Place a rack in the middle of the oven and preheat to 475 degrees F.
  • Slice off the top one-third of the bread with a serrated knife. Hollow out the loaf by cutting a circle around the inside of the bread, leaving a 1-inch border. Pull the soft bread out with your hands, making sure to leave about 1 inch intact at the bottom of the bowl as well. Tear some of the soft insides into large rustic croutons (you'll have about 1 1/2 cups). Reserve the remaining top and bread pieces for another use (such as breadcrumbs).
  • Place the bread bowl and croutons on a baking sheet. Spread 2 cups Gruyere inside the bread bowl, pressing the cheese into the sides and bottom to help it adhere. Bake until the cheese is melted and the croutons are golden, about 10 minutes. Set aside.
  • Cook the broccoli according to the package directions. Transfer to a colander to drain until cool, 5 minutes. Coarsely chop the broccoli and set aside.
  • Melt 3 tablespoons butter in a large nonstick skillet over medium heat. Add the onions, thyme, bay leaf, sugar, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are soft and golden brown, 16 to 20 minutes. (If the onions begin to darken too quickly, reduce the heat to low, add 1 teaspoon water and use a wooden spoon to scrape up any brown bits that have formed on the bottom of the pan.)
  • Remove and discard the thyme sprigs and bay leaf from the onions. Stir in the balsamic vinegar and cook until it is fully reduced and the pan is dry, about 2 minutes. Transfer the onions to a bowl and set aside. Rinse and wipe out the skillet.
  • Melt the remaining 3 tablespoons butter in the same skillet over medium heat.
  • Meanwhile, beat the eggs, heavy cream, 1 teaspoon salt and a few grinds of pepper in a medium bowl. Add the egg mixture to the skillet and cook, moving the eggs back and forth with a rubber spatula as they begin to set, until just cooked through and slightly creamy, 5 to 7 minutes. Remove from the heat and fold in the broccoli.
  • Spoon the mixture into the bread bowl, firmly pressing it down with the back of the spoon (you should have about 7 cups of filling). Top with the caramelized onions, then the croutons. Mound the remaining 3 cups Gruyere on top and bake until the cheese is melted and golden around the edges, about 20 minutes. Let cool on the baking sheet for 5 minutes before slicing into wedges.
