WARM FRENCH LENTILS

2 tablespoons plus 1/4 cup good olive oil
1 leek, white and light green parts, sliced 1/4-inch thick
2 carrots, scrubbed and 1/2-inch diced
1 teaspoon minced garlic
1 cup French green Le Puy lentils
1 whole onion, peeled and stuck with 6 whole cloves
1 white turnip, cut in half
1 teaspoon unsalted butter
4 teaspoons Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Heat the 2 tablespoons of olive oil in a medium saute pan, add the leek and carrots, and cook over medium heat for 5 minutes. Add the garlic and cook for 1 more minute and set aside.
  • Meanwhile, place the lentils, 4 cups of water, the onion with the cloves, and the turnip in a large saucepan and bring to a boil. Lower the heat and simmer uncovered for 20 minutes, or until the lentils are almost tender. Remove and discard the onion and turnip and drain the lentils. Place them in a medium bowl with the leek and carrots, and add the butter.
  • Meanwhile, whisk together the 1/4 cup of olive oil, the mustard, vinegar, salt, and pepper. Add to the lentils, stir well, and allow the lentils to cool until just warm, about 15 minutes. Sprinkle with salt and pepper and serve. The longer the lentils sit, the more salt and pepper you'll want to add.

This is a classic French way to cook lentils, and it's very easy. Aromatics are sautéed and then simmered with French lentils, also known as Le Puy lentils, for 20 to 25 minutes. It is an easy side dish (shown here with cod baked with prosciutto), redolent of a Provencal feast.

1 onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
1 carrot, peeled and finely chopped
2 1/4 cups French lentils
1 teaspoon dried or fresh thyme
3 bay leaves
1 tablespoon kosher salt

Steps:

  • Place a large saucepan over medium heat and add oil. When hot, add chopped vegetables and sauté until softened, 5 to 10 minutes.
  • Add 6 cups water, lentils, thyme, bay leaves and salt. Bring to a boil, then reduce to a fast simmer.
  • Simmer lentils until they are tender and have absorbed most of the water, 20 to 25 minutes. If necessary, drain any excess water after lentils have cooked. Serve immediately, or allow them to cool and reheat later.

1 cup lentils, du puy
1 clove
1 small onion, peeled
1 medium carrot, trimmed, peeled, and cut into 4 to 6 pieces
1 celery rib, trimmed, peeled, and cut into 4 to 6 pieces
1 garlic clove, smashed, peeled, and germ removed
1 bay leaf
3 1/2 cups vegetable broth or 3 1/2 cups water
1 tablespoon cognac (optional)
1 shallot, finely chopped, rinsed, and patted dry (optional)
freshly ground pepper

Steps:

  • Pick over the lentils, removing any stones. Rinse under cold water and drain well.
  • Put lentils in a saucepan. Cover with water. Bring to a boil and cook 2 minutes. Pour into strainer and rinse with cold water. Rinse saucepan as well and return lentils to pan.
  • Push the clove into the onion and place onion in saucepan. Add carrot, celery, garlic, bay leaf and stock. Bring to a boil, then reduce to a simmer and cook 25-30 minutes until almost tender. Skim off any solids that rise up while cooking. Season with salt and pepper and cook an additional 5-10 minutes until fully tender. Add Cognac, if using.
  • Drain the lentils (save the cooking liquid if you're planning to reheat them later). Discard the garlic, bay leaf and clove. Dice the vegetables and stir back into the lentils along with the shallot, if using.
  • Serve hot or at room temperature. Store lentils and cooking liquid separately in airtight containers in refrigerator up to 3 days; reheat lentils in cooking liquid in a covered saucepan over low heat.

1 tbsp olive oil
1 onion (finely chopped)
2 cloves garlic (crushed)
3 sticks celery (finely chopped)
1 large carrot (finely chopped)
1 sprig fresh rosemary (finely chopped (about 2 tbsp))
1 cup puy or green lentils ((dry/uncooked))
1 litre vegetable stock
2 bay leaves
Salt and pepper

Steps:

  • Heat olive oil in a deep saucepan. Add onion, celery and carrot. Cook over medium heat for 5-10 minutes until everything is tender and starting to colour. Add garlic and rosemary and cook for another few minutes until fragrant.
  • Add lentils, vegetable stock and bay leaves. Simmer over a low heat for about 20-25 minutes, until the lentils are tender but still holding their shape. Keep an eye on them during cooking, stirring occasionally, and add a little more water if necessary to prevent the lentils from drying out or sticking to the pan. You want to end up with lentils and vegetables that are tender, with a little liquid surrounding them - but you don't want soup.
  • Discard bay leaves before serving. Adjust seasoning with salt and pepper to your taste.

French green lentils, or lentils du Puy make a great main dish salad with the smoky taste of bacon. I've been making this forever and have no idea where I got the recipe. The amounts are estimated, but more or less what I use. (Prep/cooking is estimated too, but it takes less than an hour...) This is one of my favorite summer dinners with some good garlic bread and a chilled glass of wine. When I have great tomatoes, I slice them and serve the salad on top. It makes a nice side dish and is also very portable for picnics and beach dinners.

8 slices bacon
1 small onion, large dice
1/2 cup carrot, diced
6 cups water
1 lb lentils, du puy rinsed, drained
4 sprigs fresh thyme
1/2 cup olive oil
1/4 cup red wine vinegar or 1/4 cup sherry wine vinegar
3 tablespoons Dijon mustard
1/2 cup red onion, chopped
1/2 cup celery, chopped
1/2 cup fresh flat-leaf parsley, chopped

Steps:

  • Cook 6 slices bacon in heavy large saucepan over medium heat until brown and crisp. Transfer bacon to paper towels, crumble. Drain off all but about three tablespoons of bacon fat.Add onion to drippings; sauté until tender, about 10 minutes.
  • Add 6 cups water, lentils, remaining 2 slices of bacon, and thyme to the bacon fat and onion. Bring to boil, then cover and reduce to a simmer. After about 20 minutes, add carrots and continue to cook until lentils are tender, about 10 more minutes.
  • Drain lentils, let cool.
  • Whisk oil, red wine vinegar, and Dijon mustard in bowl to blend.
  • Add lentils, red onion, celery, bacon, and parsley. Toss to combine. Season to taste with salt and pepper and serve at room temperature or slightly chilled.

Simple Braised French Lentils - nourishing and comforting and a delicious healthy side dish that pairs well with so many things! Leftovers can be frozen, or repurposed into breakfast or into a salad!

2 tablespoons olive oil
1 onion, diced ( or sub 1 large leek)
1 cup diced celery (or fennel bulb)
1 cup diced carrot ( or beet!)
3-4 garlic cloves, rough chopped
1 1/2 cups dry French Green Lentils (Le Puy, or small black lentils- beluga, caviar, etc. )
1/4 cup sherry wine, red wine, white wine, marsala wine (or skip it and add 1 teaspoon red wine vinegar at the end)
4 cups veggie or chicken stock ( or water and 1 bouillon cubes)
1 teaspoons salt
1/2 teaspoon mustard- whole grain or dijon (optional)
4-5 sprigs fresh thyme (or 1 teaspoon dried)
2 bay leaves

Steps:

  • Heat oil in a large saute pan over medium-high heat. Add onion, celery and carrots and stir 4-5 minutes, then turn heat down to medium. Cook 4-5 more minutes and add the garlic and lentils. Cook 2 minutes stirring.
  • Add the wine. Let this cook-off, about 2 minutes.
  • Pour in the stock, salt, and mustard and stir until combined and bring to a good simmer. Add the bay leaves and thyme sprigs, cover and gently simmer on low heat 25-30 minutes or until lentils are tender.
  • When the lentils are tender, uncover and cook off any extra liquid ( or feel free to drain). Remove the thyme sprigs, taste and adjust salt. A tiny little splash of red wine vinegar livens them up.
  • Leftovers can be frozen for later use, or refrigerated and made into a salad the next day- adding fresh veggies and a simple vinaigrette. Or use for breakfast, warmed on toast, with Sauteed Greens, a poached egg and an herby green sauce like gremolata or Leek oil. YUM. ????

  • Heat the oil and butter in the pressure cooker pot over medium heat until the butter stops foaming (Sauté mode in an electric pressure cooker). Add the leeks, carrots, celery, and garlic, then sprinkle with 1/2 teaspoon fine sea salt and the herbes de Provence. Sauté until the leeks soften and turn translucent, about 5 minutes.
  • Stir in the lentils, 6 cups of water, and 1 teaspoon fine sea salt. Scrape the bottom of the pot with a flat-edged wooden spoon to loosen any bits of onion that stuck to the pot. Lock the pressure cooker lid. Cook at high pressure for 10 minutes in an electric pressure cooker or for 8 minutes in a stovetop pressure cooker. Once the cooking time is done, let the pressure come down with a natural release, about 20 minutes more. (if you are in a hurry, quick release any remaining pressure after 15 minutes.)
  • Open the pressure cooker lid (away from you – the steam is hot). Stir in the pepper, then taste for seasoning – the lentils will need more salt. Add the salt, tasting as you go, until the flavor goes from washed out to full-bodied. (I usually add another teaspoon of fine sea salt.) Serve and enjoy!
