Time 1h30m

Number Of Ingredients 14

cooking-spray
5 tbsp butter, divided
8 oz refrigerated crescent-rolls
4 sprigs fresh thyme, divided
1 medium onion, thinly sliced
⅓ can grainy-mustard
1 tbsp worcestershire-sauce
½ lb deli roast-beef
freshly ground black-pepper
1 tbsp freshly chopped parsley
1 clove garlic, minced
1 can low-sodium beef-stock
9 slices provolone
kosher-salt

Steps:

  • Preheat oven to 350° and grease 9x13" baking sheet with cooking-spray. Put one unrolled may of crescents on baking-sheet & then pinch together seams.
  • Caramelize-onions: In a large-skillet over moderate heat, melt 2 tbsp butter. Add onion and 2 sprigs-thyme & season with pepper and salt. Cook, stirring occasionally, until onions start to soften and turn slightly gold. Keep on cooking, stirring occasionally, until onions are tender & caramelized, 20-25minutes.
  • Construct squares: Spread an even layer of mustard onto ready crescent, leaving a ½" boundary clear on all borders. Top with a layer of roast beef & also a layer of provolone. Top with caramelized-onions, then unroll remaining tube of crescent-rolls & place on top of onion layer. Pinch together seams to seal.
  • Melt 2 tbsp of butter & brush over top of dough, then sprinkle with salt and parsley. Bake until dough is golden and cooked through, about 35-45minutes. (If dough is browning too fast, cover with foil.) Let cool 15minutes before cutting to squares.
  • Melt remaining 1 tbsp butter in a medium-skillet over moderate heat. Stir in garlic & cook until aromatic. Add beef-stock, Worcestershire-sauce & remaining two sprigs thyme, stripped out of stem. Season with pepper and salt. Simmer for 10minutes until reduced slightly.
  • Serve squares together with au jus on the side for dipping.

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h40m

Yield 8 sandwiches

Number Of Ingredients 16

2 tablespoons kosher salt
3 tablespoons freshly ground black pepper
1 teaspoon ground oregano
1 teaspoon ground thyme
1 small boneless rib loin roast (4 to 5 pounds)
5 cloves garlic, minced
2 large onions, halved and sliced
1 packet French onion soup mix
1 can beef consomme
1 can beef stock
2 tablespoons dry sherry
2 tablespoons Worcestershire
1 tablespoon soy sauce
8 crusty deli rolls
Butter, softened, for toasting
8 slices provolone cheese, optional

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the salt, 2 tablespoons of the pepper, the oregano and thyme and rub into the outside of the beef. Place the beef on a rack on a roasting pan and roast it in the oven until medium-rare, 25 to 30 minutes (use a meat thermometer and monitor it till it's medium-rare). Remove the meat from the oven and place on a cutting board to rest.
  • Place the roasting pan on the burner on medium-high heat. Add the garlic and sliced onions to the drippings, stirring around to cook until slightly tender, about 5 minutes. Add the soup mix.
  • Pour in the consomme, stock, 1 cup water, the sherry, Worcestershire, soy sauce and the remaining 1 tablespoon pepper and bring to a boil. Reduce the heat and simmer for 1 hour. Pour through a fine mesh strainer and keep warm.
  • Slice the rested beef very, very thinly.
  • Split the rolls and spread with butter. Then grill the rolls on a griddle or in a skillet until golden brown and crisp.
  • To build the sandwiches, pile sliced meat on the bottom half, dip the sliced beef quickly into the jus before putting on the roll, then top with the top half of the roll. Serve with little dishes of au jus.
  • Melt provolone on top if desired.

FRENCH DIP SANDWICHES

Provided by Food Network Kitchen

Time 3h40m

Yield 6 servings

Number Of Ingredients 24

3 tablespoons vegetable oil
1 large onion, thinly sliced
Kosher salt
6 medium shallots, thinly sliced
2 bunches scallions, chopped (white and greens parts separated)
1 1/2 cups sour cream
1 cup mayonnaise
2 teaspoons white wine vinegar
2 teaspoons Worcestershire sauce
6 cloves garlic
Kosher salt
1 teaspoon extra-virgin olive oil
1/2 teaspoon celery salt
Pinch of cayenne pepper
Freshly ground black pepper
1 3-to-4-pound beef eye round roast
4 cups low-sodium beef broth
2 stalks celery, roughly chopped
1 small onion, roughly chopped
3 sprigs parsley
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 teaspoons dry sherry
6 6-inch Italian rolls, split and lightly toasted

Steps:

  • Make the onion spread: Heat the vegetable oil in a large skillet over medium-low heat. Add the onion and a pinch of salt; cover and cook, stirring, until golden, about 35 minutes. Add the shallots and scallion whites; cover and cook, stirring, until browned, about 25 more minutes. Stir in the scallion greens, then remove from the heat and let cool.
  • Chop the onion mixture and transfer to a bowl. Add the sour cream, mayonnaise, vinegar, Worcestershire sauce and 1 teaspoon salt. Cover and refrigerate at least 2 hours and up to 1 day.
  • Make the beef for the sandwiches: Mince the garlic, then sprinkle with 1 teaspoon salt and mash into a paste with the flat side of a large knife. Transfer to a bowl; add the olive oil, celery salt, cayenne and 1/2 teaspoon black pepper. Cut small slits all over the beef with a knife, then use your fingers to push the garlic paste into the slits. Cover; refrigerate at least 1 hour or overnight.
  • Preheat the oven to 425 degrees F. Bring the beef to room temperature. Sprinkle with 2 teaspoons salt and 1/2 teaspoon pepper. Place on a rack in a roasting pan; add 1 cup broth, 3/4 cup water, the celery, onion and parsley to the pan. Roast 10 minutes, then reduce the oven temperature to 350 degrees F and roast until a thermometer inserted into the center of the beef registers 115 degrees F, about 45 more minutes. Transfer to a cutting board; let rest 20 minutes. Strain the pan juices; reserve.
  • Meanwhile, make the jus: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, 1 minute. Whisk in the reserved pan juices and the remaining 3 cups broth and bring to a boil, whisking. Remove the pan from the heat and stir in the sherry.
  • Brush the rolls with some of the onion spread. Thinly slice the beef against the grain. Dunk the slices in the jus, then layer on the rolls. Serve the remaining jus in small bowls for dipping.

FRENCH DIP CLASSIC

French Dip Classic image

Despite its Francophile trappings, this sandwich of shredded roast chuck and melted Swiss on a toasty baguette is an American invention.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Number Of Ingredients 14

2 tablespoons olive oil, plus more for drizzling
3 pounds chuck roast
1 tablespoon coarse salt
1/2 teaspoon ground black pepper
1 large yellow onion, chopped (2 cups)
2 medium carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1 cup dry red wine
3 cups chicken stock, divided
2 bay leaves
1 French baguette
4 ounces Swiss cheese, sliced

Steps:

  • Preheat oven to 350 degrees with rack in lower-third position.
  • Heat oil in a Dutch oven over medium-high heat. Season meat with salt and pepper and brown on both sides, 8 minutes total. Remove meat to a plate.
  • Saute onions, carrots, celery, and garlic in Dutch oven until soft and golden, about 10 minutes. Stir in tomato paste and continue to cook, 1 minute more. Add wine and bring to a boil, scraping up brown bits from bottom of pan. Reduce liquid by half.
  • Return chuck roast to Dutch oven along with 2 cups chicken stock and bay leaves. Bring to a boil, cover, and transfer to oven. Roast, basting a few times, until meat is fork-tender, about 3 hours.
  • Transfer meat to a baking dish and shred using two forks. Strain liquid through a fine mesh sieve into a small saucepan, pressing on solids to extract as much liquid as possible. Add remaining 1 cup chicken stock to saucepan and keep warm on stovetop until ready to serve.
  • Preheat broiler. Slice baguette lengthwise, drizzle with oil, and place on a baking sheet. Top with shredded meat and Swiss cheese and broil until cheese is bubbly, about 2 minutes.
  • Cut sandwich into six portions and serve immediately with a bowl of dipping sauce on the side.
