- Preheat oven to 350°. In a 6-qt. stockpot, cook rigatoni according to package directions. Drain; transfer to a bowl., In same stockpot, cook and crumble sausage with red pepper and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add cream; cook 5 minutes, stirring occasionally. Stir in tomatoes, tomato paste, Italian seasoning and pepper flakes. Cook, uncovered, over medium-low heat until sauce thickens slightly, 5-8 minutes. Meanwhile, combine ricotta, 1/2 cup Parmesan, goat cheese, egg and seasonings., Stir rigatoni into meat sauce. Spread 3 cups into each of two greased 11x7-in. baking dishes. Top each with half of cheese mixture, then half of remaining pasta mixture., Bake, covered, 25 minutes. Sprinkle with mozzarella and remaining Parmesan cheese. Bake, uncovered, until cheeses are melted, about 5 minutes. If desired, sprinkle with basil. Freeze option: Prepare casseroles without mozzarella cheese and remaining 1/2 cup Parmesan cheese; freeze cheeses separately in resealable plastic freezer bags. Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casseroles as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°. If desired, sprinkle with basil.

Steps:
- Cook rigatoni until tender in large pot, drain pasta.
- Meanwhile, preheat broiler.
- Cook sausage in large heavy pot over medium high heat until no longer pink, stirring frequently and breaking up with back of a wooden spoon.
- Add garlic and saute until soft, about 2 minutes.
- Drain off excess oil and return pot to medium high heat.
- Add marinara sauce and crushed red pepper, then pasta. Season to taste with salt and pepper.
- Divide pasta among four 1 1/4-cup custard cups, or double recipe and put in one large baking dish.
- Sprinkle parmesan and mozzarella over.
- Place in broiler until cheese melts and begins to brown, watching closely to prevent burning, about 1 1/2 minute.
- Sprinkle with parsley and olive oil and serve.

Steps:
- Cook sausages in a saute pan in an inch of water for about 8 minutes; turn sausages and cook until done on the inside. Remove sausages from pan and let cool. Also cook pasta accoring to directions on package. Combine Tomatoes, 1/4 cup basil and garlic in saute pan and bring to a boil. Then slice sausages into pieces and add to tomatoe mixture; Simmer util heated through. Add drained pasta and mozzarella cheese. Serve with parmesan cheese.
THREE CHEESE PASTA WITH ITALIAN SAUSAGE
While surfing Pinterest one day, I stumbled upon this recipe that sounded so good and comforting. The Gouda cheese puts this one over the top creamy and rich. Don't forget the nutmeg!!! I served this with homemade Bruschetta but a side salad would be perfect too.

- Bring a large pot of slightly salted water to boil. Add the pasta once it is boiling and cook until the pasta is just under al dente (slightly resistant still). Preheat the over to 350 degrees.
- Shred all the cheeses and set aside. Begin to cook the sausage by heating a small skillet to medium heat & removing the meat from the casing. Use a wooden spoon to break apart the sausage for even cooking.
- In a medium saucepan, melt the butter over medium heat then add the onion. Saute until translucent and very fragrant about 5 minutes. Add the garlic and cook an additional minute.
- Mix in the flour, let it cook for about 30 seconds.
- Add the chicken stock & milk, continuously whisking. SLOWLY add the 3 cheeses to the mixture about a small handful at a time. Add the next bit once the previous is completely melted and creamy within the liquid. When all the cheese is added reduce the heat to low and stir in the nutmeg, salt and pepper.
- In a baking dish, combine the cooked pasta, sausage, and cheese sauce.
- Bake in the oven for about 10 minutes. Remove and garnish with chopped parsley.

THREE-CHEESE LASAGNA WITH ITALIAN SAUSAGE
An awesome, basic recipe for good ol' lasagna. The sauce is perfect: hearty and flavorful. This recipe was originally from Epicurious.com, but I have edited it somewhat. This variation is quite a bit cheesier, and uses oven-ready, no-boil noodles. I'm not one to cut corners, but in fact, I think the no-boil variety taste just as good as regular noodles. Using them also eliminates one of the more tedious steps in lasagna-making.

Steps:
- Heat the olive oil in a large, heavy saucepan over medium heat.
- Add onion, carrots and garlic; sauté until softened, 10-12 minutes.
- Add beef and sausages to pan; sauté until cooked through, breaking up meat as you stir, about 5 minutes.
- Add remaining ingredients.
- Cover and simmer until flavors blend and sauce measures about 5 cups, stirring occasionally, about 15 minutes.
- Discard bay leaf.
- Set aside and cool.
- Combine ricotta and ¾ cup Parmesan cheese in medium bowl.
- Mix in spinach.
- Season to taste with salt and pepper.
- Mix in eggs.
- Preheat oven to 350°F
- Spread ½ cup sauce over the bottom of a 13" by 9" glass baking dish.
- Place 5 noodles over sauce, overlapping to fit.
- Spread half of the ricotta-spinach mixture evenly over noodles.
- Sprinkle 2 cups mozzarella cheese evenly over ricotta-spinach mixture.
- Spoon 1½ cups sauce over cheese, spreading with spatula to cover (sauce will be thick).
- Repeat layering with 5 noodles, remaining ricotta-spinach mixture, 2 cups mozzarella and 1½ cups sauce.
- Arrange remaining 5 noodles over sauce.
- Spread remaining sauce over noodles.
- Sprinkle remaining mozzarella and Parmesan cheese evenly over the top of the lasagna.
- Cover baking dish with aluminum foil.
- Bake lasagna 40 minutes; uncover and bake until hot and bubbly, about 40 more minutes.
- Let lasagna stand 15 minutes before serving.
