This recipe brings a new twist to the traditional recipe with a few extras including homemade fried onions! Homemade is so much better than the store bought!!

1 egg
1 teaspoon white sugar
½ cup all-purpose flour
ground black pepper to taste
1 ¼ cups vegetable oil for deep-frying
1 small onion, sliced and separated into rings
2 (14.5 ounce) cans French cut green beans, drained
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
¼ cup milk
½ cup shredded sharp Cheddar cheese
1 pinch paprika, for garnish
ground black pepper to taste

Steps:

  • Whisk the egg with a fork in a small bowl. In a separate bowl, stir together the flour and pepper. Heat the oil in a heavy skillet or deep fryer to 375 degrees F (190 degrees C). Dip each onion ring into the egg and then coat with flour. Add them to the hot oil a few at a time. Fry until golden brown, turning once if needed, it should take about 3 minutes. Set them onto a paper towel-lined plate to drain and cool. Chop into 1/2 inch pieces.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the green beans, cream of mushroom soup, and milk. Stir in about half of the onions. Transfer to a casserole dish.
  • Bake in the preheated oven until heated through and bubbly, about 25 minutes. Remove from the oven and sprinkle the cheese and remaining onions on top. Bake until browned on the top, about 10 more minutes. Remove from the oven and garnish with a sprinkle of paprika and black pepper.

My vegetable-picky husband swore he HATED green bean casserole. Turned out he just hates the mushy texture of it all, and the flavor of the canned beans his mom always served him. Get ready Super-wives of the world- this is NOT your mother-in-law's green bean casserole!

3 tablespoons butter
1/2 cup finely diced yellow onion (pick a flat one)
1/2 cup of fresh sliced mushrooms
2 cups fresh green beans, cut into 2-inch long pieces, trim those ends
1 (10 3/4 ounce) can of cambell's 98% fat-free cream of mushroom soup (we usually use half a can, it all depends on the consistency you prefer)
1 (2 7/8 ounce) can of french's French fried onion rings
1 teaspoon garlic salt
1 teaspoon black pepper
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large skillet.
  • Steam the green beans in a steamer basket until they are al dente (10-12 minutes)
  • Saute diced onions and sliced mushrooms in the butter in a skillet while green beans are cooking.
  • In a greased 1 1/2 Quart Baking Dish, combine your cooked green beans, onion/mushroom/butter mixture, and cream of mushroom soup, black pepper, garlic salt.
  • Bake 25 minutes.
  • Remove the casserole dish from the oven. Add fried onions and top with cheese.
  • Set oven to broil, and put casserole dish back in, and leave it in for 1-3 minutes- just until the cheese is golden.

This version of the casserole uses a home made béchamel sauce with cheddar cheese added, instead of the usual canned cream soup. The hot sauce I use is Tabasco; for some reason Food.com won't let me put that in the ingredients list. I like the green beans in the finished casserole to retain some crunch, and that is reflected in the cooking times here. If you want your green beans to be more cooked and less crunchy, I'd simmer them for 10 minutes in the blanching step, instead of the recommended 5 minutes.

1 yellow onion, diced
8 ounces fresh mushrooms, diced
1/2 cup butter
1/2 cup flour
3 cups milk
2 cups cheddar cheese, shredded
2 dashes hot sauce
1 (8 ounce) can water chestnuts, diced
2 teaspoons soy sauce
1/2 teaspoon pepper
1 1/2 teaspoons salt
2 lbs fresh green beans, cut into 2 inch pieces
2 (2 7/8 ounce) cans French's French fried onions

Steps:

  • Blanch the green beans: in a large pot, bring a lot of water to boil. Once the water is at a full boil, add 1 teaspoon salt, if desired. Add the green beans, and start timing immediately - do not wait for the water to return to a boil. Leave the green beans in the water for 5 minutes, keeping the heat on high.
  • While the green beans are cooking, put a large amount of heavily iced water in a large pot or bowl.
  • Drain the green beans, and put immediately in the iced water to stop the cooking.
  • Preheat the oven to 350º.
  • Sauté the onions and mushrooms in the butter for 10 minutes over medium heat.
  • Add the flour, using a whisk to combine it with the butter, onions, & mushrooms. Add milk and whisk in, stirring over medium heat until the sauce begins to thicken.
  • Add the cheese and whisk until it melts into the sauce. Add the Tabasco, soy sauce, pepper and salt.
  • Drain the green beans.
  • In a large mixing bowl, combine the green beans, water chestnuts, one can of the French's Fried Onions, and the sauce. Combine well.
  • Place the green bean mixture in a large casserole dish.
  • Bake at 350º for one hour - top the casserole with the remaining can of fried onions after 45 minutes.
