Steps:
- Combine cracker crumbs and margarine; stir well.
- Press into bottom of a 9 inch springform pan. Freeze 30 minutes.
- Preheat oven to 300*.
- Place cottage cheese in a food processor or blender; process 1 minute or until very smooth, stopping once to scrape down sides.
- Add egg substitute and next 5 ingredients; process until smooth.
- Pour mixture into prepared crust. Bake at 300* for 50 minutes or until almost set (center will be soft but will become firm when chilled).
- Remove from oven; cool on wire rack.
- Cover and chill at least 8 hours.
- To serve, cut into wedges. Garnish with lemon slices.

Steps:
- Combine the low fat butter and biscuits in a bowl. Mix well with your fingers and then put these into the bottom of a 4 inch diameter loose bottomed cake tin.
- Refrigerate till this sets.
- Now, blend the cream cheese till it is lump free and smooth in a blender. You may add some warm milk or whey if need be.
- Combine with the remaining ingredients in a bowl and whisk till it has a smooth mixture.
- Combine the marmalade and 1 tablespoons water in a pan.
- Melt on low heat and allow to cool a little.
- Pour the cheesecake mixture over the set crust and refrigerate till the mixture sets.
- Pour the warm topping over and chill again for 10-15 minutes.
- Cut into wedges and serve cold.
- Enjoy!

- To make the crust, use a medium mixing bowl to mix together the almond flour, ¼ cup of the sugar alternative, salt and melted butter. Transfer this mixture into the prepped baking dish and press it in so that the baking dish is fulling and evenly lined with the ingredients. Then bake for ten minutes.

Once the cheesecake has cooled, place in the refrigerator for to to four hours to set. When ready to serve, cut the lemon cheesecake into squares and serve with a topping such as homemade whipped cream and your favorite fruit.

- Next, in a mixing bowl, cream together the cream cheese sugar alternative and Xanthum Gum (or Guar Gum) until smooth and without lumps. I use a paddle attachment for this. Then add the lemon extract and the eggs, one egg at a time, stirring between additions. Then you can mix in the heavy whipping cream.
- Transfer this to the prepared pie crust, taking care to not overflow the crust. Bake this for 70-75 minutes or until the edges appear appear to be set. The center will not be totally set at this time so it is important to allow it to set on its own in order to prevent cracking. One way to do this is to turn the oven off and allow the cheesecake to stay in the oven for another 30-60 minutes. Then remove the cheesecake and allow to cool until you are able to cover it and refrigerate the cheesecake for a minimum of three hours.
