FOOTBALL MEATLOAF
I made this recipe for last year's (2005) Superbowl. I got this recipe from the book called "The secret life of food" and the authors' name is Clare Crespo.

Steps:
- Preheat oven to 350°F Grease a shallow pan with vegetable oil.
- In a large bowl, HAND mix all ingredients except for the onion slices; mix well.
- Using your hands, shape mixture into a foot-ball shape and place it into the oiled pan.
- Bake for 1 hour.
- Place onion slices on foot-ball in a stitching pattern.
- Enjoy!

SUGAR FREE MEATLOAF
I was having trouble finding a meatloaf recipe that fits into my no white sugar/no white flour diet, so I made one up. I adapted it from the "Netivot HaTorah Gatherings" cookbook recipe for "Turkey Meatloaf with Cranberry Glaze". My husband though it was funny that I was using the recipe but wasn't making anything in the title. You can obviously substitute turkey for the beef, and of course you can use regular matza meal or bread crumbs instead of whole wheat.

Steps:
- Preheat oven to 350 F or 180°C In a large bowl mix the first 7 ingredients together with your hands until combined. Form meat mixture into oval (American football shape) or flatten into 9x13 pan. In a separate bowl, mix glaze and pour over meat. Try to make sure the glaze stays on the meat as much as possible if in football shape. Bake for an hour.

- In a large bowl, add ground beef, oats, carrot, onion, egg, Worcestershire, horseradish, salt and pepper. Work the ingredients with your hands until they are well combined and stick together well. On a non-stick oven safe pan, shape the loaf into a football shape. Make a well on the top of the meat where the ketchup and onion decoration will go.
- Bake for about 50-60 minutes until fully cooked. Add ketchup to fill the well you created. Top with thin slices of onion, arranged to look like the football’s laces. Serve with mashed potatoes and enjoy!

- In a large mixing bowl combine eggs, barbecue sauce, Worcestershire sauce, mustard, garlic powder, brown sugar, salt, pepper and chili powder. Stir until well blended.
- Divide the ground beef mixture into four equal parts. Mold each part into a football shape by hand and transfer it to an ungreased loaf pan.
- Bake uncovered at 350 degrees for 30 minutes. Top each football meatloaf with barbecue sauce and strips of mozzarella or string cheese to form laces. Bake 5-10 minutes longer until the cheese is melted. Serve and enjoy!
